Grilled Chicken with Plum Sauce

I am very proud of this recipe. Some friends were coming over for a barbecue and I wanted to grill chicken.. maybe with some barbecue sauce… but I had recently read an article about how much sugar there is in bottled barbecue sauces. I wanted to make my own but make it a bit different.. so, I decided to use the plums in the sauce. That would be the main flavor mixed in with some onion, garlic, orange juice and of course some smoked paprika. I added a bit of honey to balance the flavors and came up with a delicious sauce. I marinated the chicken in some spices and basted it with half of the sauce. I served the rest of the sauce with the cooked chicken. It tasted amazing… definitely try this sauce next time you are in the mood to grill…

  • 4 to 5 black plums, cut into 1 inch wedges
  • 1 small yellow onion, chopped
  • 3 garlic cloves, chopped
  • 1 tablespoon extra virgin olive oil
  • ½ cup orange juice
  • ¼ cup honey
  • 2 teaspoons smoked paprika
  • Salt

Heat a small saucepan with the olive oil. Add the onion and garlic and sauté for 2 to 3 minutes on medium heat. Add the plums, orange juice, honey and smoked paprika. Bring to a boil and lower the heat to a simmer and cook for 15 minutes. Take off the heat and add to a blender till smooth. Transfer to a bowl and check for seasonings. Divide in half and use one half to baste steak and chicken and serve the other half with the cooked meat.

Barbecue Sauce

  • 2 tablespoons extra virgin olive oil
  • 1 large shallot, chopped
  • 2 garlic cloves, chopped
  • 6 ounces fresh or frozen raspberries
  • 1 cup chopped fire roasted tomatoes
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons raw honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • Juice of half a large lemon
  • Zest of a lemon

Heat a small saucepan with the olive oil. Add the shallot and garlic cloves. Saute on medium heat for 2 to 3 minutes. Add the raspberries, tomatoes, vinegar, honey, Worcestershire sauce, smoked paprika and salt. Bring to a boil and simmer for about 20 minutes. Cool the mixture and blend in a blender till smooth. Add the lemon juice and lemon zest. Take one cup aside for basting the chicken.

Dry Rub

  • 2 teaspoons smoked paprika
  • 2 teaspoons coriander powder
  • 2 teaspoons coarse salt
  • Mix the spices and keep aside.
  • 2 pounds chicken thighs

Sprinkle the dry rub all over the chicken on both sides. Marinate over night or at least for 4 hours.

Grill the chicken while basting every few minutes with the barbecue sauce.

Serve the chicken with the remaining sauce on the side.

 

Grilled Ribeye with Chipotle Honey Barbecue Sauce Fajitas

I loved making this main entree for a few friends we were having over the other day. I knew I was going to grill but wanted to come up with something different to serve. Mexican and Latin themes always come to mind for a warm summer evening dinner. The bold flavors lend themselves beautifully to summer meals.

I bought a gorgeoous, grass fed piece of ribeye. It was huge- about three pounds or so. I decided to make a dry rub and sprinkled it all over the juicy steak for a good 4 to 5 hours- over night will be ideal.

I then made my own barbecue sauce- which is super easy and so delicious. Usually barbecue sauces are full of sugar, high fructose corn syrup and salt. If you make your own, it is easy to control the salt and the sugar plus you end with a tastier product.

I grilled the huge steak while basting with the barbecue sauce. I had extra sauce on the side for the meal.

We ate the delicious steak inside grilled tortillas topped with avocados, grilled peppers and onions and the barbecue sauce. The meal was absolutely delicious.
