Pumpkin Apple Bread with Streusel Topping

All I can say is, yum, yum!

 

 

 

 

 

 

 

 

 

  • 1½ cups white whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon powder
  • 1 cup raw sugar
  • 1 stick unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup apple cider
  • 1 large Pink Lady apple, chopped

Streusel

  • 1 tablespoon all purpose flour
  • 2 tablespoons turbinado sugar
  • ½ teaspoon ground cinnamon
  • 1 tablespoon butter, softened

Mix the flour, sugar, cinnamon and butter with a fork in a small bowl. Keep aside.

Preheat oven to 350 degrees F.

Butter and flour a 9X5 pan.

Mix the flour, baking soda, salt and cinnamon powder in a medium bowl. Whisk well and keep aside. In the meantime in a mixer, add the sugar and butter. Beat till the mixture is creamy. Add the eggs, vanilla extract and apple cider. Beat well and slowly add the flour mixture. Mix well and fold the diced apple. Transfer the batter to the pan and top with the streusel mixture. Bake for 50 to 60 minutes till the cake is done.

Sesame Glazed Chicken

Sesame Glazed Chicken

  • 1 teaspoon black peppercorns

Toast the peppercorns in a cast iron skillet on medium heat for 4 to 5 minutes. Take out and cool and grind in a spice grinder. Keep aside.

  • 2 medium shallots, ends cut off
  • 4 garlic cloves
  • 1 teaspoon extra light olive oil
  • Salt

Preheat oven to 400 degrees F.

Place the shallots and garlic cloves on a piece of aluminum foil. Add the oil and salt, wrap well and roast for about half an hour. Let cool and keep aside.

  • 1½ pound chicken breast cut into ½ inch pieces
  • 1 tablespoon sweet chili garlic sauce
  • 1 tablespoon tamari
  • 2 teaspoons sesame seeds

Marinate the chicken pieces in the chili garlic sauce, tamari and sesame seeds. Refrigerate for 3 to 4 hours.

Glaze

  • ½ cup oyster sauce
  • 1 tablespoon tamari
  • ¼ cup rice wine vinegar
  • 1/3 cup apple cider

Add the oyster sauce, tamari, rice vinegar and apple cider to a small saucepan. Bring to a boil and simmer for 5 to 7 minutes till the sauce gets thick. Add the roasted shallots and garlic. Mix well and blend till smooth. Check for seasonings and keep aside.

  • 2 tablespoons extra light olive oil
  • 1/3 cup green onions, chopped

Heat a large saucepan and add the oil. Brown the chicken pieces in 2 to 3 batches, browning both sides. Take the pieces out and keep aside.
Add the glaze in the saucepan and bring to a boil. Add the chicken pieces and simmer till the chicken is cooked through- about 3 to 4 minutes. Garnish with green onions and serve hot.

Apple Cake with Pumpkin Whipped Cream

Another favorite…

  • 1/3 cup plus ½ cup cane sugar
  • ¼ cup apple cider
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 2 large Honey Crisp apples, peeled, cored and sliced
  • 1 cup white whole-wheat flour
  • 1¾ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 large egg
  • ½ cup apple cider
  • ½ cup extra light olive oil
  • 1 teaspoon vanilla extract

Preheat oven to 375 degrees. Butter a 9-inch square pan (any shape will be fine)

Stir together 1/3 cup sugar with apple cider, lemon juice and cornstarch in a small saucepan, then stir in the apples. Bring to a simmer and continue to simmer, stirring occasionally about 10 minutes. Remove from heat.
Whisk together flour, baking powder, cinnamon, cloves, nutmeg, salt and remaining ½ cup sugar in a medium bowl.
Whisk together egg, cider, oil and vanilla in a large bowl. Add the flour mixture- whisk till combined.
Spoon the batter into baking pan spreading evenly. Then pour apple mixture evenly over batter. Bake for 25 to 30 minutes or till cake is done.

Pumpkin Whipped Cream

  • 1 cup heavy whipping cream
  • ¼ cup confectioners sugar
  • ½ cup pumpkin puree

Whip the cream in a standing mixer till soft peaks form. Add the sugar and pumpkin puree. Whip for another minute and chill for an hour before serving with cake.

Apple Cardamom Trifle

I thought I would do a bunch of desserts for the upcoming holidays.. this is one of my favorites…

Apple Filling

  • 3 tablespoons unsalted butter
  • 4 large apples, Pink Lady and Honey Crisp, peeled and cut into 1 inch pieces
  • 1 cinnamon stick
  • 3 cardamom pods, seeds taken out and crushed
  • ½ cup sugar
  • ½ cup apple cider
  • Juice of half a lemon

Place the butter in a large frying pan. Add the apple pieces, cinnamon stick, cardamom seeds and sugar. Stir constantly until the butter melts on a medium heat. Add the cider and lemon juice and bring to a boil. Lower the heat and cover with lid for ten minutes or till the apple pieces are soft but not mushy. Bring to room temperature and refrigerate. Take out of fridge a few hours before assembling. Divide into two portions.

Vanilla Custard (Gale Gand Recipe)

  • 2 cups 2% milk
  • ½ vanilla bean, split lengthwise
  • 6 egg yolks
  • 2/3 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon unsalted butter

In a medium saucepan, heat the milk and vanilla bean to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes. In a bowl, whisk the egg yolks and granulated sugar until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in ¼ cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.
Pour the mixture through a strainer back into the saucepan. Cook over medium high heat, whisking constantly, until thickened and slowly boiling. Removed from and heat and stir in butter. Transfer to a storage bowl. Cover with plastic wrap to eliminate skin forming. Refrigerate overnight. Divide into two portions.

Cinnamon Whipped Cream

  • 8 oz Mascarpone cheese
  • 1 cup whipped cream
  • 2-3 tablespoons powdered sugar
  • 1-2 teaspoons powdered cinnamon

Whip the mascarpone cheese, whipped cream, sugar and cinnamon till stiff peaks form.

One pound cake, sliced, divided into two layers
One trifle bowl

Assemble the trifle by starting with a layer of pound cake at the bottom. Cover with one portion of the apples and then the custard. Repeat the process one more time and top with cinnamon whipped cream. Refrigerate for at least 4 to 5 hours before serving.

Spicy Pear Compote

Winter entertaining can be fun- especially if one makes a delicious, cozy stew with lots of crusty bread and red wine! I love serving a big plate of cheese before hand and like to make a fresh compote to complement the cheeses. I made this one with pears which are in season. I added some smoked paprika and chipotle pepper to make them a bit spicy….. delicious!!!

  • 2 Bosc pears, diced
  • 1 cup apple cider
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon chipotle pepper powder
  • ½ cup cilantro

Transfer the pears, apple cider, vinegar, honey, salt, paprika and chipotle powder to a medium saucepan. Bring to a boil and simmer on low for about 15 minutes or till most of the liquid has evaporated. Let cool and add cilantro. Check for seasonings and serve with cheese and crackers.

Apple & Apricot Glazed Pork Chops

Another great meal for the holidays…unnamed

Brine

  • 2 cups apple cider
  • 3 tablespoons salt
  • 1 pound center cut pork chops

Transfer the cider and salt to a deep airtight container and add the pork chops. Keep over night or at least for 4 to 5 hours in the fridge. Take the chops out and soak on a paper towel till dry.

Glaze

  • 1 cup apple cider
  • 1 tablespoon apricot jam
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt

Bring the cider to a boil in a small saucepan and simmer for about 4 to 5 minutes. Add the apricot jam, paprika and salt. Mix well and cook for another 5 minutes. Turn heat off and keep aside.

  • 2 tablespoons olive oil
  • Sprinkle with salt

Heat a wide frying pan with the olive oil and add the pork chops. Sprinkle with salt. Saute on medium high heat on one side for 2 to 3 minutes. Flip the chops over and add the glaze. Cook for about 4 minutes on medium heat. Turn off and serve with the glaze spooned over the pork chops.

Apple Orange Cranberry Sauce

If you listen to any thing I say, please- please don’t buy the already made cranberry sauce. It is so simple to make and the homemade version is extremely delicious.

Every year I buy fresh cranberries and every year while I cook them, I think why people buy the canned or the bottled version. It is one of the simplest things to make in the Thanksgiving dinner.

I have made all sorts in the past few years- including a cranberry relish, salsa. This year I wanted to come up with something on my own and not follow a recipe.

Since I have been on an apple and orange kick- that are the flavors I used. I cooked a bag of fresh cranberries with apple cider and orange juice. I added orange zest, a cinnamon stick and some cloves. I cooked the berries till they popped and became soft- it takes all of 20 minutes and you can make this in advance and freeze it till the dinner. I finished it off with maple syrup. The apple chunks in the sauce are delicious and adds great texture.

It was delicious. We had it on top of some pork chops (I have frozen the rest for Thanksgiving). Please make this instead of buying the canned version and if you do – let me know.

  • 12 ounces fresh cranberries
  • 1½ cups apple cider
  • ½ cup orange juice
  • 2 teaspoons orange zest
  • 1 large cinnamon stick
  • 3 cloves
  • ¾ cup maple syrup
  • 1 large honey crisp apple, cut into ½ inch pieces

In a medium saucepan, add the cranberries, apple cider, orange juice, orange zest, cinnamon stick and the cloves. Bring to a boil and lower the heat to a simmer. Cook for 5-10 minutes or till the berries begin to break down. Add the maple syrup and cook on medium high or till the sauce begins to thicken and the berries have disintegrated. Add the cut up apple and cook for another 5 minutes. Let cool. This can be frozen till the day before Thanksgiving. Thaw it in the fridge. Good for 6-8 people.
