Apricot Salsa

Apricot Salsa As summer officially comes to an end. I can’t help but post another salsa recipe. I am still getting delicious apricots- somehow they have lasted quite long this year. Usually they are gone by end of July. Anyway, I had a big pack of them and decided to turn the fruit into a delicious chunky sauce.

I used what I had in the fridge… that is what I like about making salsas- there are no rules. You can add whatever you want. I happen to have green onions on hand and I always have cilantro. I chopped everything and added the usual lime juice. I also added smoked paprika. To make it sweet, I usually add honey. This time I decided to use agave. I recently bought a bottle of it and have started experimenting. It is a great substitute for sugar and has a very low glycemic index. I even tried duffins with agave and they were a big hit.

Grilled Potatoes with Lemon and Cilantro

Grilled Potato Salad with Cilantro

This is the simplest way to make really delicious potato salad. The great thing about this recipe is that it can be made ahead of time and kept at room temperature. I love buying fingerling potatoes- firstly,  because I love the way they look; secondly, I don’t need to peel them or even slice them in half if I don’t want to (even though I did slice them for this recipe). These potatoes work really well with burgers or any other barbecued meats.

I simply cooked them in some water. I drained them and immediately drizzled olive oil, lemon juice and sprinkled salt all over them. It is important to add the flavoring while the potatoes are still warm. I then grilled them on the hot grill to get some delicious looking golden brown spots.  Once they cooled down, I added the cilantro. That was it- very simple, yet very delicious. Mexican Style Turkey Burgers

Grill_3 These burgers are delicious with a mix of roasted poblano pepper, onion and garlic. The mixture tastes amazing and keeps the burgers soft and juicy. I used turkey meat but you can use lamb, beef or pork- any meat will work really well. I served the burgers with a special low-fat mayo I made at home. I have trouble spreading the regular mayo on my burger- it has so much fat. So, I decided to make my own- not from scratch.. so don’t worry. I took some non-fat Greek yogurt to which I added a bit of store bought mayo, garlic powder, smoked paprika, salt and lemon juice. It is a delicious and healthy condiment and it complements the burger really well.

I also had some extra guacamole… I served some on top of each burger. It was a bit messy to eat but definitely worth it. The burgers were delicious. You can served grilled corn or a potato salad with the burgers. Recipe coming up tomorrow…

Mango Nectarine and Avocado Salsa

Mango Nectarine and Avocado Salsa Labor Day is upon us. It is unbelievable how quickly summer has gone by. Mine was very busy with lots of family, a wedding, a few trips and lots and lots of good food. When I think of the food- one cuisine comes to mind.. yes, you guessed it- Latin. Somehow I have been in a Latin ‘state of mind’ for a while and whenever I think about what to cook- only Latin flavors come to mind. So, I am going with the them once again.

I thought I would post a few recipes for the upcoming long weekend. I am starting with a quick and delicious appetizer. I love making fresh salsa for a barbecue meal. In this one I have used mango and avocado. It may sound like a strange combination but they work really well together. They have a similar consistency but completely different flavors. To make it interesting, I added a nectarine as well. The salsa is amazing with tortilla chips. Burger recipe coming up for tomorrow…

Dublin Day 5- Goodbye…

P1060496One of my favorite things to do on a vacation is go home. I look forward to visiting new places but no matter where I am or how exotic the city is- I love coming home.

Dublin was a pleasure to visit. I am going to miss the Temple Bar area, the scones, the breads, the sausages, the bacon, the cheese…etc, etc. As you might have guessed, I focus on the food where ever I go. Food is the best way to get to know a new culture. I love going to grocery stores and studying all the aisles to see what the locals eat.

I ate and drank and now it is time to get back to reality- GG crackers here I come…
