Greek Style Potato Salad

This potato salad is yummy with lots of great flavors like oregano, olives and dills. I prefer my potato salad with a lemon dressing and this one has amazing crunch with cucumbers and pine nuts. It is a great side with burgers or any meat or fish!

  • 4 to 5 large yellow skinned potatoes, peeled and cut into 1 inch dice

Dressing

  • Juice of 2 large lemons
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh oregano, chopped
  • 2 teaspoons salt

Mix the ingredients in a small bowl and keep aside.

Place the potatoes in a large saucepan, cover with water and bring to a boil. Lower the heat to a simmer and cook till the potatoes are soft but not mushy, about 6 to 8 minutes. Drain and transfer to a serving bowl. While the potatoes are still warm, pour the dressing and mix well and keep aside.

  • ½ English cucumber, chopped
  • ½ cup kalamata olives, chopped
  • ½ cup pine nuts
  • ½ cup fresh dill, chopped
  • ½ cup feta cheese, crumbled

Add all the ingredients to the warm, dressed potatoes. Mix well and check for seasonings. Let the potatoes sit for at least an hour before serving.

 

Tabbouleh

This is a yummy salad- perfect with the Middle Eastern feast I made. Fresh, flavorful and delicious….

  • ¼ cup red bulgur
  • 3 ripe tomatoes
  • 2 cups flat leaf parsley, minced
  • 1 cup fresh mint, minced
  • 1 cup cilantro, minced
  • ½ English cucumber, chopped
  • Juice of 2 lemons
  • ¼ cup extra virgin olive oil
  • ½ teaspoon ground all spice
  • ½ teaspoon ground cinnamon
  • 1 to 2 teaspoons salt

Transfer the bulgur to a medium bowl and pour about ½ cup hot water and let soak for 10 minutes. Rinse and drain and add to a serving bowl. Cut the tomatoes in half and take out all the meat with a spoon including the seeds. Chop the tomatoes and add to the bowl including all the other ingredients. Mix well, taste for seasonings and serve.

Greek Style White Bean and Cucumber Salad

I made this delicious salad for my book club meeting the other day and it was a big hit. This salad is perfect for a meal or as a side with any meat or fish… either way, it is yummy!! I love the Greek flavors including the feta and dill!!

  • 1 14 ounces can of Cannellini beans, rinsed and drained
  • ½ English cucumber, chopped
  • 2 cloves garlic, grated
  • ½ cup fresh dill, chopped
  • ½ cup fresh parsley, chopped
  • Juice of one small lemon
  • 2 tablespoons extra virgin olive oil
  • ½ cup feta cheese, crumbled
  • 1 to 2 teaspoons salt

Add all the ingredients to a serving bowl, mix well and let the salad sit for at least an hour before serving.

Avocado Cucumber and Apple Salad

Here is another salad or kind of a guacamole… rather my take on a delicious guacamole… it will complement tortilla chips, any meat or fish…

  • 2 avocados, diced
  • 1 English cucumber, diced
  • 2 medium Pink Lady apples, diced
  • 4 to 5 green onions, chopped
  • 1 cup cilantro, chopped
  • 2 limes, juiced
  • 2 teaspoons salt

Transfer all the ingredients to a serving bowl. Mix well and check for seasonings. Serve immediately or cover with plastic wrap and store in refrigerator.

Avocado and Cucumber Guacamole

A bit of change from the regular guacamole- this one has cucumber in it. English cucumber adds a delicious crunch to this rich, yummy salad!

  • 2 avocados, chopped
  • ½ English cucumber, chopped
  • 1 garlic clove, chopped
  • ½ cup cilantro chopped
  • 1 to 2 teaspoons salt
  • Juice of a large lemon or lime

Mix all the ingredients and serve with tacos.

Avocado & Cucumber Guacamole

I love making guacamole, especially with any Mexican food I make. This one is a bit different as it has a nice crunch which guacamole desperately needs. I added half of an English cucumber. Why an English cucumber, you ask? Well, I like it better than the regular one as it is sweeter and with less seeds. Try this recipe next time you want to make a delicious guacamole!

  • 2 avocados, chopped
  • ½ English cucumber, chopped
  • 1 garlic clove, chopped
  • ½ cup cilantro chopped
  • 1 to 2 teaspoons salt
  • Juice of a large lemon or lime

 

Mix all the ingredients and serve with tacos.

Cucumber Salad

Cucumber Salad I decided to continue the vegetarian theme. This vibrant looking salad is delicious and extremely flavorful. It would be perfect with the lentils from yesterday. Although the salad is made with rice vinegar which has more of a Chinese or Japanese flavor.. but I think it would stand up very well with the delicious cumin and mustard seeds flavors.

The trick is to first buy an English cucumber instead of the regular variety. The English variety is leaner and longer and has less seeds. I cut it in half length wise and then scoop the seeds out with a spoon. In order to get the cucumbers super crispy, one can sprinkle some salt on them, place them in a colander over a bowl. The salt will extract the extra moisture out of the cucumbers and make them crunchy. This step is optional and skipping it will not lessen the flavor.

The salad has very few ingredients including the rice vinegar, serrano chilies and cilantro. Try this simple yet delicious salad…
