4th of July Recipes- Thai Style Potato Salad

Thai Style Potato Salad1

  • 3 pounds red skinned potatoes, boiled, peeled and cut into ¼ inch cubes
  • 3 sweet peppers, cut into ½ inch cubes (a mix of red and yellow or orange)

Add to a large serving bowl and keep aside.

Dressing

  • 1 cup peanut butter
  • ½ light coconut milk
  • 2 tablespoons honey
  • 2 tablespoons tamari
  • 2 tablespoons sriracha sauce
  • 2 limes, juiced
  • 1 tablespoon rice wine vinegar
  • Salt

Mix the peanut butter, coconut milk, honey, tamari, sriracha sauce, lime juice, rice wine vinegar and salt. Mix well and add to the potatoes. Taste for seasonings and add salt if needed.

Garnish

  • 1 cup cilantro, chopped
  • 1 cup green onions, chopped
  • 1 cup salted peanuts, chopped

Top with cilantro, green onions and peanuts. Serve room temperature.

Indian Style Sweet Peppers and Potatoes

Sweet Peppers and Potatoes I thought it would be good idea to highlight some vegetarian dishes to highlight healthy eating. I am not for giving up meat or anything else unless medically necessary but I do believe in moderation and incorporating a bit of everything in ones diet.

I try to make a vegetarian meal once or twice a week. Indian food is a great way to do so. I usually cook some beans or lentils as well as some delicious vegetables. I pair it with fresh whole wheat rotis and I am able to serve my family a delicious, well balanced meal.

So, the first one today is made with sweet peppers and potatoes. It is a very simple to make. I started with some oil and cumin seeds. I added onions, garlic and tomato sauce to the mix. Potatoes and peppers were next followed by a variety of spices.

This dish can be an entree or a side dish. It is perfect with any fish or meat…. but we are sticking to vegetarian options this week… another one to follow tomorrow.

Sweet Pepper Meatballs

Sweet Pepper Meatballs1This is a fabulous recipe for meatballs. I make them all the time. We all love them, especially my daughter. My goal is to incorporate some kind of vegetable into the meat and make the dish more healthy.

In this case, I took a jar of fire roasted peppers and processed them. I added the puree into the meat. It gave the meatballs a delicious, sweet flavor and a soft texture.

A typical meatball recipe usually includes white bread soaked in milk. I have added breadcrumbs to bind the meat in the past. This time I decided to soak the breadcrumbs in milk and added it to the meat. It made the meatballs extremely soft and delicious.

I cooked the meatballs in homemade marinara sauce and the result was amazing. We had my daughter’s friend over for dinner and everyone enjoyed the meal.
