Coconut Shredded Cabbage

I think I have mentioned it many times that my husband loves cabbage.. me on the other hand, am not a fan of cabbage. I will eat it but it is not my first choice. This dish, I have to say, is delicious. I guess anything with coconut and peanuts is yummy.. This is a very easy dish to make, especially if you are lazy like me and buy the already shredded, packaged cabbage…

  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • ½ cup chopped peanuts
  • 1/3 cup shredded coconut
  • 1 medium yellow onion, chopped
  • 1 inch ginger, grated
  • 4 cups shredded green cabbage
  • 2 teaspoons salt
  • 2 teaspoons ground coriander
  • ½ cup cilantro, chopped

Heat a saucepan with coconut oil. Add the mustard seeds and cumin seeds. Saute on high heat for 20 to 30 seconds. Add the peanuts and coconut and sauté for another 30 seconds. Add the onion and ginger, sauté for 1 to 2 minutes, stirring constantly. Add the cabbage and sauté for 4 to 5 minutes. Add the salt and coriander. Cook on medium heat for about 10 minutes, stirring occasionally till the cabbage is wilted and cooked. Check for seasonings and garnish with cilantro.
