Halibut with Tomatoes & Olives

Another super healthy recipe! I made it with halibut as it is a nice, meaty fish but it can be substituted with another fish or shrimp or even scallops. It is simply marinated in smoked paprika- which gives anything super flavor without any calories. The fish is then browned briefly and cooked in a delicious mixture of tomatoes and olives.   • 2 to 3 halibut filets, 4 to 6 ounces each
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika

Sprinkle the fish filets with salt and smoked paprika.

  •  2 tablespoons extra virgin olive oil
  • 1 cup cherry tomatoes, chopped
  • 2 garlic cloves, minced
  • ½ cup olives, sliced (any kind you like)
  • 1 cup cilantro, chopped
  • ½ teaspoon sugar
  • 1 cup chicken broth
  • Juice of half a lemon

Heat a non-stick frying pan with the olive oil. Brown the fish filets briefly on both sides on high heat. Take them out and keep aside. Add cherry tomatoes, garlic and olives to the same pan. Saute on medium heat for 4 to 5 minutes. Add the chicken broth, lemon juice and sugar. Bring to a boil and simmer for 7 to 8 minutes. Add the cilantro and the fish. Cook the filets for another few minutes (depending on the thickness). Check for seasonings and serve.

Soy Honey Halibut

We love halibut in my house. I was in the mood for a glazed salmon but unfortunately no one likes it except me, so I decided to go with the favorite! I was in the mood for Asian flavors- so I combined some soy, honey and vinegar, etc and came up with a homemade teriyaki kind of sauce- perfect for serving fish to kids.

  • 1 pound halibut, cut into filets
  • ¼ cup low sodium tamari
  • 1 teaspoon Worcestershire
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 garlic cloves, grated

Add the ingredients to a small saucepan and bring to a boil. Simmer for 2 to 3 minutes until it thickens like syrup. Keep aside.

  • Drizzle of extra virgin olive oil
  • Salt
  • Pepper

Preheat oven to broil.

Place the filets on a lined cookie sheet. Drizzle with oil, salt and pepper. Broil for about 5 minutes. Glaze the filets with the tamari mixture and finish broiling till the fish is done. Finish off with some extra sauce and serve.

This is a very healthy meal- perfect for the New year, more fish eating plan. I had halibut filets in my freezer which I decided to thaw and cook for dinner.

I had zucchini and spinach in the fridge and was not sure what to do with them. I am trying to cut back on the starch so I decided to do just a few potatoes on the side- to satisfy my starchy part of the appetite.

I diced the zucchini and sauteed it on a high heat. Once the pieces were golden brown, I added the spinach. The garlic and salt made the hash really tasty.

This is such a simple meal- didn’t take very long and it was very satisfying. I broiled the halibut simply with salt, pepper and olive oil- thats it- and it was delicious. Any fish can be used for this meal- use your favorite one or which ever one is on sale that day.

I gave my daughter and her friend the fish and zucchini hash. They ate it- well, they promised me they would earlier that evening when they cajoled me into having dinner together. That is also when I told them what I was serving for dinner- and they agreed very quickly… Well, once I placed the dinner in front of them- the look on their faces was priceless. Sia’s friend proceeded to tell me how she doesn’t like spinach. I looked at her very nicely and informed her how she promised me she will eat whatever I give her as long as she could join us for dinner.

They both ate everything, quietly.. I couldn’t help laughing (to myself). It is so nice have such a good friend and so sweet to see how the two girls wanted to spend time together regardless of what they had to eat to do so. It is all about good friends and good food…

  • 10 oz bag of baby spinach
  • 2 small zucchini, chopped in small pieces
  • 1 teaspoon garlic, minced
  • 2 tablespoons olive oil
  • Salt
  • Pepper

In a non-stick frying pan, heat the olive oil and add the zucchini pieces. Saute on high heat till golden brown- about 5-6 minutes. Add salt, garlic and baby spinach. Saute on high till the spinach wilts. Taste for seasonings. Serve with the fish.

  • 3-4 fillets Alaskan halibut (4-5 ounces)
  • 1 tablespoon olive oil
  • Salt
  • Pepper

Drizzle the oil with salt and pepper all over the fish pieces. Broil in the oven for 3-4 minutes on each side or till the fish is done.

  • 3-4 potatoes, sliced into ¼ inch
  • 1 tablespoon olive oil
  • Salt
  • Pepper

Add the olive oil, salt and pepper to the potato slices and broil till golden brown and soft- about 15 minutes.

Lime Chili Halibut

  • 2 Halibut fillets
  • 1 Serrano chili-chopped (take out the seeds if too spicy)
  • ½ teaspoon ancho chili powder
  • 1 lime juiced
  • Salt
  • Pepper
  • 1 tablespoon olive oil

Marinate the fish fillets in mixture of chopped Serrano chili, ancho chili powder, lime juice, salt and pepper for an hour. Heat one tablespoon olive oil in a large non stick skillet.
Cook the fish 4 to 5 minutes on each side.
