Deconstructed Shrimp Enchiladas with Tomato Sauce

These are soooo good! I saw some chef make a version of these on The Chew… and it looked yummy.. and very interesting as she added nutmeg to the tomato sauce- not something I associate with Mexican cooking…. So, I tweaked it to my taste and came up with this version. They are easier than traditional enchiladas as there is no assembly requires.. just dip the tortillas in the sauce and add the filling, fold in half and serve!!! Definitely make yesterday’s slaw with them…

  • 2 cups tomato sauce, homemade or store bought (14 ounces can of tomato sauce)
  • 2 garlic cloves, peeled
  • 1 jalapeno chili, sliced in half and deseeded
  • 1 medium onion, chopped
  • ½ teaspoon nutmeg
  • 1 teaspoon salt
  • 1 cup fish stock
  • ½ cup heavy cream
  • 1 tablespoon olive oil

Transfer the tomato sauce to a medium saucepan. Add the garlic, jalapeno, onion, nutmeg and salt. Bring to a boil and lower the heat to a simmer for 10 minutes or till the vegetables are soft. Transfer to a blender and add the fish stock and blend till smooth.

Heat the same saucepan with olive oil and add the tomato sauce and sauté for a minute. Turn heat lower and simmer, covered for 15 minutes, till the sauce is thickened. Add the heavy cream, mix well and check for seasonings. Keep warm.

  • 1 pound medium shrimp, cleaned and cut into half
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Heat a frying pan with the butter and olive oil. Add the shrimp and cook on medium heat, stirring constantly, for 3 to 4 minutes or till the shrimp is cooked through. Turn heat off and keep aside.

  • 1 large avocado, diced
  • Juice of half a lemon
  • 1 teaspoon salt

Mix the avocado, lemon juice and salt in a small bowl and keep aside.

  • 6 to 8 6 inch tortillas, heated in a toaster oven or stove top
  • ½ cup queso fresco, crumbled

Take each tortilla and immerse in the tomato sauce. Remove and place on a plate. Add some shrimp and avocado and garnish with some queso fresco. Repeat with the rest of the tortillas.

 

Avocado Apple and Corn Salad

This salad will be perfect with yesterdays delicious cheese burgers! It is yummy with creamy avocado, crunchy apple and sweet corn!

  • 1 avocado, diced
  • 1 Pink Lady apple, diced
  • 1 ear of corn, grilled, off the cob
  • Juice of one large lemon
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 2 cups mixed greens with herbs

Transfer the avocado, apple and corn to a salad bowl. Add the lemon juice, oil, honey and salt. Mix well and let marinate for 2 to 3 hours in the refrigerator. Right before serving, add the mixed greens, mix well. Check for seasonings and serve.

 

Broccoli and Avocado Slaw

I made this delicious slaw with our favorite fish to eat- black cod! It is tender, rich and amazingly yummy… I chose a slaw to cut the richness … so this would be perfect with barbecued meat…

  • 1 cup broccoli and carrot slaw, (I buy it from Trader Joes)
  • ½ large apple (Pink Lady), cut into sticks
  • 1 avocado, diced
  • Juice of half large lime
  • 1 to 2 teaspoon honey
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 teaspoons salt

Transfer all the ingredients to a medium bowl. Mix well and keep aside for at least an hour before serving. Serve a yummy fish filet over the slaw!

Carrot Orange and Avocado Salad

This was a yummy salad indeed- a bit different as it has carrots, oranges and avocado.. well, why not?? I always associate a carrot orange salad when I have Moroccan food- so I decided to add avocado to the mix and it was yum!!

  • 1 cup shredded carrots
  • 2 navel oranges, cut into segments
  • 1 avocado, cut in 1 inch dice
  • ½ cup cilantro, chopped
  • 3 green onions, chopped
  • ¼ cup mint, chopped
  • Juice of one lemon
  • 1 teaspoon honey
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 teaspoon salt

Add the carrots, orange segments and avocado into a medium bowl. Add the cilantro, green onions, mint, lemon juice, honey, oil and salt. Mix well and let the salad sit for 20 minutes before serving.

Avocado Beet and Apple Salad

I served this delicious salad on top of the chili I made yesterday…. It is an amazing combination of avocado, beet and apple. It is amazing on top of the flavorful chili or just as a first course or salad…

  • 1 avocado, cut into 1 inch dice
  • 1 medium beet, roasted and cut into 1 inch dice
  • 1 medium apple, cut into 1 inch dice
  • 1 serrano pepper, deseeded, chopped
  • 3 green onions, chopped
  • ½ cup cilantro, chopped
  • Juice of 1 medium lime
  • 1 to 2 teaspoons salt

Add all the ingredients to a serving bowl. Mix well and serve as a salad or on top of chili.

Avocado and Mango Guacamole

Avocado and Mango Guacamole This summer I have been making guacamole at least once a week.. usually it is more like two. It is quite simple to make and usually takes the usual suspects. Lots of lime juice and salt are the key to a delicious guacamole. Cilantro and green onions help as well and so does garlic.

I wanted to mix avocado and mango together. The texture of the two fruits is exactly the same but the flavors couldn’t be different. One has a rich, creamy taste and the mango is sweet and tangy. The two went amazingly together. The guacamole was delicious and perfect with a steak!

Fennel Orange & Avocado Salad

Fennel and Avocado Salad I have been cooking with a lot of fennel recently. I was not a big fan of fennel until a few months ago. I am not sure what exactly happened but now I find myself buying a pack of fennel bulbs every time I am in Trader Joes.. and I am there very often.

I find myself eating it raw mainly in salads but it tastes delicious roasted with a bit of olive oil, salt and pepper. I used the roasted variety as a pizza topping or even on a salad- they were delicious.

This salad is a bit different as it does not have any lettuce greens. It has lots of sliced fennel, orange segments and creamy avocado. They all make an amazing combination- with the crunch fennel, juicy oranges and soft avocados.

I made a simple lime and orange dressing with a bit of roasted cumin seeds.

The salad was simply delicious… to make a meal of it, one can add some chicken, shrimp or chunks of delicious fish…
