Super Easy Tomato Salsa

Super Easy Tomato Salsa

This salsa has a bit of a kick to it. If you are not inclined to eat spicy food, go ahead and eliminate the chilies. I had these yummy looking, red, Thai chilies in my fridge that were calling my name. Foot ball food screams spicy, flavorful foods and this one delivers. It is perfect on the delicious tacos as well as accompanied by some tortilla chips…either way, it is a winner!

  • 1 cup cherry tomatoes, chopped
  • 1 medium shallot, chopped
  • 2 serrano chilies, chopped
  • ½ cup cilantro, chopped
  • 2 garlic cloves, grated
  • Juice of one lime
  • 2 teaspoons salt
  • 1 tablespoons extra virgin olive oil

Transfer the tomatoes, shallot, chilies, cilantro, garlic, lime juice, salt and olive oil to a medium bowl. Mix well and let sit for an hour before serving.

Minced Chicken with Black Bean Sauce

Minced Chicken with Black Bean Sauce

  • 1 pound minced chicken (thighs)
  • 1 tablespoons tamari
  • 2 teaspoons rice vinegar
  • 2 teaspoons corn starch

Add the chicken to a medium bowl. Dissolve the corn starch in the rice vinegar and tamari. Add the corn starch mixture, mix well and marinate for 2 to 3 hours. Keep refrigerated.

Sauce

  • ¼ cup black bean sauce
  • 2 tablespoons sweet chili sauce

Mix the black bean and sweet chili sauce. Keep aside.

  • 2 to 3 bunches broccolini, cut the tops off and chop; cut the green stalks and chop, keep aside
  • 2 tablespoons extra light olive oil
  • 3 garlic cloves, grated
  • 1 inch ginger, grated

Heat a wok like saucepan with the olive oil. Add the broccolini stalks, ginger and garlic. Saute on high heat for 2 to 3 minutes. Add the minced chicken and cook while separating on high heat. Add the broccolini greens and mix well. Add the black bean sauce and mix well. Bring to a boil and cook for another 2 to 3 minutes. Check for seasonings and serve with rice or noodles.

Pasta with Turkey and Spinach

This is a healthy one! My daughter’s friend was coming over on a Sunday and was going to stay for lunch. Kids love pasta- we all know that. It is always hard to come up with new and interesting dishes to serve them.

I had ground turkey in the fridge and decided to make a quick meat sauce. I also had a big container of freshly made marinara sauce. Instead of serving vegetables on the side, I added it into the sauce. I love making one pot meals- especially for kids. I have also noticed they tend to eat the veggies if they are incorporated into the dish.

I sauteed an onion and garlic with the meat- added the tomato sauce and spinach. That was it- so simple and delicious.

  • 1 pound ground turkey meat
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon rosemary, chopped
  • 1 small yellow onion, minced
  • 2 cups chopped frozen spinach, thawed
  • 2 cups marinara sauce
  • Salt

Heat a saucepan with the olive oil. Add the turkey meat and separate meat with a wooden spoon. Cook on medium high heat for 2 to 3 minutes. Add the garlic and onion and sauté for 4 to 5 minutes. Add the spinach and sauté for another 4 to 5 minutes. Add the two cups marinara sauce and mix well. Add salt and check for seasonings. Cook, covered for 10 minutes. Serve with pasta.

Nectarine and Apricot Salsa

Apricot and Nectarine Salsa

  • 2 small apricots, chopped
  • 1 medium nectarine, chopped
  • 2 green onions, chopped
  • 2 garlic cloves, grated
  • Juice of one large lime
  • ½ cup cilantro, chopped
  • Salt
  • 2 teaspoons agave
  • 2 teaspoons extra virgin olive oil

Add the apricots, nectarine, green onions, garlic cloves, lime juice, cilantro, salt, agave and olive oil into a medium bowl. Mix well and let sit for at least half an hour before serving.

Orange and Beet Salad

Orange and Beet Salad I finish this week off with another delicious and beautiful looking salad. I love using beets in salads, especially the roasted variety. There are times when I am simply too lazy to roast the beets.. or I just don’t have the time. I buy the already cooked variety from Trader Joes. They are delicious as well.. but nothing like roasting your own.

For this salad I roasted a few plump beets. I wrapped each one in aluminum foil and placed them in the oven. Remember to place them on a cookies sheet first to avoid any leakage. Beet juice can be impossible to get off surfaces. I then segmented some oranges- which has been my ingredient of choice ever since they have come in season. I have been putting them in everything I can.

I placed the colorful beets and oranges on some mixed greens and made a delicious salad with orange juice and balsamic vinegar.

The salad was so beautiful looking that I didn’t want to disturb it and eat it. Once I did, I realized how delicious it was…

Jamie Oliver’s Food Revolution

Jamie OliverOur choices make an impact on our health. It is a very simple concept but most of us don’t make that connection… somehow we don’t pay attention to what we are putting in our mouths.. well, we should. I am glad Jamie sat some kids together and discussed calories and lack of exercise and what it does to our bodies.

As parents it is our responsibility to teach our kids how to cook and eat healthy foods. We need to show them how each meal needs to be balanced with protein and healthy carbs including fruits and vegetables. For those of us who work in addition to taking care of our families- we need to organize ourselves and plan meals for the week on the weekend. I realize people are busy but it is important to break the junk food cycle and teach our kids how to live healthy and make sensible choices for themselves.

Thanks to Jamie Oliver, some people will make this change and start to live healthier lives….
