Roasted Herbed Salmon

- 3 to 4 salmon filets
Herb Marinade
- ½ cup cilantro, chopped
- ½ cup dill, chopped
- 2 green chilies, seeded and chopped
- ½ cup mint, chopped
- 3 to 4 garlic cloves, chopped
- ¼ cup extra virgin olive oil
- 2 teaspoons salt
- Lime wedges
Preheat oven to broil.
Add the cilantro, dill, green chilies, mint, garlic and salt into a mortar and pestle (a food processor can be used instead). Pound the ingredients down to a paste and add the olive oil. Mix well and cover the salmon filets with the herb mixture and marinate for 2 to 3 hours. Add the filets to a lined cookie sheet. Roast under the broiler a couple minutes on each side or according to desired doneness. Serve with a squirt of lime juice.
