Mango and Green Onion Salsa

Salsa is a perfect accompaniment for any summer meal…

  • 2 to 3 ripe mangos, peeled and chopped
  • 3 green onions, chopped
  • ½ cup cilantro, chopped
  • Juice of one large lemon
  • 1 to 2 teaspoons salt
  • 2 teaspoons extra virgin olive oil

Transfer the mangos, green onions, cilantro, lemon juice, salt and olive oil to a medium bowl. Mix well and serve.

Haryali Kebab with Mango Salsa

 

  • 1 pound chicken, boneless and skinless, cut into 1 inch pieces

Marinade

  • ¾ cup Greek yogurt
  • 1 cup cilantro, chopped
  • ½ cup mint, chopped
  • 2 garlic cloves, chopped
  • 1 inch ginger, chopped
  • 2 teaspoons salt
  • 2 teaspoons ground coriander

Transfer the yogurt, cilantro, mint, garlic, ginger, salt and coriander to a blender. Blend till smooth and marinate the chicken in the marinade overnight or at least 2 to 3 hours. Place on skewers and cook under a broiler or on the grill.

Mango Salsa

  • 1 large or 2 medium mangos, diced
  • Juice of one lime
  • 2 green onions, chopped
  • 1 serrano chili, chopped
  • ½ cup cilantro, chopped
  • 1 to 2 teaspoons salt

Mix all the ingredients and garnish the chicken with the mango salsa and serve.

Mango and Red Pepper Salsa

It is summer and time for grilling… I am always looking for delicious sauces and salads to pair with my grilled meats. Here is a delicious, easy mango salsa…perfect with chicken, shrimp or beef… or just with some tortilla chips..

  • 1 large or two medium mangos, peeled and chopped
  • 3 green onions, chopped
  • 1 cup cherry tomatoes, chopped
  • ½ large red pepper, chopped
  • ½ cup cilantro, chopped
  • Juice of 1 to 2 lemons
  • 1 teaspoon honey
  • 1 teaspoon chipotle pepper
  • 2 teaspoons salt

Transfer all the ingredients in a serving bowl. Mix well and serve.

4th Of July Recipes: Thai Style Mango Salsa

Thai Style Mango Salsa1 It is time to talk about fourth of July recipes. I can’t believe it is that time already. It feels like yesterday when we were complaining about the cold and wet weather and couldn’t wait for summer to begin. Well here it is and it is time to plan a delicious yet easy meal for your family and loved ones.

I came upon a Thai theme for this holiday. I find it a lot easier  to come up with recipes if I have a central theme established. For this theme, mangoes came to mind. Usually for an appetizer, I like to do a salsa and chips. It is easy and delicious and not too filling. It also goes well with beer, wine and any other mixed drinks you may be serving.

I decided to make a Thai style salsa- what does that mean? Well,  you essentially add Thai ingredients including fish sauce, sweet chili sauce, cilantro, lemon juice and you have a Thai style mango salsa! I served it with rice chips I purchased from Trader Joes.

Mango Relish

mango-salsaMy daughter loves mangoes like a normal kid likes candy.  A few weeks ago I noticed the yellow altaulfo mangoes that we love so much at Whole Foods.  I bought four of them since they were a little pricey but I had to get them for my daughter.  She was ecstatic to see them in the kitchen and wanted one right away.  The four mangoes were gone in two days!  I found more in Costco-they were selling a pack of 6 and were slightly cheaper as well- so I bought those also!  I happen to visit an Indian grocery store in Edison, and what do you know- they had a whole case- well I bought it as well.  You can imagine how many mangoes we had in the house now!  My daughter was eating two a day but I still had to come up with ideas to consume them- so when I made the Jerk chicken, I decided to make a mango relish to go with it.  I had also bought a bottle of fresh mango pineapple juice at Whole Foods- it is the most glorious juice you will ever have.  I am not a big juice person- but this is fabulous!  I decided to use it in the relish but orange juice can be substituted.  The relish can be used with fish, pork or with nacho chips! We ate it with the chicken and it was fabulous!  My daughter realized we were now running low on the mangoes- so guess what I did- yup, I bought another case!  I just made a strawberry mango topping for ice creams and cakes- recipe to come soon!

  • 3 ripe mangoes, peeled and diced
  • 1/3 cup finely chopped green onions
  • ½ cup cilantro, chopped
  • 2 lemons, juiced
  • ¼ cup fresh mango and pineapple juice (orange juice will do as well)
  • 1 teaspoon honey
  • Salt and pepper to taste

Combine all ingredients in a medium bowl and let sit 30 minutes at room temperature.
