Chinese Broccoli with Ground Turkey
I served this dish with the lo mein. I love, love Chinese broccoli. I try to get it any time I see it. Unfortunately I don’t find it very often at Whole Foods. Since I was in the Asian market, I promptly bought some. I used the dark soy sauce to marinate the meat and cooked it with the delicious greens. - 1 pound dark ground turkey meat
- 1 to 2 tablespoons dark soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
- 2 teaspoons corn starch
- 3 garlic cloves, grated
- 1 inch ginger, grated
- ½ cup cilantro, chopped
- 2 tablespoons + 2 tablespoons extra light olive oil
- 3 to 4 green onions, chopped
- 1 bunch of Chinese broccoli, the stems and leaves separated and chopped
- ¼ cup chicken broth
Transfer the meat, soy sauce, vinegar, sesame oil, corn starch, garlic, ginger and cilantro to a medium bowl. Mix well and marinate for at least 2 to 3 hours.
Heat a wok like saucepan with 2 tablespoons olive oil. Add the ground meat and sauté on high heat, stirring and separating for 2 to 3 minutes. Take out of pan and add the remaining 2 tablespoons olive oil. Add the green onions and chopped Chinese broccoli stems. Saute 2 to 3 minutes on high heat. Add the chopped leaves and sauté for a minute. Add the cooked meat and chicken broth. Mix well, bring a boil and simmer for 5 minutes. Check for seasonings and serve with noodles or rice.
