Roasted Brussels Sprouts with Orange Cream & Cranberries

Roasted Brussels Sprouts with Orange Cream

  • 1 pound Brussels sprouts, trimmed and cut in half
  • 1 tablespoon olive oil
  • Salt

Preheat oven to 400 degrees F.

Transfer the sprouts on to a lined baking sheet. Drizzle the olive oil and sprinkle salt. Mix well and roast for about 20 minutes till soft and golden brown.

  • ¼ cup cream
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • Zest of one orange
  • Salt
  • 1/3 cup dried cranberries

Heat a wide frying pan with the oil. Add the garlic and orange zest. Saute on low heat for 2 to 3 minutes. Add the cream and cook for 4 to 5 minutes on medium heat. Add the Brussels sprouts and cranberries and mix well. Cook for 3 to 4 minutes. Add salt to taste and serve.

Brussels Sprouts and Pomegranate Seeds with Orange Tahini Dressing

I like to experiment different dishes before Thanksgiving- this one is a winner. Delicious roasted Brussels sprouts in an orange tahini dressing.
3 cups Brussels sprouts, trimmed and cut in half

Roast the Brussels sprouts with a drizzle of olive oil and sprinkle of salt and pepper in a 400 degrees oven for 15 minutes, till golden brown. Set aside and let cool.

1 cup pomegranate seeds

½ cup chopped walnuts

½ cup fresh parsley, leaves picked and cleaned

Salt

 

 

 

Dressing

2 tablespoons tahini, room temperature

Juice of one large navel orange

Juice of one lime

1 tablespoon honey

1 tablespoon extra virgin olive oil

1 garlic clove, grated

½ teaspoon salt

¼ teaspoon pepper

Mix all the ingredients in a bowl, check for seasonings and adjust if necessary.

Transfer the sprouts, pomegranate seeds, walnuts and parsley to a serving bowl. Drizzle 3 tablespoons of dressing, mix well and add more dressing if necessary or fix seasonings by adding salt and pepper. Serve room temperature.

Roasted Brussels sprouts with Chorizo

  • 2 pounds Brussels sprouts, trimmed and halved lengthwise
  • 2 tablespoons extra virgin olive oil
  • 1 pack fresh Mexican chorizo, casings off and crumbled
  • Salt
  • 2 medium shallots, chopped
  • ½ cup pine nuts
  • ½ cup fresh cilantro, chopped

Preheat oven to 400 degrees F.

Blanch the Brussels sprouts in boiling water, drain and put them into an ice bath to shock them and retain the color. Take out of the water and pat dry. Keep aside. This can be done a day before and refrigerated.

Heat a large skillet with 2 tablespoons olive oil. Add the chorizo and cook on medium heat for about 5 to 7 minutes till golden brown. Add the shallots and cook, stirring and cook for about 5 to 6 minutes. Add the pine nuts and cook for a minute. Add the Brussels sprouts to the mixture, mix well and cook for 5 to 6 minutes till the sprouts are cooked through. Season with salt and pepper. Garnish with cilantro and serve.

Roasted Brussels Sprouts with Garam Masala and Cilantro

These Brussels sprouts are very similar to the ones I have made in the past. I just changed up the spices a bit. I added garam masala to the mix. Cilantro finished the process and made this dish absolutely delicious!

  • 2 pounds Brussels sprouts, trimmed and cut in half
  • 2 tablespoons extra virgin olive oil
  • Salt
  • Pepper

Preheat oven to 350 degrees F.

Place the sprouts onto a lined cookie sheet. Drizzle with olive oil, salt and pepper. Mix well and roast for 30 to 40 minutes, till the sprouts are golden brown. Take out and keep aside.

  • 1 tablespoon extra virgin olive oil
  • ½ cup pancetta, chopped
  • ½ cup walnuts, chopped
  • 1 teaspoon garam masala
  • ½ cup half and half
  • Salt
  • ½ cup cilantro

Heat a pan with the olive oil. Add the pancetta and cook on medium heat till the fat is rendered. Add the walnuts and garam masala. Cook for 2 to 3 minutes on medium heat. Add half and half and the roasted sprouts. Mix well and add salt if necessary. Garnish with cilantro and serve hot.

Cilantro Chicken Shepherds Pie with Brussels Sprouts

I made shepherds pie with the leftover chicken from yesterday. I paired Brussels sprouts with the yummy chicken and it was a bit hit!!!

  • 2 tablespoons butter
  • 2 cups shredded Brussels sprouts
  • 2 cups of leftover cilantro chicken, shredded with gravy
  • 2 tablespoons all purpose flour
  • 1 cup chicken broth
  • Salt
  • 4 to 5 medium yellow potatoes, peeled and 2 inch pieces
  • ½ cup half and half
  • 1 tablespoon butter
  • 1 egg yolk
  • Salt
  • Pepper

Heat a frying pan with butter. Add the shredded Brussels sprouts and sauté on medium heat for 3 to 4 minutes. Add the chicken and sauté for another 2 to 3 minutes. Add the flour and sauté for another minute on medium heat. Slowly add the broth and bring to a boil and let it cook for 2 to 3 minutes. Add salt for seasoning. Keep aside.

In the meantime, bring the potatoes to a boil in a medium saucepan with water. Let simmer for about 10 to 12 minutes or till the potatoes are soft. Drain and mash, leave in the saucepan. Microwave the half and half and butter in a small bowl for a minute. Add the mixture to the mashed potatoes and mix well. Add the salt and pepper. Mix well and check for seasonings. Add the egg yolk and mix well.

Transfer the chicken mixture into an ovenproof 8X8 dish. Top with the mashed potatoes making sure all the edges are covered. Bake in a 400 degrees oven for about 30 minutes or till the top is golden brown. Let sit for 10 minutes and serve with a salad.

Shepheards Pie

Keema (Ground Meat) with Brussels Sprouts

Keema is kind of the Indian version of chili.. well, a loose interpretation of it- there are no beans in keema.. usually some veggie. I decided to pair, my favorite, Brussels sprouts. Why not, I thought… and it was delicious…

  • 2 tablespoons ghee or butter
  • 2 tablespoons extra light olive oil
  • 1 large yellow onion, chopped
  • 2 inches fresh ginger, grated
  • 1 pound ground turkey or any meat desired
  • 2 tablespoons cilantro stems, chopped
  • 2 tablespoons dill stems, chopped
  • ½ cup full fat yogurt
  • 2 teaspoons ground coriander
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 2 cups shredded Brussels sprouts
  • ½ cup cilantro, chopped
  • ¼ cup dill, chopped

Heat a heavy saucepan with ghee and oil. Add the onion and ginger and sauté on medium heat for 3 to 4 minutes. Add the ground meat and cook while separating with the back of a wooden spoon on medium heat. Saute for 6 to 7 minutes. Add the yogurt, coriander, cayenne pepper and salt. Saute for another 5 minutes. Add the sprouts, mix well and cook with lid on for 20 minutes. Take the lid off and cook for another 10 minutes, checking for seasonings. Garnish with cilantro and dill. Serve warm.
