Dover Sole With Brown Butter

Dover Sole Cooked in Brown ButterThis is one of my favorite white fish to cook. My husband and daughter who don’t care for salmon because of it’s strong flavor, love mild, white fish. I buy Dover sole very often- the catch is that it is a very delicate fish, so I try to do very little to it. Cooking it in brown butter is perfect. It gives the dish almost a sweet nutty flavor which complements the fish really well…

  • 1 pound Dover Sole, cut into filets
  • 3 to 5 tablespoons butter
  • Salt
  • 1 cup all purpose flour
  • Lemon juice

Heat a large frying pan with the butter on a simmer for 1 to 2 minutes until the butter starts to turn golden brown- careful not to burn it. Sprinkle filets with salt generously. Dredge with flour and sauté on a medium heat in the butter- a minute on each side. Add the lemon juice and serve immediately.

Bacon Cheeseburger Macaroni

Bacon Cheeseburger Macaroni This is a great dish that incorporates macaroni and cheese with tiny little burgers. I came up with this dish when I trying to cook delicious food for my nephew who was recuperating from a surgery. He loves macaroni can cheese and really loves cheese burgers.. so I decided to incorporate all of those ingredients into this dish.

I had to add some veggies- so decided to add some chopped carrots and peas. I flavored the ground beef with garlic and parsley and made tiny little burgers. I used pancetta and shallots to give yummy flavor to the béchamel sauce. All in all it was a delicious concoction. It was a special treat for him and I was glad I could come up with something he would enjoy….

Pork Stew with Orange Jerk Sauce

Orange Jerk Pork Stew This stew is absolutely delicious. I made my own Jerk sauce and decided to do a stew instead of the normal grilled Jerk chicken. I bought some lovely pork shoulder and got to work. I met a lovely Jamaican family last month and I asked them how what all they add to their Jerk sauce. They gave me the ingredients and I decided to give it a try. I didn’t make it super spicy as I am the only one who enjoys that.

I used orange juice and chicken broth for the liquid – which gave the stew amazing flavor. I decided to serve it with creamy polenta and a huge green salad… yum!

Lasagna with Meat Sauce

Meat Sauce Lasagna

I thought I would continue the pasta theme and post one of my favorite recipes. We all love lasagna in our family. I used the meat sauce from yesterdays post. The dish was even quicker to make than usual since most of the work was done.  I usually eliminate the ricotta but I decided to add it to this dish. I added tons of flavor including parsley, cheese and garlic.

All in all, it was a delicious lasagna…

Sausage and Mushroom Macaroni and Cheese

Sausage and Mushroom Macaroni and Cheese One can’t go wrong with macaroni and cheese! Especially one that is made with sausage and mushrooms. I always have chicken sausage and Cremini mushrooms in my fridge. They are my ‘to go’ ingredients- it is amazing what all I can make with just these two items.

This is a typical, from scratch macaroni and cheese- quite easy to make.. so next time you pick up the boxed variety.. think about making this one…

Beef Stew with Orange and Cinnamon

Beef Stew with Orange Delicious, delicious- one of my favorite stew recipes. Orange and cinnamon are synonymous with cold weather. I had some stew meat in the freezer. I took it out the night before and made the stew in no time. All you need is some chicken broth and red wine. I always have mushrooms in the fridge- my daughter loves them and they are super versatile. I decided to add them to the mix. I zested and juiced an orange and added a cinnamon stick. It is amazing what those flavors put together do to any dish- whether it is a sweet or savory dish.

The stew took no time to put together. It cooked on the stove for a good half an hour, forty minutes. You can cook it even longer, depending on the meat.

Everyone loved it- the only problem was that it finished in one sitting. Everyone wanted it the next day.

Chorizo Lasagna with Poblano Bechamel Sauce

Chorizo Lasagna1

This lasagna is a bit involved and may take a bit longer than your regular, run of the mill lasagna- but it is so worth it! The flavor is unbelievable. I decided to give the lasagna a huge punch of flavor by using, my favorite, Latin flavors!

I first roasted a medley of veggies including poblano pepper, onion, garlic and combined them all with fresh cilantro in a blender. I had a thick paste which I added to a white sauce also known as a béchamel sauce. The sauce had an amazing, smoky flavor.

I then made the meat mixture with turkey meat, onion, garlic and fresh chorizo. I also added chipotle pepper to the mix to mimic the smokey flavor of the green sauce. I always have fresh tomato sauce which I used in conjunction with the green béchamel sauce to make the dish.

I layered the lasagna with a mixture of shredded Mexican cheese- it brought the flavor profile to another level. This is one of my favorite lasagnas.. so please try it…
