Grilled Ribeye with Chipotle Honey Barbecue Sauce Fajitas

I loved making this main entree for a few friends we were having over the other day. I knew I was going to grill but wanted to come up with something different to serve. Mexican and Latin themes always come to mind for a warm summer evening dinner. The bold flavors lend themselves beautifully to summer meals.

I bought a gorgeoous, grass fed piece of ribeye. It was huge- about three pounds or so. I decided to make a dry rub and sprinkled it all over the juicy steak for a good 4 to 5 hours- over night will be ideal.

I then made my own barbecue sauce- which is super easy and so delicious. Usually barbecue sauces are full of sugar, high fructose corn syrup and salt. If you make your own, it is easy to control the salt and the sugar plus you end with a tastier product.

I grilled the huge steak while basting with the barbecue sauce. I had extra sauce on the side for the meal.

We ate the delicious steak inside grilled tortillas topped with avocados, grilled peppers and onions and the barbecue sauce. The meal was absolutely delicious.

Taco Chicken Salad

Taco Chicken Salad1 I made this dish after eating at Restaurant Serenade in Chatham, NJ. I was reviewing the restaurant for the Chatham Patch. It was an enjoyable meal but my dish- the taco chicken salad was disappointing. I came home trying to figure out how to improve the salad and came up with my own version.

I marinated cooked chicken breast (or dark meat) in some very flavorful ingredients, including orange juice, adobo sauce and smoked paprika. The chicken in the original dish was tender but extremely bland. I wanted to infuse as much flavor as possible and so I marinated the chicken for a couple of hours.

Next- I prepared the toppings. I added some lime juice and salt to the sliced onions as well as the avocados.

I bought some small corn tortillas (although the flour ones will be fine as well) and filled them with the flavorful chicken and topped them with the onions and avocados. It is super easy to put together-  it surprised me the restaurant couldn’t get it right.

I served it with a pico de gallo rice- the recipe will be posted tomorrow. Now that it is grilling season, you can cook the chicken on the grill and marinate it in the wonderful flavors. It could be a great grilled dinner on a weekend or even a weeknight. Serve some delicious Rose with it and you have a fabulous meal…

Fresh Corn and Avocado Relish

Avocado and Corn Relish I served this delicious relish with the chicken enchiladas. I love making guacamole but there is so much of it you can eat. Since I like to change things around, I came up with this. It is very simple yet extremely flavorful. It’s amazing, when the right ingredients are used, they can create a wonderful dish. 

In this case, only 5 ingredients were used. Lime, cilantro and salt make this dish savory with just the right amount of tartness. The ripe avocados are soft and creamy; the fresh corn is sweet and crunchy. The two together are an unbelievable combination. Now, obviously fresh corn is not available year round so I think frozen would be just fine. Actually roasted corn will be fabulous in here, the one Trader Joes has. Either way, the relish is delicious with any kind of meal- even for breakfast, with a side of scrambled eggs. Enjoy it with just plain old tortilla chips- yum!

A Father’s Day Gift: Chorizo and Ground Beef Burger with Guacamole and Oven Fries

This recipe is a keeper. The burger is extremely flavorful- I mixed some fresh chorizo to it. Chorizo is one of my all time favorite ingredients to use- it is pork sausage mixed with garlic, paprika and lots of other yummy things- depending on where you buy it.  Adding chorizo is a great way to make a ordinary burger extremely special- you don’t have to do anything else except shape them up and throw them on the grill. My husband loves southwestern flavors- we had people coming over for a barbeque and he requested the meal to echo those flavors.. I immediately thought of guacamole and monterey jack cheese. I thought both things will be great as toppings for the burgers. I bought pepper jack cheese for the adults and the regular one for the kids. My daughter, of course, being the odd one out- doesn’t eat sandwiches- so she ate the burger on it’s own. I cooked corn on the cob for the kids since the corn salad had a bite to it. I had to make my favorite and staple, oven fries- they are always a hit. I love potatoes and love to cook them in a healthy way so I can eat lots of them! All the kids loved them- guess who doesn’t eat potatoes- yup, you guessed it- Sia!

I think this would be a great menu for fathers day. I will be posting a corn salad recipe tomorrow to round off the menu. I served a trifle for dessert and my husband made a sangria to go with the food. My husband loved it and I am thinking of making the meal again for him this coming Sunday- although knowing myself, I will tweak the recipes somehow so I can blog about them in the future. You can’t give a loved one a better gift than cooking them a delicious meal- I don’t like going out for such occasions- the restaurants are a zoo and serve subpar food. So, stay home, save money and cook a fabulous meal for your loved one.
