Pan Seared Cod with Mango Sauce and Bok Choy

Cod with Mango Sauce2Here is another recipe using one of my favorite ingredients- mangoes. I bought some cod for dinner and decided to make a mango sauce.

I cut up two mangoes and cooked them with garlic, shallots. I added apricot jam (yum!), rice wine vinegar and garlic chili sauce. Using all the delicious ingredients resulted in an unbelievable sauce.

I sauteed the fish simply with salt and olive oil- delicious and very quick.

Bok choy is one of our favorite vegetables and I try to incorporate it lots of dinners. In this case, I sauteed them with olive oil and salt. I served the bok choy on the side with the fish and the mango sauce. I made brown rice and it was a perfect meal. It was delicious, quick and healthy- what more do you want??

  • 4 cod fillets
  • Salt
  • 2 tablespoons olive oil

Heat a non-stick pan and add the olive oil. Saute the fish fillets for 2 to 3 minutes on each side or till golden brown. Take out and keep aside. Don’t worry about cooking the fish all the way- it will be cooked in the sauce.

  • 2 tablespoons olive oil
  • 2 large shallots, sliced
  • 4 garlic cloves, minced
  • 2 large mangoes, chopped
  • 1 tablespoon apricot jam
  • 1 tablespoon rice wine vinegar
  • Juice of one lemon
  • 1 tablespoon garlic chili sauce
  • 1 teaspoon salt
  • ½ cup cilantro, chopped
  • 2 green onions, chopped

Cod with Mango Sauce

Heat the olive oil in a medium saucepan. Add the shallots and garlic. Saute for 2 to 3 minutes on medium heat. Add the mangoes, apricot jam, rice wine vinegar, lemon juice and garlic chili sauce. Mix well until the jam melts and mixes in the sauce. Cook for 4 to 5 minutes till the mangoes are soft. Taste for seasonings and add the salt accordingly. Add the fish fillets and cook for 4 to 5 minutes or till the fish is cook through. Add the cilantro and green onions. Serve with bok choy and brown rice.

  • 6 to 8 bunches baby bok choy (about 2 bunches per person), cut in half and cleaned
  • 2 tablespoons olive oil
  • Salt

Heat the oil in a very large frying pan on high heat. Lower the heat and add the bok choy. Cook on low heat covered for 10 minutes. Take the cover off and sauté for 2 to 3 minutes. Serve with the fish.
