Rib Eye Steak with Feta Sauce Served with Roasted Asparagus and Potatoes

Ribeye Steak with Feta6 This is a delicious steak dinner. We don’t eat out as much as we used to. Partly because of the economy and mostly because of this blog and all the cooking I end up doing at home.

Also after watching movies like ‘Food Inc‘, I am very leery about eating out. I can’t get the chickens and the cows out of my head. I am now very careful about where I buy and eat beef.

Anyway, I found some really nice looking grass fed rib eye steaks. I love eating a good steak but rarely order it at a restaurant- I don’t want to spend a fortune outside when I can make them at home- and they are fabulous.

I usually make oven fries with the steak- I love potatoes and this is my favorite way of making them. I had very nice looking asparagus- I served them simply sauteed with olive oil, salt and pepper.

Now, for the steaks- again, very simple- olive oil, salt and pepper but I wanted to serve them with a sauce. I love the usual gorgonzola sauce which is made with lots of yummy gorgonzola and cream. It is very delicious but loaded with calories. I had feta in my fridge and decided to use that and make a sauce. It is naturally low in fat so I paired it with some roasted garlic and low fat sour cream. The sauce was delicious! We did not miss the gorgonzola sauce at all!

My daughter loved the meal as well minus the potatoes and the sauce. She loves asparagus and steak. We were all happy and it was a great Sunday meal.

Next time you want to impress someone- make the rib eye steaks with the feta sauce.

  • 3 to 4 (5 to 6 ounces) rib eye steaks
  • 2 tablespoons extra virgin olive oil
  • Salt
  • Pepper

Feta Sauce

  • 1 whole garlic head, roasted (roast the head of garlic in a piece of aluminum foil with a drizzle of olive oil in a 400 degrees oven for 30 minutes).
  • 2 tablespoons crumbled feta cheese
  • 1/3 cup light sour cream
  • ½ teaspoon salt

Add the sour cream, feta cheese and the squeezed roasted garlic. Heat on a low heat until the sauce is incorporated well, about 5 minutes. Add salt and taste for seasonings. Keep aside.

Heat a grill pan with the olive oil. Sear the steaks on a high 2-3 minutes on each side and then cook to desired doneness.
Serve the steaks with a big dollop of feta sauce on top.

Roasted Asparagus

Ribeye Steak with Feta

  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon extra virgin olive oil
  • Salt
  • Pepper

Preheat oven to 400 degrees F.

Arrange the asparagus in one layer on a lined cookie sheet. Drizzle olive oil, salt and pepper and mix well with fingers. Roast for 20 minutes till the asparagus is soft but still crunchy.

Roasted Potatoes

  • 5 to 6 yellow skinned potatoes, peeled and cut into thick wedges

Boil the potatoes in a medium saucepan for 10 minutes till they are half done. Drain and pat dry.

Preheat oven to 400 degrees F.

  • 2 tablespoons extra virgin olive oil
  • Salt
  • 1 teaspoon garlic powder

Arrange the potatoes on a lined cookie sheet in one layer. Drizzle the olive oil, salt and garlic powder. Mix well and roast in the oven for 40 minutes or till the potatoes crispy and golden brown.

I fixed this a few years back, I don’t remember the steaks we used….I think it was sirloin. However I loved the feta sauce so much I saved the recipe. I do remember having enough sauce leftover ( I may have doubled the recipe ) that I fixed more potatoes the next night to use the rest of the sauce. I am going to try with
chicken tomorrow. Any suggestions?

Great idea about the chicken. I would marinate the chicken with garlic, olive oil, lemon juice, parsley and dill- give it a Greek twist as you will be eating it with the yummy feta sauce. I might do that myself as I do remember the sauce being delicious! Enjoy and let me know how it turns out.
