Steak and Mushroom Tacos

Another delicious summer recipe…

  • 1 pound skirt steak
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Mix the salt, smoked paprika and garlic powder together. Sprinkle all over the steak and marinate for 2 to 3 hours.

  • 2 tablespoons extra virgin olive oil plus more
  • 2 cup shitake mushrooms, cleaned and sliced thin
  • 1 medium yellow onion, sliced
  • 2 garlic cloves, sliced
  • ½ cup orange juice
  • 2 teaspoons chipotle in adobo sauce
  • Salt

Heat a wide frying pan with the olive oil. Brown the steak on both sides on high heat. Keep aside. Cut into bit sized pieces. Add the mushrooms and add more oil if needed. Saute on medium high heat for a minute. Add the onion and garlic. Saute for 3 to 4 minutes on medium high heat, stirring constantly. Deglaze with orange juice and scrape the bottom of the pan. Add the adobo sauce. Mix well. Add the steak pieces and heat through. Serve on top of corn tortillas.

Grilled Skirt Steak

 

  • 1 to 2 pound skirt steak

Marinade

  • 4 garlic cloves
  • 2 teaspoons ground cumin
  • 2 teaspoons salt
  • 2 teaspoons smoked paprika
  • ½ cup cilantro, chopped
  • Juice of one lime
  • 1 tablespoon extra virgin olive oil

Add the garlic, cumin, salt and smoked paprika into a mortar and pestle. Pound and crush the garlic and spices. Add the cilantro and continue to pound smooth. Add the lime juice and olive oil. Mix well and marinate the steak in a zip lock bag for 2 to 3 hours.

Grill the steak to desired doneness. Let it rest for 15 minutes before slicing. Serve with jicama salsa and guacamole.

Yaki Soba with Beef and Chinese Broccoli

Can’t get enough of noodles!!! Yum, yum… we all love them and I love going to our local Asian grocery store to buy fresh noodles…

  • 3 tablespoons tamari
  • 3 tablespoons mirin
  • 3 tablespoons oyster sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 tablespoon sugar
  • 1 pound skirt steak, sliced against the grain into thin slices
  • 2 tablespoons corn starch
  • 1 teaspoon sesame oil
  • 3 tablespoons peanut oil plus more
  • 1 orange or red pepper, sliced
  • 1 medium yellow onion, sliced
  • 1 bunch Chinese broccoli, chopped
  • 1 pound yaki soba fresh noodles, cooked according to package directions

Mix the tamari, mirin, oyster sauce, Worcestershire sauce, ketchup and sugar in a bowl and mix well.

Transfer the beef slices to a mixing bowl. Add 3 tablespoons of the sauce, corn starch and sesame oil to the beef. Mix well and marinate for 2 to 3 hours.

Heat a wok like pan with the peanut oil. Add the marinated beef strips and sauté on high heat for 2 to 3 minutes. Take out of pan and add more oil if needed. Reheat the pan and add the pepper and onion. Saute for another 2 to 3 minutes and add the Chinese broccoli and sauté for 2 to 3 minutes. Add the noodles and the rest of the marinade. Mix well and check for seasonings and serve.

 

 

 

Lime Ancho Grilled Skirt Steak

This is a yummy summer recipe…

  • 2 to 3 pound piece of skirt steak, cut into smaller pieces
  • ¼ cup orange juice
  • Juice of 2 limes
  • ¼ cup extra virgin olive oil
  • 4 garlic cloves, grated
  • 2 teaspoons ancho chili powder
  • 2 teaspoons salt
  • ½ cup cilantro, chopped
  • Lemon wedges

Mix the orange juice, lime juice, oil, garlic, ancho powder and salt in a small bowl. Transfer the steak to a ziplock bag. Pour the marinade into the bag and marinate for at least 2 hours, ideally overnight. Take out of fridge half an hour before grilling.

Grill steak to about medium. Transfer steak to large plate, and allow to rest for 10 minutes. Cut against the grain garnish with cilantro and lemon wedges.

  • Bag of small tortillas
  • 2 avocados, diced
  • Salt
  • Juice of one lime

Heat the tortillas and wrap in aluminum foil.

Transfer the diced avocados in a medium bowl and sprinkle with salt and drizzle with lime juice.

Serve the cut up steak with the warmed tortillas and diced avocados.

Skirt Steak with Cilantro Chimichurri Sauce

Here is another recipe for delicious skirt steak. Any cut can be used- so go ahead and buy the meat of your choice and use this recipe…

  • 1 to 2 pounds skirt steak, cut into 3 inch pieces

Spice Rub

  • 2 teaspoons ground coriander
  • 2 teaspoons smoked paprika
  • 2 teaspoons salt

Mix the spices in a small bowl. Rub the steak pieces generously on both sides and marinate in the fridge for 4 to 5 hours.

Grill the steak on grill on a grill pan on stove. Cook to desired doneness. Let the steak rest for 10 minutes. Cut the steak pieces into smaller pieces by cutting against the grain. Serve with the chimichurri sauce.

Chimichurri Sauce

  • 1 cup cilantro, chopped
  • 1 cup parsley, chopped
  • 4 garlic cloves, chopped
  • Juice of one lemon
  • Juice of one large navel orange
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika powder
  • ½ cup extra virgin olive oil

Add the cilantro, parsley, garlic, lemon juice, orange juice, salt and smoked paprika into a processor. Pulse until smooth. Drizzle the olive oil slowly while running the processor.
Take the sauce out into a bowl and keep aside and serve with steak.
