Quick Brown Fried Rice

  • 2 cups cooked & cooled brown rice, store bought or made at home
  • 2 tablespoons extra light olive oil
  • ½ teaspoon toasted sesame seed oil
  • 1 tablespoon ginger, grated
  • 1 tablespoon garlic, grated
  • 2 cups shredded carrots and broccoli stalks (I buy it packaged from Trader Joes)
  • 2 eggs, beaten
  • 1 to 2 teaspoons dark soy sauce (regular soy sauce can be used, you will need to use more)
  • Salt to taste
  • ½ cup cilantro, chopped
  • ½ cup green onions, chopped

Heat a wok like pan with the oils. Add the ginger and garlic and sauté on medium heat for 2 to 3 minutes. Add the shredded vegetables and sauté for 3 to 4 minutes. Add the beaten eggs and mix well with the spatula. Add the cooked rice and mix well and stir fry for 3 to 4 minutes on high heat. Add the soy sauce and continue to stir fry. Check for seasonings and add salt if necessary. Garnish with cilantro and green onions.

 

Healthy Cole Slaw

I served this delicious concoction with the yummy fish!

  • 2 cups shredded carrots and broccoli stalk (Trader Joes) or regular shredded green cabbage
  • ½ cup cilantro, chopped
  • ½ cup green onions, chopped
  • 2 tablespoons mayonnaise
  • ¼ cup Greek yogurt
  • Juice of one lemon
  • Salt to taste

Transfer the shredded vegetables, cilantro and green onions in a serving bowl. Mix the mayonnaise, yogurt, lemon juice and salt together and add to the vegetables. Mix well and let sit for a hour before serving.

Yaki Udon with Chicken and Tofu

My daughter loves to eat yaki udon whenever we go to a Japanese restaurant, she absolutely loves it! I guess what is there not to love about a yummy, steaming bowl of noodles… especially udon noodles. I love how thick and delicious they are! Now that we have the Asian store nearby, I have been buying fresh noodles from there. I got a pack of fresh udon noodles from there. The key to delicious yaki udon are just a few ingredients- mirin, a sweet cooking wine and dashi granules. They give Japanese dishes that particular flavor we all taste in Japanese cuisine.. the rest of the steps and ingredients are easy…

  • 2 tablespoons peanut oil
  • 1 large shallot, sliced
  • 1 large chicken breast, sliced thin, sprinkled with salt
  • ½ cup shredded carrots
  • ½ cup snow peas, sliced
  • 1 pack firm tofu, cut into cubes
  • 1 16 ounces pack of fresh Udon noodles, cooked according to package directions
  • 2 green onions, sliced

Sauce

  • 1 ½ teaspoons dashi powder
  • 3 tablespoons mirin
  • 2 tablespoons soy sauce
  • 1 cup chicken broth
  • 1 teaspoon corn starch

Mix the dashi powder, mirin, soy sauce, chicken broth and corn starch in a small bowl and keep aside.

Heat a wok like pan with the oil and add the shallots. Saute on high heat for a minute. Add the chicken breast and sauté on high heat till golden brown, about 3 to 4 minutes. Take out of the pan leaving the shallots in there. Add the carrots and snow peas and sauté for 2 to 3 minutes. Add the tofu and the cooked noodles. Saute for a minute and add the chicken back and the sauce. Bring to a boil and stir well and cook till chicken slices are cooked through. Taste for seasonings and garnish with green onions.

Mexican Stew with Roasted Corn

Mexican Stew with Corn I had a cup of leftover poblano raisin sauce from the weekend. I decided to make my favorite kind of meal- a one pot meal. I bought some boneless skinless chicken thighs. That is all I needed since I took the rest out of my fridge and pantry.

I sauteed some onion and carrots with olive oil. I added the sauce, chicken and chicken broth. I let the chicken cook for a while.. until it was ready to fall apart. Considering it is a stew, it took me all of 45 minutes to make. The trick to really good flavor was of course the yummy sauce.. but I also sauteed the chicken pieces in some hot olive oil before I cooked the onions and the garlic. The browning of the meat gives the stew a delicious, nutty flavor and the chicken tastes really good also. The roasted corn complemented the dish really well. I always have a few packs in my freezer was such occasions. A generous helping of fresh cilantro completed the dish. I served it with a big salad and a dollop of guacamole… delish!

4th Of July Recipes- Cole Slaw with Yogurt and Tamarind Vinaigrette

Cole Slaw with Yogurt and Tamarind2 I am all for making things from scratch but I do like to use all the conveniences I can find at the store. For this recipe I bought packaged, shredded cabbage, carrots and broccoli slaw. It saved me a ton of time and made everything a lot easier.

To complete a well-balanced menu, I was going to make a coleslaw dish with the Thai style burgers and potato salad. The recent Bon Appetit issue had a whole article on tamarind and it’s virtues. I am quite familiar with tamarind as I use it for all different things including using it in drinks, dressings and as a condiment.

They talked about pairing yogurt with tamarind concentrate to make a delicious, tangy dressing. I added my own twist by adding roasted cumin to the creamy dressing which gave the dish a nice nutty flavor. Overall, the dish went well with the burger and the potato salad.

Fennel Carrot & Beet Salad with Orange Dressing

Fennel Carrot and Beet Salad This is a delicious salad, inspired by Martha Stewart. I watched her during the holidays and this was a salad she made with roast pork.. but I think it would be great with a yummy pasta dish. It is especially very nice in the winter as it includes beets, carrots and fennel. All the veggies are grated or sliced. The mixture of all the colors is beautiful.

I made it easy and bought shredded carrots. I peeled the beets and grated them using a box grater. I used my trustee mandolin to slice the fennel. One could just use a sharp knife to slice the fennel thin as well.

The great thing about this salad is that one can make it in advance. The flavors and colors meld together and taste delicious.

I made an orange dressing with fresh orange juice, agave, Dijon mustard and white wine vinegar- very simple and yet very flavorful!

The salad was delicious and full of crunch!

  • 2 fennel bulbs, trimmed and peeled and sliced thin
  • 1 cup shredded carrots
  • 2 medium beets, grated

Place all the grated and sliced vegetables into a salad bowl. Mix well and keep aside.

  • ½ cup freshly squeezed orange juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 3 teaspoons agave
  • 4 to 6 tablespoons extra virgin olive oil (depends how tart you like your dressing)
  • Salt
  • Pepper

Place the orange juice, vinegar, mustard, agave, oil, salt and pepper in a small bowl. Place a lid and shake for 30 seconds or till the dressing is emulsified.
Dress the salad half an hour before serving. Check for seasonings and serve.

Chicken Red Curry with Green Beans

Chicken Red Curry with Green Beans I think I will do Asian dishes this week. Chinese New Year just passed. We love going into Chinatown to eat all the yummy food, especially during New year. Even our favorite local Chinese restaurant had some amazing dishes this year.

This particular dish is a fusion of Chinese and Thai cuisines. I used the prepared red curry paste and added coconut milk. I used the delicious, long green beans I got from a local Asian market. Overall, the dish was a tad bit spicy for my daughter, but she ate it, while sipping lots of milk.

I served the dish with a lime coconut jasmine rice- it was absolutely delicious.
