Steak Tacos with Fresh Guacamole

  • 1 to 1½ pounds tip steak, sliced thin diagonally

Spice Mix

  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt

Mix together and add the spice mix and steak pieces into a ziplock bag. Marinate in the refrigerator for 4 to 5 hours.

  • 1 tablespoon olive oil
  • 4 to 6 corn tortillas

Heat a cast iron or non-stick pan with the olive oil. Cook the steak pieces making sure they are not over done.
Heat the corn tortillas and serve with steak, guacamole and salsa.

Guacamole

  • 2 ripe avocados cut into 1-inch pieces
  • ¼ cup red onion, minced
  • 2 garlic cloves, minced
  • ½ cup cilantro, chopped
  • 2 teaspoons salt
  • Juice of 2 limes

Mix all the ingredients in a medium bowl. Cover with plastic wrap and refrigerate for an hour before serving.

Easy Guacamole

I have loads of guacamole recipes on this blog. I love guacamole and it doesn’t take much time or effort to make your own- homemade is a lot yummier than the store bought variety. Try it this year.. especially with the delicious tacos…

  • 4 to 5 avocados, cut in half and scooped out
  • Juice of 2 large limes
  • ½ cup cilantro, chopped
  • 3 garlic cloves, grated
  • 2 teaspoons salt

Transfer the scooped out avocados into a medium bowl. Add the lime juice, cilantro, garlic and salt. Mix well and serve!

Avocado and Apricot Guacamole

Yummy guacamole made with apricots! You can use nectarines or peaches… or even plums…

  • 1 ripe avocado, diced
  • 2 apricots, diced
  • 3 green onions, chopped
  • 1 garlic clove, grated
  • 1 jalapeno, seeded and chopped
  • Juice of one lemon
  • ½ to 1 teaspoon honey
  • 1 teaspoon salt

Add everything to a medium bowl. Mix well and serve.

Avocado Cucumber and Apple Salad

Here is another salad or kind of a guacamole… rather my take on a delicious guacamole… it will complement tortilla chips, any meat or fish…

  • 2 avocados, diced
  • 1 English cucumber, diced
  • 2 medium Pink Lady apples, diced
  • 4 to 5 green onions, chopped
  • 1 cup cilantro, chopped
  • 2 limes, juiced
  • 2 teaspoons salt

Transfer all the ingredients to a serving bowl. Mix well and check for seasonings. Serve immediately or cover with plastic wrap and store in refrigerator.

Avocado and Cucumber Guacamole

A bit of change from the regular guacamole- this one has cucumber in it. English cucumber adds a delicious crunch to this rich, yummy salad!

  • 2 avocados, chopped
  • ½ English cucumber, chopped
  • 1 garlic clove, chopped
  • ½ cup cilantro chopped
  • 1 to 2 teaspoons salt
  • Juice of a large lemon or lime

Mix all the ingredients and serve with tacos.

Avocado & Cucumber Guacamole

I love making guacamole, especially with any Mexican food I make. This one is a bit different as it has a nice crunch which guacamole desperately needs. I added half of an English cucumber. Why an English cucumber, you ask? Well, I like it better than the regular one as it is sweeter and with less seeds. Try this recipe next time you want to make a delicious guacamole!

  • 2 avocados, chopped
  • ½ English cucumber, chopped
  • 1 garlic clove, chopped
  • ½ cup cilantro chopped
  • 1 to 2 teaspoons salt
  • Juice of a large lemon or lime

 

Mix all the ingredients and serve with tacos.

Avocado and Poblano Pepper Crema

Avocado Crema I am not sure how this recipe came about. I was at the farmer’s market and I found these great looking poblano peppers. Once I had decided to make grilled steak fajitas, I wanted to make some kind of a salsa to serve on top. Instead I thought of making an avocado crema- what is that you ask??? Well, it is essentially a combination of creamed sour cream and avocado.

In this case, I grilled the poblano peppers, green onions, garlic and yellow onion with a drizzle of olive oil and salt. Once all the vegetables turned golden brown, I blended them with a cut up avocado, lime juice, Greek yogurt and salt. That was it- super simple and so flavorful.

I drizzled the crema over the steak and the vegetables. It complemented the spiced in the steak really well. The tang and the creaminess was delicious with the crunchy vegetables. I used up half of it for the meal and stored the rest away for another meal- hmm, how will I use it up??
