Spring Onion Cheese Burgers

We love, love burgers and this is a delicious one with yummy flavors of green onions and lots of herbs!

  • 1 pound grass fed ground beef
  •  3 green onions, chopped
  • ½ cup parsley, chopped
  • ¼ cup dill, chopped
  • ¼ cup mint, chopped
  • 1 egg, beaten
  • 1 teaspoon salt

Place the herbs and green onions in a food processor. Process till smooth. Take out and transfer to a mixing bowl. Add the meat, egg and salt. Mix well and form 4 to 5 patties. Grill and top with cheese and serve on toasted buns.

Beef Chili with Chicken Chorizo

This is a delicious chili cooked with chorizo- which has immense flavor…

  • 2 tablespoons olive oil
  • 1 pound grass fed ground beef
  • 4 chorizo links, casings taken off and crumbled
  • 1 medium onion, chopped
  • 3 garlic cloves, chopped
  • 1 yellow pepper, chopped
  • 1 teaspoon ancho chili powder
  • 1 teaspoon smoked paprika
  • 1 14 oz can diced tomatoes with chili
  • 1 14 oz can black beans, rinsed
  • 1 cup water
  • 2 teaspoons salt
  • ½ cup cilantro, chopped

Heat a saucepan with olive oil. Add the beef and chorizo and sauté on high heat for 5 to 6 minutes while separating the meat with the back of a wooden spoon. Add the onion, garlic and pepper and sauté for 3 to 4 minutes. Add the spices and tomatoes. Saute for another 2 to 3 mintues. Add the black beans, water and salt. Bring to a boil and lower the heat to a simmer. Cover and cook for 20 minutes, while stirring occasionally. Take the lid off and cook for another 15 minutes on a low heat, or until the desired consistency is achieved. Check for seasonings and garnish with cilantro. Serve warm.

Cheeseburgers with Indian Flavors

  • 1 pound grass fed ground beef
  • ½ cup cilantro
  • 3 garlic cloves
  • 3 green onions
  • 2 teaspoons salt
  • 2 teaspoons garam masala
  • 2 teaspoons ground coriander

Process the cilantro, garlic and green onions. Add to the ground beef. Add the salt, garam masala and ground coriander. Mix well and keep aside for 2 to 3 hours. Form into 4 patties.

Garam Masala Mayonnaise

½ cup mayonnaise
2 teaspoons garam masala
½ teaspoon salt
Juice of one lemon

Mix the mayonnaise, garam masala, salt and lemon juice in a small bowl and keep aside.

  • 1 large sliced tomato
  • 4 soft burger or focaccia rolls
  • 4 pepper jack slices

Cook the burger patties on a grill or a grill pan according to desired doneness. Top with cheese. Spread mayonnaise on the rolls. Add a tomato slice and add the patty. Serve with corn and a salad.

Roasted Onion and Garlic Burgers

A classic beef cheese burger but with amazing roasted onion and garlic flavors- make it this coming weekend!!!

  • 1 medium yellow onion, cut in quarters with skin on
  • 4 garlic cloves, skin on
  • 4 green onions, cut in half
  • Sprinkle of salt
  • Drizzle of olive oil

Preheat oven to 400 degrees F.

Transfer the onion and garlic to a lined cookie sheet. Sprinkle salt and drizzle olive oil. Roast for half an hour and add the green onions. Roast for another 15 minutes and take out of oven. Cool and process in a food processor till chunky. Keep aside.

  • 1 pound grass fed ground beef
  • 1 large egg, beaten
  • 2  teaspoons salt
  • 4 cheddar cheese slices
  • 4 ciabatta rolls, toasted
  • 1 large tomato, sliced
  • Mayonnaise
  • Lettuce

Transfer the beef to a medium mixing bowl. Add the roasted mixture, egg and salt. Mix well but not too much. Divided into four patties. Cook the patties to desired doneness, top with cheese and place on toasted rolls with tomatoes, mayonnaise and lettuce.

 

 

Mexican Flavored Cheeseburgers

This is yummy and very appropriate for this week of cinch de mayo…

  • 1 cubanelle pepper, sliced in half and seeded
  • 1 poblano pepper, sliced in half and seeded
  • 3 to 4 garlic cloves with skins on
  • 3 to 4 green onions, cut into quarters
  • Drizzle of olive oil
  • Salt
  • ½ cup cilantro, chopped

Place the peppers, garlic and green onions on a lined cookie sheet. Drizzle olive oil and sprinkle salt. Roast in oven for 15 to 20 minutes on 350 degrees F. Add the roasted vegetables in a blender with the cilantro. Blend till smooth. Keep aside.

  • 1 pound grass fed ground beef
  • 2 teaspoons salt
  • 1 egg, beaten

Mix the ground beef, salt and egg with the green mixture. Divide the mixture into 6 patties. Keep aside.

  • 6 buns
  • 6 slices of cheddar cheese
  • 1 large or 2 medium tomatoes, sliced

Mayonnaise

  • 2 tablespoons mayonnaise
  • ¼ cup non-fat Greek yogurt
  • 1 teaspoon smoked paprika
  • Juice of half a lime
  • 1 teaspoon salt

Mix the mayonnaise, yogurt, smoked paprika, lime juice and salt in a small bowl and keep aside.

Cook the patties and assemble the burgers with the mayonnaise and tomato slices. Serve with oven fries.

Middle Eastern Style Ground Beef

I recently entertained and decided to make a Middle Eastern/Greek meal- so I started with this ground beef dish flavored with mint and garlic. I served the meal with warm pita bread with delicious feta cheese and hummus for appetizers…

  • 2 tablespoons olive oil
  • 1 teaspoon dried mint
  • 2 teaspoons garam masala
  • 1 pound grass fed ground beef
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, chopped
  • 2 medium tomatoes, seeds and core removed, chopped
  • ½ cup tomato sauce, homemade or store bought
  • 2 teaspoons salt
  • 1/3 cup flat leaf parsley, chopped
  • 1/3 cup fresh mint, chopped

Heat a large saucepan with the oil. Add the dried mint and garam masala and sauté on medium heat for 10 seconds. Add the ground beef and increase the heat to high and sauté while separating the meat with a wooden spoon for 4 to 5 minutes. Add the onion, garlic, tomatoes and tomato sauce. Saute on high heat for another 4 to 5 minutes, stirring constantly. Add the salt and lower the heat to medium and cook with the lid on for 8 to 10 minutes. Take the lid off and check for seasonings. Garnish with parsley and mint. Serve with heated pita.

Herbed Cheeseburgers

These burgers are absolutely delicious… filled with herbs and something different- ricotta cheese. It makes a delicious , tender burger…. perfect for the grill…

  • 1 pound grass fed ground beef
  •  ¼ cup cilantro, chopped
  • ¼ cup parsley, chopped
  • ¼ cup dill, chopped
  • 1 jalapeno, seeded and chopped
  • 2 green onions, chopped
  • 1/3 cup ricotta cheese
  • 1 teaspoon salt
  • 1 egg, beaten
  • Cheddar slices

Transfer the cilantro, parsley, dill, jalapeno and green onions to a food processor. Add the processed herbs to a medium bowl. Add the ground beef, ricotta cheese, salt and egg. Mix well and form into 4 to 6 patties- depending on the desired size.  Cook the burger patties and top with cheese. Serve on Ciabatta rolls.
