Cabbage and Pear Slaw

This is a yummy slaw that complemented the chicken tacos really well. The pears are delicious with the cabbage…If you can’t find pears any more, pineapple will be a delicious addition…

  • ½ cup plain kefir or buttermilk
  • 2 tablespoons mayonnaise
  • Juice of one lemon
  • 1 teaspoon honey
  • ½ cup cilantro, chopped
  • 1 to 2 teaspoons salt
  • ½ small cabbage, shredded
  • 1 pear, julienned

Mix the kefir, mayonnaise, lemon juice, honey, cilantro and salt in a small bowl. Transfer the shredded cabbage and pear in a serving bowl. Add the kefir mixture and mix well. Check for seasonings and let it sit for half an hour before serving.

Healthy Tartare Sauce

This is a great sauce for the fish and chips from yesterday but this is a great accompaniment with any meat or vegetables…

  • ½ cup low fat Greek yogurt
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • Juice of half a lemon
  • 2 tablespoons pickled jalapenos, chopped
  • 1/3 cup cilantro, chopped
  • 1 teaspoon salt
  • Pepper

Add all the ingredients to a small bowl and mix well. Let it sit for an hour before serving.

Healthy Cole Slaw

I served this delicious concoction with the yummy fish!

  • 2 cups shredded carrots and broccoli stalk (Trader Joes) or regular shredded green cabbage
  • ½ cup cilantro, chopped
  • ½ cup green onions, chopped
  • 2 tablespoons mayonnaise
  • ¼ cup Greek yogurt
  • Juice of one lemon
  • Salt to taste

Transfer the shredded vegetables, cilantro and green onions in a serving bowl. Mix the mayonnaise, yogurt, lemon juice and salt together and add to the vegetables. Mix well and let sit for a hour before serving.

Smoked Paprika Fish Fry

My daughter loves fried fish- well, who doesn’t??? She loves ordering it whenever we go to London or Ireland…This one is a bit more flavorful than the ones in the restaurant…

  • 2 pounds of your favorite fish, cut into 3- inch filets
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground coriander
  • 2 teaspoons salt
  • 1 egg white, beaten

Marinate the fish filets with the mixture of smoked paprika, ground coriander, salt and the beaten egg white in the fridge for 2 to 3 hours. Take out half an hour before frying.

  • 1 cup all purpose flour
  • ¼ cup cornmeal
  • 1 teaspoon salt

Add oil to a frying pan, about an inch deep. Heat till 350 degrees F.

Mix the flours and salt together in a flat palate. Dredge the fish filets in the flour mixture and pan fry the fish till done. Serve with homemade oven fries.

Tartar Sauce

  • 2 tablespoons mayonnaise
  • ¼ cup Greek yogurt
  • 1 teaspoon sweet relish
  • 2 tablespoons dill, chopped
  • Juice of half a lemon
  • 1 teaspoon salt

Mix all the ingredients together and serve with the fish.

 

 

Mexican Flavored Cheeseburgers

This is yummy and very appropriate for this week of cinch de mayo…

  • 1 cubanelle pepper, sliced in half and seeded
  • 1 poblano pepper, sliced in half and seeded
  • 3 to 4 garlic cloves with skins on
  • 3 to 4 green onions, cut into quarters
  • Drizzle of olive oil
  • Salt
  • ½ cup cilantro, chopped

Place the peppers, garlic and green onions on a lined cookie sheet. Drizzle olive oil and sprinkle salt. Roast in oven for 15 to 20 minutes on 350 degrees F. Add the roasted vegetables in a blender with the cilantro. Blend till smooth. Keep aside.

  • 1 pound grass fed ground beef
  • 2 teaspoons salt
  • 1 egg, beaten

Mix the ground beef, salt and egg with the green mixture. Divide the mixture into 6 patties. Keep aside.

  • 6 buns
  • 6 slices of cheddar cheese
  • 1 large or 2 medium tomatoes, sliced

Mayonnaise

  • 2 tablespoons mayonnaise
  • ¼ cup non-fat Greek yogurt
  • 1 teaspoon smoked paprika
  • Juice of half a lime
  • 1 teaspoon salt

Mix the mayonnaise, yogurt, smoked paprika, lime juice and salt in a small bowl and keep aside.

Cook the patties and assemble the burgers with the mayonnaise and tomato slices. Serve with oven fries.

Steak Sandwich with Caramelized Onions and Blue Cheese Mayonnaise

  • 2 to 3 filet mignon steaks (depending on the number of sandwiches)
  • Drizzle of olive oil
  • Salt
  • Pepper

Heat a cast iron pan until very hot and cook the steaks on medium high heat till the steaks reach the desired doneness. Keep aside, covered with aluminum foil. After 15 minutes, slice the filets.

  • 1 large onion, slice thin
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar

Heat a frying pan with the butter and oil on medium heat. Add the sliced onion and top with salt and sugar. Mix well and continue to cook on medium heat, stirring every few minutes. Cook for 15 to 20 minutes, till the onions are a golden brown without burning. Keep aside.

Blue Cheese Mayonnaise

  • ¼ cup mayonnaise
  • ¼ cup full fat plain yogurt
  • ½ cup blue cheese, crumbled
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley, chopped

 

  • 4 to 5 Ciabatta rolls, sliced and toasted
  • Baby arugula leaves

Assemble the sandwiches by placing some arugula on one side of the roll. Place some steak slices on top. Top with some caramelized onions. Add some mayonnaise on the other side of the roll and serve.

Cilantro Cole Slaw

I served this healthy, delicious cole slaw with the fried fish. It was an amazing addition to an already yummy dish…

  • 2 cups broccoli slaw (Trader Joes has it)
  • ½ cup cilantro, chopped
  • ½ cup green onions, chopped
  • ¼ cup mayonnaise
  • ¼ cup Greek Yogurt
  • ¼ cup cilantro chutney
  • 1/2 cup dried cranberries
  • Salt

Mix the mayo, yogurt and chutney in a small bowl. Transfer the slaw, cilantro, cranberries and green onions to a serving bowl. Add the yogurt mixture and mix well. Add salt if needed. Mix well and serve.

Cilantro Chutney

  • 3 cups cilantro, washed and chopped roughly
  • 4 green onions
  • 2 limes, juiced
  • 1½ teaspoons salt
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • ¼ cup water

 

Add all the ingredients to a blender.  Blend till everything turns into a smooth sauce.
