Sausage with Zucchini

Sausage and Zucchini I would save this recipe for when one has had a crazy busy day but one still wants to serve a healthy, home cooked meal to ones family. This hardly takes any time- of course the key is to have the ingredients in the fridge and the pantry- that being said- any kind of vegetable or meat can be substituted for the zucchini and the sausage.

I like combining the two especially because of the way they look cut into perfect rounds. I sauteed up the sausage and added the onion and garlic. Some tomatoes, thyme and chicken broth later, I had a delicious dish. I simply served it with whole wheat couscous- which take all of five minutes and voila- I had a delicious meal…

  • 4 zucchini, cut into 1-inch rounds
  • 5 chicken sausage links, cut into 1-inch rounds
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, sliced
  • 1 medium yellow onion, sliced
  • 1 teaspoon dried thyme
  • ½ cup crushed tomatoes
  • 1 cup chicken broth
  • Salt

Heat a large frying pan with the oil. Add the sausage and sauté on high heat for 2 to 3 minutes till pieces are golden brown. Add the onion and garlic and sauté on medium heat for 2 to 3 minutes. Add the thyme and crushed tomato. Mix well and add the zucchini and chicken broth. Mix well and bring to a boil. Lower the heat and cover for about 10 minutes. Take lid off and turn the heat up to bring to a boil. Check for seasonings and serve with pasta or couscous.

Like your food receipes except you don’t include nutrional facts such as carbs, salt, sugars etc. Some of us really do need theses facts taking care of our healthy living.
