Sausage with Zucchini

Sausage and Zucchini I would save this recipe for when one has had a crazy busy day but one still wants to serve a healthy, home cooked meal to ones family. This hardly takes any time- of course the key is to have the ingredients in the fridge and the pantry- that being said- any kind of vegetable or meat can be substituted for the zucchini and the sausage.

I like combining the two especially because of the way they look cut into perfect rounds. I sauteed up the sausage and added the onion and garlic. Some tomatoes, thyme and chicken broth later, I had a delicious dish. I simply served it with whole wheat couscous- which take all of five minutes and voila- I had a delicious meal…

Meat Koftas- Meatballs in an Onion Gravy

Koftas This is a delicious meat ball dish. In India we meatballs are called koftas. They can be made with a variety of meats. My favorite is goat meat- but pork is delicious as well.. and so is beef.

The key to make this dish successful is to season every component of this dish. I started off with the minced meat which I seasoned with salt, garam masala and a small shallot. I let that mixture sit for a few hours (over night would be great). I then prepared a spice mixture consisting of coriander and cumin seeds. It is important to use whole spices as the grounds ones don’t give as much flavor- although, in a pinch one can use the ground variety. The next step was to blend an onion with ginger and garlic- that is the base of the gravy. If the steps are followed- the dish is a sure hit.

It is not the fastest dish to make- so I would leave this for the weekend.. but it is definitely worth the extra time….

Keema Mattar (Ground Turkey with Peas)

Keema Mattar This is a very simple, weeknight meal one can whip up in no time. Keema is one of my favorite things to eat and make. Keema is essentially ground meat cooked in spices, onion, ginger and garlic- the rest is up to you. I love pairing the meat with different vegetables to make a great one pot meal. Brown rice or fresh make whole wheat rotis can be served to create and delicious and wholesome meal.

I made this one with peas but I also added a variety of different spices- which are not my usual. I used curry leaves and mustard seeds. The mix of spices gave this dish a fabulous flavor. My daughter loves keema- her favorite is the one I make with cauliflower. She devoured it with two big rotis and a glass of milk….

Moong Dal

Mung Dal Sometimes it is enough to eat something very simple and super easy to make. I make lentils when I run out of things to make for dinner. My usual go-to meal is a rice pulao with peas and some kind of dal.

This one in particular is especially my favorite. I love it because of it’s taste and also because it is easily accessible in any store (the lentils that is). I also love the way this particular one is cooked. My Mom has been making moong dal for years but she learnt how to make it this way from a friend.

I have been making this dal for years as well. Usually when I make lentils, I cook everything together and add sauteed cumin seeds at the end (most of the time). This one is different… I cook the lentils separately and a mixture of onions, cumin, tomatoes, etc, separately. Once the onion mixture is soft and cooked, I then add it to the cooking lentils and cook the whole thing. It is almost like a lentil stew and really delicious.

Serve with with some veggies on the side with rice or bread- it will become part of your repertoire….

Paneer Makhani (Indian Cheese Cooked in a Tomato Butter Sauce)

Paneer Makhani This is a very popular dish served in Indian restaurants. Some friends were coming over with their kids and I thought of making Indian food that day. Since I was cooking a vegetarian meal, paneer was definitely on the menu- I just didn’t know what kind to make.

As I thought about all my choices, paneer makhani came to mind. I looked in my blog and realized I have never made it before- how can that be?? It is one of the more popular Indian dishes out there.

This version is the easy and quick one- it is done in about half an hour. There are other versions out there with more complex flavors but I don’t see any reason for that- this one is delicious and simple and best of all a big hit with everyone.

All you need is a can of crushed tomatoes, onions, ginger and garlic. One key ingredient is roasted cumin seeds- they impart a lovely, sweet, nutty flavor- not as smokey as the regular cumin seeds. I usually roast some cumin and always have it on hand. Another important ingredient is dried mint- I garnished the dish with some. It provides a delicious flavor as well. In case you don’t have the dried variety, add some fresh mint into the processor with the onions, ginger and garlic.

Achari Gosht- Pickled Goat Meat

Achari Gosht- Pickled Mutton My Mom has been making this dish as long as I can remember. I particularly remember eating this goat dish when we went for picnics or a train ride to visit my cousins. It was cooked for those occasions since it was essentially ‘pickled’. It doesn’t go bad and can be kept outside for a long time. We would eat it room temperature and it was delicious.

It has a strong flavor of cooked onions with the tomato paste and  is cooked for a while to cook off any water coming out of the vegetables. It is a concentrated flavor and so a little goes a long way. Typically Indian pickles consist of onion seeds, fennel seeds, etc. This dish has those flavors. Vinegar is added to finish the dish.

This dish can be made with any kind of stew meat. You can make it with dark meat chicken as well. To me, the goat tastes the best- I guess since I grew up eating it- that is what I like.

Looking at the list of ingredients, it may seem like a complicated dish- it isn’t. It does take a while to make it but it is totally worth it. It keeps for a while in the fridge so it is great to make a big batch and eat it once in a while. It is perfect for when there is nothing to eat and you don’t have time to cook anything. Take some pickled mutton out and eat it with a naan- yum!!!

Tomato Rice with Peas

Tomato RiceThis is my version of a South Indian rice dish my husband has all the time at restaurants. I have never made it before and thought it would be nice to try it at home. It is essentially cooked rice sauteed with a lot of spices, lentils and curry leaves. I decided to take it to another level and make a one pot meal out of it. How much do we love one pot meals?

In order to make this dish balanced I added frozen peas and shredded paneer which is an Indian style cheese. So now I had vegetables and protein in the rice dish. I guess if you wanted to be even more healthy, you can use brown rice instead of the white.

The rice dish was super flavorful with the mustard seeds, curry leaves, and a blend of spices. The crushed tomatoes and peanuts made this dish fabulous. My daughter is not into nuts- so all I did was take them out for her. She was very skeptical trying the rice- but once she had a bite, she was sold…
