I love this combination! I love making salsas in the summer. I have never worked with jicama before- it is delicious, especially paired with apples. The flavor was amazing. I added some juicy tomatoes to play around with texture… really yummy!
- 1 medium jicama, peeled and cut into ½ inch dice
- 1 large pink lady apple, cut into ½ inch dice
- 1 cup cherry tomatoes, chopped
- ½ cup cilantro, chopped
- Juice of 2 limes
- 2 to 3 teaspoons salt
- 1 to 2 tablespoons agave
Add the jicama, apple, tomatoes and cilantro into a medium bowl. Mix well and add the cilantro, lime juice, salt and agave. Mix well and refrigerate for at least an hour before serving.
