Turkey Burgers with Pancetta and Caramelized Onions

  • 2 teaspoons olive oil
  • ½ cup pancetta, chopped
  • 1 small yellow onion, chopped
  • 2 garlic cloves

Heat a frying pan with the olive oil. Add the pancetta and sauté on medium heat for 3 to 4 minutes. Add the onion and garlic. Saute for another 5 minutes on medium heat. Let cool and keep aside.

  • 1 pound ground turkey meat
  • 1 tablespoon rosemary, chopped
  • 1/3 cup parsley, chopped
  • 2 teaspoons salt
  • 4 slices fontina cheese

Transfer the ground turkey, rosemary, parsley, salt and the pancetta mixture to a medium bowl. Mix well and form into 4 patties. Cook on grill or a frying pan. Melt cheese on top.

Serve in ciabatta rolls with tomato slices.

Steak Sandwich with Caramelized Onions and Blue Cheese Mayonnaise

  • 2 to 3 filet mignon steaks (depending on the number of sandwiches)
  • Drizzle of olive oil
  • Salt
  • Pepper

Heat a cast iron pan until very hot and cook the steaks on medium high heat till the steaks reach the desired doneness. Keep aside, covered with aluminum foil. After 15 minutes, slice the filets.

  • 1 large onion, slice thin
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar

Heat a frying pan with the butter and oil on medium heat. Add the sliced onion and top with salt and sugar. Mix well and continue to cook on medium heat, stirring every few minutes. Cook for 15 to 20 minutes, till the onions are a golden brown without burning. Keep aside.

Blue Cheese Mayonnaise

  • ¼ cup mayonnaise
  • ¼ cup full fat plain yogurt
  • ½ cup blue cheese, crumbled
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley, chopped

 

  • 4 to 5 Ciabatta rolls, sliced and toasted
  • Baby arugula leaves

Assemble the sandwiches by placing some arugula on one side of the roll. Place some steak slices on top. Top with some caramelized onions. Add some mayonnaise on the other side of the roll and serve.

Jalapeño Fontina Cheese Burgers

These are the most delicious burgers ever! Perfect for the upcoming long weekend…

  • 1 pound ground beef

Preheat oven to 400 degrees F.

  • 3 large jalapenos, sliced in half and deseeded
  • 4 to 5 garlic cloves, with skin on, wrapped in aluminum foil
  • Drizzle of olive oil
  • Salt
  • ½ cup cilantro

Add the jalapenos cut side down onto a lined cookie sheet. Add the wrapped garlic cloves. Drizzle the olive oil over the peppers and sprinkle some salt. Roast for 20 to 30 minutes until the peppers are soft. Take out of oven and let cool. Scrape the skin off the peppers. Squeeze the garlic out of the skins and add to small processor. Add the peppers and cilantro. Process till smooth. Add to the ground meat. Add some salt and mix well. Form into four patties and let sit for an hour or so.

  • 4 slices Fontina cheese
  • 4 ciabatta rolls

Jalapeno Mayonnaise

  • ¼ cup non-fat Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 3 to 4 tablespoons chopped pickled jalapenos

Add the yogurt, mayonnaise, garlic powder, salt and jalapenos in a small bowl. Mix well and serve with burgers and rolls.

Assemble the cooked burgers with melted fontina onto the toasted buns with the jalapeno mayonnaise.

Thai Style Cheeseburgers with Lime Cilantro Mayo

My love of Asian cuisine continues with these delicious cheeseburgers.. they are really good. Feel free to marinate the meat overnight for extra yummy flavor and serve them with oven baked fries!

  • 1 pound grass fed ground beef
  • 2 tablespoons red curry paste
  • 1 teaspoon grated galangal or fresh ginger
  • 3 garlic cloves, grated
  • 1/3 cup cilantro, chopped
  • 1/3 cup basil, chopped
  • 1/3 cup mint, chopped
  • Zest of one lime
  • 1 stalk lemongrass, smashed and chopped
  • 1 to 2 teaspoons salt
  • 1 tablespoons oil

Transfer all the ingredients to a bowl. Mix well and let sit for a couple of hours in the fridge. Take out half an hour before cooking. Form into 4 to 6 patties, depending how big you want the burgers.

Heat a frying pan with the oil and cook the burgers to the desired doneness. Top with cheese and serve on toasted rolls.

  • 4 to 6 ciabatta rolls, sliced and toasted
  • 4 to 6 cheddar slices
  • Baby spinach

Lime Cilantro Mayo

  • ¼ cup mayonnaise
  • ¼ cup Greek yogurt
  • 1 garlic clove, grated
  • Zest of one lime
  • Juice of one lime
  • ½ cup cilantro, chopped
  • 2 teaspoons salt

Mix all the ingredients in a small bowl and serve with the cheeseburgers.

Roasted Shallot and Dill Cheese Burgers

  • 1 large shallot, ends cut off
  • 3 garlic cloves, ends cut off

Preheat oven to 350 degrees F.

Place the shallot and garlic cloves on a piece of aluminum foil. Drizzle a bit of oil and roast in oven for 30 to 40 minutes, till soft. Take out of foil and cool. Squeeze the garlic and shallot out of the skin and chop if needed. Add to the ground turkey.

  • 1 pound dark meat ground turkey
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh dill, chopped
  • 1 egg, beaten
  • 1 teaspoon salt
  • 4 cheddar cheese slices
  • 4 ciabatta rolls, sliced

Transfer the ground turkey, roasted shallot, roasted garlic, cilantro, mint, dill, egg and salt into a bowl. Mix well and form into four patties. Grill or cook the burgers on the stovetop. Top with cheese and place on ciabatta rolls. Dress the burgers with tomato, lettuce and mayonnaise.

Gorgonzola and Pancetta Burger

Gorgozola and Pancetta Burgers

This is one of my favorite burgers I have made in a long time. I make burgers all the time and try to come up with new combinations. This one is a combination of some delicious flavors including pancetta and fresh thyme. I made the burgers even more delicious by stuffing them with gorgonzola cheese…

  • ½ cup pancetta, chopped
  • 1 tablespoon extra virgin olive oil
  • 2 small shallots, chopped
  • 3 garlic cloves, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 pound grass fed ground beef
  • 1 to 2 teaspoons salt
  • 1 egg, beaten
  • ½ cup crumbled gorgonzola
  • 4 Ciabatta rolls
  • Sliced tomatoes
  • Lettuce

Heat a small frying pan with the pancetta. Add the oil and sauté on medium heat for a minute. Add the shallots, garlic and fresh thyme. Saute on medium heat for 5 to 6 minutes. Take off the heat and let cool. Add the mixture to the ground beef. Add salt and egg and mix well.
Divide the mixture into four parts. Take each part and form a ball. Flatten it and add 2 tablespoons of cheese in the middle. Fold the meat over the cheese and form a patty. Repeat and make three more patties. Cook on the grill or cook top. Serve on a Ciabatta roll with tomatoes and lettuce.

Mint and Ginger Burgers with Cilantro Mayonnaise

Ginger Mint Burger These burgers hold a special place in my heart- why you ask- well, because this was the first time my daughter started eating burgers! She does not like sandwiches- they only one she will eat is a jam sandwich. I don’t make it for her very often since it offers hardly any food value.

I made this for a barbecue and she had been outside playing all day and came in completely famished and ready to pounce on dinner. I had planned on giving her grilled sausages with corn since I knew she was not keen on the hamburgers- but surprise, surprise- she picked up a burger and started eating it.

I made these simply with ground turkey, ginger and some fresh mint and cilantro. I flavored them with salt and garam masala. I also whipped up a quick cilantro mayonnaise with lots of fresh cilantro, green onions and lemon juice. It is amazing how much different a few key ingredients can make a huge difference- the mayo was delicious.

My daughter had the burger with baby spinach but no mayo. She loved it and announced that she will be eating burgers from now on. I am thrilled- yet another food group had been added to her vast collection.
