Scalloped Potatoes with Roasted Poblano Sauce

I am very proud of this recipe. I combined a bunch of peppers, garlic and onion and roasted them till they became soft and deliciously nutty. I then blended the veggies with cream and milk- I basically made a cream sauce to be used to make scalloped potatoes. I bought a reasonably priced mandolin. Usually they are quite expensive and not worth the money. They are handy to have around- as they make slicing the potatoes a cinch. I was done in no time. The whole dish took me hardly any time to make.

I would recommend making the cream sauce ahead of time if you are planning a big Thanksgiving dinner. You could even freeze the sauce and take it out a day ahead and assemble the potatoes the morning of and then bake them right before eating. They are simply delicious…

  • 1 poblano pepper
  • 1 anaheim pepper
  • 1 head of garlic with the top sliced off with a drizzle of olive oil and wrapped in aluminum foil
  • ½ medium yellow onion
  • 1 tablespoon olive oil
  • ¼ cup cream
  • ¼ cup milk
  • Salt

Preheat oven to 400 degrees F.

Place the peppers, wrapped garlic and onion onto a lined cookie sheet. Drizzle the peppers and onion with the oil and massage with fingers. Roast in oven for 30 to 45 minutes, until the peppers are charred on the outside. Let cool. Take the skin off the peppers and squeeze the garlic out of the skins.
Add the roasted vegetables into a blender with cream and milk. Blend till smooth and add salt. Keep aside. This can be made two days in advance.

  • 2 pounds red skinned potatoes, sliced thin about 1/8 inch
  • ½ cup queso fresco, shredded

Divide the potato slices into three batches. Add the first to the bottom of an ovenproof dish (9X9). Spread a quarter cup of green sauce. Repeat till you have the third and last bit of potatoes. Pour all of the sauce covering all the potatoes. Cover with aluminum foil and bake for 45 minutes. Take the foil off and add the cheese. Bake for another 10 to 15 minutes or till the cheese is golden brown.

Roasted Garlic and Cilantro Mashed Potatoes

This was a big hit! I added delicious roasted garlic, cilantro and green onions. I blended the aromatics with half and half and milk. I then added this delicious green sauce to the cooked potatoes. To make it even yummier, I added some grated cheese inside and on top. Everyone loved it!

1 large head of garlic, top trimmed, wrapped in aluminum foil, drizzled with olive oil

Roast the garlic in a 400 degrees F oven for 30 to 40 minutes. Let it cool and squeeze the soft garlic out and keep aside.

  • 1 cup cilantro, chopped
  • 4 to 5 green onions, chopped
  • ¾ cup half and half
  • ¼ cup extra virgin olive oil
  • 1 cup milk
  • 2 teaspoons salt
  • Soft roasted garlic

Place the cilantro, green onions, half and half, olive oil, milk, salt and garlic in a blender. Blend till smooth.

Preheat oven to 350 degrees F.

  • 3 pounds baby yellow potatoes, peeled and cut in half
  • 1 cup plus ½ cup shredded pepper cheese

Cover with water and bring to a boil. Simmer till soft. Drain and put through a food mill or potato ricer. Transfer the mashed potatoes back to the saucepan. Add the cilantro sauce and mix well. Add one cup shredded cheese and mix well. Transfer to a serving bowl and top with ½ cup cheese. Bake in oven covered for 30 minutes, take the aluminum foil off and bake for another 15 minutes or till the top is golden brown. Serve hot.

Caramelized Onion and Thyme Burgers with Gorgonzola Sauce

Caramelized Oniona Burger

  • 2 pounds ground grass fed beef
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, chopped
  • 2 tablespoons fresh thyme, chopped
  • ½ teaspoon salt

Heat a small nonstick frying pan with the oil and butter. Add the onion and sauté on medium heat. Cook for about 15 minutes till the onion is soft and translucent. Add the thyme and salt. Cook for another 5 minutes. Take off heat and keep aside.

  • 1 small garlic head with top cut off
  • Drizzle of olive oil

Preheat oven to 350 degrees F.

Place the garlic head onto a piece of aluminum foil. Drizzle with olive oil. Wrap securely and roast in oven for 30 minutes. Take out of oven and let cool.

Add the caramelized onion and roasted garlic into the ground beef. Add salt to taste and form into 5 to 7 patties.

Gorgonzola Cheese

  • ¼ cup non-fat Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh thyme, chopped
  • ¼ cup Gorgonzola cheese, crumbled
  • 1 teaspoon salt

Mix the ingredients in a small bowl and keep aside. Grill the patties as desired and form the burgers topped with the Gorgonzola sauce.

Low-Fat Hummus with Roasted Jalapenos

Hummus

I just made this and decided to post it right away. Usually I make a dish, write the recipe and schedule the post. It is kind of a long process. Sometimes, I like the dish so much that I decide to post it right way.

As most of you know, I have been eating GG crackers for breakfast and snack on a daily basis. For those who have tried these crackers- you know how dry they are. You definitely need something on top to make them delectable.

The other day, I was listening to Joan Hamburg on WOR and she was interviewing some dietician who spoke about a low fat hummus she made with yogurt. A light bulb turned on in my head as I heard the interview. I had been spreading a bit of it everyday on my crackers and thought about the fat in a usual tub of hummus. I decided to make my own.

I experimented last week with one batch- it was good but not post worthy. I made the second batch today and it is super delicious.

I roasted some jalapenos (took the seeds out first) and garlic. I added non-fat Greek yogurt, lemon juice and a bit of tahini and olive oil to get the flavor but not too much of the fat. The result was really good. I had some with my crackers today and it was delicious and healthy since I am getting more protein than usual as the yogurt as tons of it.

Definitely make this and keep in your fridge- although it won’t last for too long….

Rib Eye Steak with Feta Sauce Served with Roasted Asparagus and Potatoes

Ribeye Steak with Feta6 This is a delicious steak dinner. We don’t eat out as much as we used to. Partly because of the economy and mostly because of this blog and all the cooking I end up doing at home.

Also after watching movies like ‘Food Inc‘, I am very leery about eating out. I can’t get the chickens and the cows out of my head. I am now very careful about where I buy and eat beef.

Anyway, I found some really nice looking grass fed rib eye steaks. I love eating a good steak but rarely order it at a restaurant- I don’t want to spend a fortune outside when I can make them at home- and they are fabulous.

I usually make oven fries with the steak- I love potatoes and this is my favorite way of making them. I had very nice looking asparagus- I served them simply sauteed with olive oil, salt and pepper.

Now, for the steaks- again, very simple- olive oil, salt and pepper but I wanted to serve them with a sauce. I love the usual gorgonzola sauce which is made with lots of yummy gorgonzola and cream. It is very delicious but loaded with calories. I had feta in my fridge and decided to use that and make a sauce. It is naturally low in fat so I paired it with some roasted garlic and low fat sour cream. The sauce was delicious! We did not miss the gorgonzola sauce at all!

My daughter loved the meal as well minus the potatoes and the sauce. She loves asparagus and steak. We were all happy and it was a great Sunday meal.

Next time you want to impress someone- make the rib eye steaks with the feta sauce.
