Turkey Chili with Beans

Yummy and healthy and perfect for a cold day….

  • 2 tablespoons olive oil
  • 1 pound dark meat ground turkey
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ancho chili
  • 1 medium yellow onion, chopped
  • 3 garlic, chopped
  • ½ cup cilantro, chopped
  • 1 tablespoon tomato paste
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 1 14 oz can of beans (use your favorite, I used pinto), rinsed and drained
  • Salt

Heat a saucepan with olive oil and add the ground meat. Saute and brown on high heat while separating the meat and stirring at the same time for about 3 to 4 minutes. Add the coriander, cumin and ancho chili. Saute on medium heat for 3 to 4 minutes. Add the onion, garlic, cilantro and tomato paste. Saute on medium heat for 3 to 4 minutes, stirring constantly. Add the tomato sauce, chicken broth and beans. Bring to a boil, lower to a simmer and cook, covered for 30 minutes. Take the lid off and check for seasonings, add salt and serve warm with shredded cheese and other desired toppings.

Lasagna with Meat Sauce

Meat Lasagna 1Delicious lasagna… for the weeknights or a holiday meal!

  • 3 ½ cups fresh or store bought tomato sauce, divided
  • ½ pound ground turkey
  • 2 tablespoons extra virgin olive oil
  • ½ cup shallots, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh sage, chopped
  • Salt
  • 6 no-boil lasagna sheets
  • ½ cup shredded fontina
  • ½ cup shredded pecorino romano

Heat oven at 350 degrees F.

In a large frying pan, heat the olive oil. Add the ground turkey and break the meat with the back of a wooden spatula while sautéing for 4-5 minutes. Add the shallots and garlic and sauté for 3-4 minutes on medium high heat. Add the thyme, rosemary and sage. Add 2 cups tomato sauce and salt. Cook on medium low heat for 20 minutes and check for seasonings. Mix the 2 cheeses together and keep aside.
In an 8X8 pan, add ½ cup tomato sauce at the bottom. Add 2 sheets on top and add 1 cup meat sauce. Sprinkle ¼ cup cheese. Add 2 sheets on top and add 1 cup meat sauce once more. Sprinkle ¼ cup cheese. Add the last 2 sheets and top with 1 cup tomato sauce and sprinkle with ½ cup cheese. Cover with foil and bake for 50 to 60 minutes till bubbly on top.

Meat Lasagna

Turkey Chili with Squash and Eggplant

  • 2 tablespoons extra light olive oil
  • 1 pound dark meat, ground turkey
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ancho chili powder
  • 1 teaspoon cinnamon powder
  • 2 teaspoons salt
  • 1 medium squash, peeled and chopped
  • 1 medium Chinese eggplant, peeled and chopped
  • 1 14 ounces can fire roasted tomatoes
  • 1 14 ounces can black beans
  • 2 cups water or chicken broth
  • ½ cup cilantro, chopped

 

Heat a large saucepan with the oil. Add the ground turkey and sauté on medium high heat for 3 to 4 minutes, while separating the meat with the back of a spoon. Add the onion, garlic, chili powder, ancho, cinnamon and salt. Saute for 5 to 6 minutes on medium heat. Add the squash, eggplant, tomatoes and beans. Saute for 3 to 4 minutes. Add the water/broth, bring to a boil and simmer with lid on for about 20 minutes. Take the lid off and continue to cook till a good chili consistency is reached. Check for seasonings and garnish with cilantro.

Turkey and Chicken Sausage Ragu

This is a yummy ragu with ground turkey and chicken sausage. Sausage already has yummy flavor and it is a great way to add deliciousness to any dish…

  • 2 tablespoons extra virgin olive oil
  • 1 pound ground dark meat turkey
  • 4 chicken sausage links, casings taken off and crumbled (I bought the roasted garlic variety)
  • 1 tablespoon fresh rosemary, chopped
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, chopped
  • 2 teaspoons salt
  • 3 cups homemade or store bought tomato sauce
  • Parmigiano Reggiano cheese, grated
  • 4 cups whole-wheat spaghetti, al dente

Heat a large saucepan with the olive oil. Add the turkey meat and cook on high heat while separating the meat with the back of a wooden spoon for 4 to 5 minutes. Add the crumbled sausage and continue to brown for another 4 to 5 minutes on medium heat. Add the rosemary, onion and garlic. Saute on medium heat for another 4 to 5 minutes. Add the tomato sauce and bring to a boil. Add salt and mix well. Simmer on low heat, covered with lid for about 45 minutes while stirring every 10 minutes or so. Take lid off and check for seasonings. Serve on top of spaghetti and garnish with grated cheese.

Turkey Keema with Cauliflower and Dill (Ground Turkey)

This is one of our favorite things to eat – ground meat and cauliflower.. I made this one with lots of dill. It gives the dish an amazing earthy flavor…

  • 3 tablespoons ghee or butter
  • 1 pound dark meat ground turkey
  • 1 medium yellow onion, chopped
  • 2 inch piece ginger, grated
  • 3 garlic cloves, grated
  • 1 cup full fat yogurt
  • 1 cauliflower head, cut into florets
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • ½ teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1 cup fresh dill, chopped
  • 1 cup fresh cilantro, chopped

Heat a heavy saucepan with the ghee/butter. Add the ground turkey and sauté on medium high heat while separating the meat with the back of a wooden spoon. Saute for 4 to 5 minutes till the meat is golden brown. Add the onion, ginger and garlic. Saute on medium heat for 2 to 3 minutes. Add the yogurt and sauté for another 2 to 3 minutes. Add the cauliflower, coriander, turmeric, cayenne pepper and salt. Mix well and add ½ cup each of the dill and cilantro. Mix well and lower heat to medium, cover with lid and cook for 20 minutes or till meat is cooked through and cauliflower is tender. Take the lid off and increase heat to medium high and sauté for 4 to 5 minutes. Check for seasonings and garnish with the remaining dill and cilantro.

Keema (Ground Meat) with Brussels Sprouts

Keema is kind of the Indian version of chili.. well, a loose interpretation of it- there are no beans in keema.. usually some veggie. I decided to pair, my favorite, Brussels sprouts. Why not, I thought… and it was delicious…

  • 2 tablespoons ghee or butter
  • 2 tablespoons extra light olive oil
  • 1 large yellow onion, chopped
  • 2 inches fresh ginger, grated
  • 1 pound ground turkey or any meat desired
  • 2 tablespoons cilantro stems, chopped
  • 2 tablespoons dill stems, chopped
  • ½ cup full fat yogurt
  • 2 teaspoons ground coriander
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 2 cups shredded Brussels sprouts
  • ½ cup cilantro, chopped
  • ¼ cup dill, chopped

Heat a heavy saucepan with ghee and oil. Add the onion and ginger and sauté on medium heat for 3 to 4 minutes. Add the ground meat and cook while separating with the back of a wooden spoon on medium heat. Saute for 6 to 7 minutes. Add the yogurt, coriander, cayenne pepper and salt. Saute for another 5 minutes. Add the sprouts, mix well and cook with lid on for 20 minutes. Take the lid off and cook for another 10 minutes, checking for seasonings. Garnish with cilantro and dill. Serve warm.

Cheesy Meatballs

As you may know I love making burgers and meatballs.. this recipe like yesterdays included ricotta cheese… very delicious!

  • 1 pound ground turkey
  • 1 medium shallot, chopped
  • 3 garlic cloves, chopped
  • ¼ cup ricotta cheese
  • ½ cup shredded cheese (I used a mixture of mozzarella and parmigiano)
  • 1 teaspoons salt
  • 1 egg, beaten
  • ½ cup panko crumbs soaked in ¼ cup milk
  • 4 cups marinara sauce

Transfer turkey, shallot, garlic, ricotta, shredded cheese, salt and egg into a medium bowl. Mix well and let it sit for 2 to 3 hours. Add the panko crumbs and mix well. In the meantime, add the tomato sauce to a medium saucepan and bring to a boil. Form the meatballs and add to the simmering tomato sauce. Cook the meatballs covered with a lid for about 20 minutes. Take the lid off and check for seasonings. Serve with whole wheat spaghetti.
