Tofu Stir Fry with Mushrooms and Bok Choy

Tofu and Bok Choy Stirfry

1 pack firm tofu, water drained and cut into ½ inch squares

2 bunches baby bok choy, the whites and greens chopped and separated

1 10 oz cremini mushrooms, sliced

4 garlic cloves, minced

1 inch ginger, grated

 

 

Sauce

2 tablespoons tamari

2 tablespoons rice vinegar

2 tablespoons honey

2 tablespoons sweet chili sauce

Mix the tamari, vinegar, honey and chili sauce in a small bowl. Keep aside.

¼ cup chicken or vegetable broth

1 tablespoon corn starch

Mix the corn starch in broth and keep aside.

2 tablespoons extra light olive oil

Heat a large wok like saucepan with the oil. Add the sliced mushrooms on high heat and sauté for 2 to 3 minutes. Add the ginger and garlic and sauté for another 2 minutes. Add the white parts of the bok choy and sauté for 2 to 3 minutes. Add the tofu and the sauce. Bring to a boil and add the corn starch mixture. Mix well and bring to a boil. Check for seasonings and add the bok choy greens. Serve with brown rice.

Garlic and Cilantro Shrimp with Soba Noodles

Garlic and Cilantro Shrimp with Soba Noodles

  • 1 pound medium shrimp, cleaned and deveined
  • 4 garlic cloves, smashed
  • 1 teaspoons salt
  • ½ cup cilantro, chopped
  • 3 tablespoons extra virgin olive oil

Add the garlic and salt into a mortar and pestle. Pound till the garlic and salt are mixed well. Add the cilantro and oil and pound and mix till a paste is formed (this can be done in a food processor). Spread the paste all over the shrimp and marinate for 4 to 5 hours in the refrigerator.

  • 2 tablespoons extra light olive oil
  • 1 medium yellow onion, sliced
  • 3 garlic cloves, smashed
  • 3 cups Soba noodles, cooked
  • 5 cups spinach or Chinese greens
  • 3 tablespoons tamari
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons sweet chili sauce
  • ½ cup cilantro, chopped

Heat a large wok like pan with the oil. Add the onion and garlic and sauté on medium heat for 2 minutes. Add the soba noodles and greens. Saute for another minute and add the tamari, Worcestershire sauce and sweet chili sauce. Mix well and check for seasonings.

Preheat oven to broil.

Skewer the shrimp and broil in the oven 3 to 4 minutes on each side or till done. Careful not to over cook the shrimp. Take shrimp off the skewers and serve on top of the noodles.

Asian Meatballs

  • 1 pound ground turkey, dark meat preferable
  • ½ cup panko breadcrumbs
  • 1 teaspoon sesame oil
  • 2 teaspoons oyster sauce
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon tamari
  • 1 egg, beaten
  • Salt
  • 2 green onions, chopped
  • 1 inch ginger, chopped
  • 3 garlic cloves, chopped

Process the green onions, ginger and garlic in a food processor. Keep aside.

Transfer the turkey meat onto a medium-mixing bowl. Pour the breadcrumbs into a small bowl and pour the sesame oil, oyster, Worcestershire sauce, tamari and the beaten egg on top. Let the breadcrumbs soak for 15 minutes and add to the turkey including the salt. Add the green onion mixture and mix well. Keep aside.

  • 2 cups marinara sauce

Simmer the sauce in a medium saucepan. Form the meatballs and drop carefully. Cook the meatballs on a medium heat till all of them are formed. Cover with lid for ten minutes. Take the lid off and taste for seasonings. Serve hot with spaghetti.

Soba Noodles with Mushrooms and Red Peppers

Meatless Mondays have never been yummier! These easy to make soba noodles are a crowd pleaser- no one will notice how healthy they are! I would eliminate the dashi to make it a 100% vegetarian!

Sauce

  • 1 cup vegetable broth, warm
  • 1 ½ teaspoons dashi
  • 2 tablespoons tamari
  • 2 tablespoons shaoxing wine
  • 1 teaspoon corn starch

Mix all the ingredients in a small bowl and keep aside.

  • 2 tablespoons peanut oil
  • 1 cup mushrooms, sliced, any variety
  • 1 cup green beans, chopped
  • 1 large red pepper, sliced
  • 1 pound fresh or dried soba noodles, cooked to package instructions, drained and rinsed with cold water
  • Salt
  • Pepper
  • 3 green onions, sliced on a bias

Heat a wok like pan with the peanut oil. Add the mushrooms, green beans and red peppers and sauté on high heat for 3 to 4 minutes. Add the cooked and drained noodles and sauté for another 2 minutes. Add the sauce and bring to a boil and mix well. Taste for seasonings and add salt and pepper accordingly. Garnish with green onions and serve.

 

 

Grilled Chili Chicken

  • 2 pounds bone in chicken thighs, skin taken off
  • ¼ cup tamari
  • Juice of 2 lemons
  • 3 garlic cloves, grated
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 teaspoon chili powder
  • 2 teaspoons salt
  • 1 tablespoon agave

Mix the tamari, lemon juice, garlic, rosemary, oregano, chili powder, salt and agave in a small bowl. Add the chicken and marinade into a zip lock bag and marinate in fridge overnight or at least 3 to 4 hours.
Take out of fridge and bring to room temperature. Grill till done. Save the marinade and add to a small saucepan. Bring the marinade to a boil and reduce for 5 minutes on a simmer. Pour the hot sauce over the grilled chicken. Serve immediately.

Chicken and Tomato Stir Fry

Tomatoes are in season and this is a very unlikely dish.. no one thinks of stir fry when one thinks of tomatoes, well, why not!!!

  • 4 chicken breast fillets, sliced thin
  • 2 tablespoons low sodium tamari
  • 1 tablespoon ginger, grated
  • 1 tablespoon garlic, grated
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon cornstarch
  • 2 tablespoons extra light olive oil
  • 4 to 5 plum tomatoes, cored and cut into 1 inch pieces
  • 2 tablespoons sugar
  • ½ cup chicken broth
  • ½ cup cilantro, chopped
  • ½ cup green onions, chopped

Marinate the chicken pieces in the tamari, ginger, garlic, cooking wine and cornstarch for 2 to 3 hours in the fridge. Take out about half an hour before cooking. Heat a wok like pan with the oil. Add the tomatoes and the sugar and sauté on high heat for 3 to 4 minutes on high heat or till the juices come out. Add the chicken and sauté for 2 to 3 minutes.  Add chicken broth and bring to a boil and cook till chicken is cooked through. Check for seasonings and garnish with cilantro and green onions.

Coconut Shrimp Curry- Thai Style

Thai Style Shrimp Curry

  • 1 pound jumbo shrimp, cleaned, deveined and sliced in half
  • 2 teaspoons tamari
  • 3 garlic cloves, minced

Place the shrimp, tamari and garlic in a zip lock bag. Marinate for 2 to 3 hours.

  • 2  tablespoons extra light olive oil
  • 1 large yellow onion, sliced thin
  • 2 stalks lemongrass, peeled and the insides minced- yields about ½ cup
  • 1 14 oz can light coconut milk
  • 1 teaspoon tamarind concentrate
  • 2 tablespoons fish sauce
  • 1 teaspoon palm sugar
  • 1 teaspoon sriracha sauce
  • 1 cup fresh basil, chopped
  • ½ cup cilantro, chopped
  • Salt
  • ½ lime, juiced

Heat a wok like pan and add the olive oil. Add the marinated shrimp and sauté on high heat for a minute. Take out and keep aside.
Add the onions and lemongrass. Saute on medium high heat for 2 to 3 minutes. Add the tamarind concentrate, coconut milk, fish sauce, palm sugar and sriracha sauce. Bring to a boil and let simmer for 5 minutes. Add the fresh basil, cilantro and shrimp. Cook for 2-3 minutes till the shrimp are cooked. Taste for seasonings, add salt and lime juice.
