Spiced Shredded Cabbage with Coconut

Spiced Shredded Cabbage

Spice Mix

  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander seeds
  • 2 teaspoons mustard seeds
  • 1 teaspoons fennel seeds

Roast the seeds in a small cast iron skillet on medium heat for 3 to 4 minutes or till the seeds are aromatic. Take off the heat and grind in a spice grinder. Keep aside.

  • 2 tablespoons extra light olive oil
  • 2 medium shallots, chopped
  • 2 inch fresh ginger, grated
  • 4 to 5 curry leaves
  • ½ cup grated frozen coconut
  • 4 cups shredded cabbage
  • Salt
  • ½ cup cilantro, chopped

Heat a heavy saucepan with olive oil. Add the shallots and ginger. Saute 1 to 2 minutes on medium heat. Add the curry leaves and coconut. Saute for 2 to 3 minutes on medium heat, stirring constantly. Add the cabbage and turn the heat up. Saute for 3 to 4 minutes, stirring constantly. Lower the heat and cover with lid. Cook for 15 to 20 minutes, stirring every five minutes. Add salt and check for seasonings. Add cilantro for garnish and serve warm.

Tandoori Cauliflower

Tandoori Cauliflower I guess I will continue the cabbage and cauliflower theme this week. Cauliflower is everywhere right now- big, snowy white, beautiful!

We were in town and a local restaurant was selling farm fresh vegetables. The cauliflower was calling my husband from a mile away. We bought the biggest one we could find and brought it home.

We were having some people over and I was making vegetarian food- what does one make for an appetizer??? Well, grilled or tandoori cauliflower, of course!!

I mixed up a tandoori paste which included ginger, garlic, cilantro and Greek yogurt. I blanched the cauliflower and marinated the florets in the delicious paste. I had time and marinated them overnight. If you don’t have the luxury, marinate them for at least 2 to 3 hours..

Fresh Tomato Ravioli with Pesto Green Beans

Fresh Tomato Ravioli with Green Pesto Beans1 I made this meal on a Monday- the beginning of the  week is extremely busy for me. I have lots of chores and my daughter has piano and ballet back to back. By the time we get home it is six o’clock and she is famished and wants dinner right away. I try to have something ready for her as we enter the house. I mostly make something ahead of time and heat it up as we walk in.

I bought fresh raviolis and green beans from the super market and I already had fresh tomato sauce in the fridge. I decided to cook the raviolis simply in the tomato sauce and serve them with the green beans sauteed in basil pesto- yes I had pesto in the fridge as well.

It was an easy and fast meal. I sauteed the beans in a little olive oil and cooked them till they were tender with a crunch. I then added the pesto and turned the heat off. It was a simple side dish with a lot of flavor.

I cooked the raviolis in lots of salted water (fresh pasta takes all of a few minutes to cook) and transferred them over to the simmering tomato sauce- thats it.. dinner was ready.

I love taking help from the store when it comes to fresh pasta. It is great to make it at home but obviously it is a bit time consuming and definitely not conducive for a weeknight meal.

It was a quick dinner followed by bedtime for my daughter and a glass of wine for me once she was down.

Mushroom Enchiladas with New Mexico Red Chile

Mushroom and Red Chile Enchilada

This is a fabulous meal to make for company or if you just want to impress your family. It is a vegetarian meal but you can substitute any kind of meat in here including chicken, pork, shrimp or even fish.

I made this fabulous meal for a friend who was coming over with her family. They are vegetarian so I had to be careful and use vegetable broth where ever I normally use chicken broth, etc.

I made a delicious stuffing for the enchiladas with cremini mushrooms, onions and garlic. I added paprika and unsweetened cocoa. I wanted to emulate the mole sauce flavor which is a very labor intensive dish to make requiring lots of ingredients. I decided to introduce just the cocoa part to the stuffing to bring out the earthiness in the mushrooms.

I used whole-wheat tortillas- and guess what- no one noticed. Once the tortillas are doused with the super flavorful sauce, you can’t tell the difference. A perfect, sneaky way to make the dish healthy without anyone knowing.

I also cooked up some green rice and some quick vegetarian refried beans- recipes to follow tomorrow and the day after.

Definitely try making the mushroom enchiladas with new mexico red chilies- you will be impressed with yourself.

Vegetable Stir Fry

Vegetable Stir Fry1 I can’t think of a better way to use up a bunch of left over vegetables in the fridge. I had half a cauliflower head, yellow and red pepper, asparagus and most importantly, I had green onions. I love using them for their mild oniony flavor and beautiful green color.

I doused the cauliflower florets with some tamari and roasted them. I then sauteed the vegetables with ginger and garlic. I went through my pantry and hoisin sauce stood out. I added some rice vinegar and honey to finish off the sauce.

It was simple, quick and most of all delicious. It was a perfect pairing with the sausage fried rice. My daughter ate all the vegetables except the peppers- she does not like them. I have learnt to pick my battles with her. She is such a good eater and everyone is allowed not to like a few things.

Next time you have left over vegetables, try this delicious stir fry.

A Simple Indian Vegetarian Recipe: Pink Lentils with Broccoli Rabe served with Basmati Rice and Mustard Seeds (Dal Chawal)

lentils-with-broccoli-rabeSometimes you need to make the very simple foods to satisfy your nostalgic self. I was in the mood for ‘dal chawal’- which means lentils and rice. Growing up, ‘dal chawal’ meant that it was going to be a laid back meal that doesn’t take very long to cook. Depending on what lentils are used, they can be cooked in no time. The pink lentils fall under that category- you can cook these up in about 20 minutes. Now although it is a simple meal- it can be dressed up in many ways. The lentils can be cooked in different ways and can be topped with various concoctions (called the tempering). In this case, I kept it really simple- didn’t add any tempering and cooked everything in the lentils including garlic and chopped broccoli rabe. Yes, you read it correctly- I used broccoli rabe! Talk about fusion cuisine!  I like to add vegetables to my lentil dishes to make them healthier- normally I add baby spinach. I was at the Indian grocery store and saw broccoli rabe there- most Indians cook broccoli rabe (because of it’s bitter and earthy flavor) with mustard greens and make a dish called ‘sarson ka saag’- sarson is mustard greens and saag is when any greens like spinach or mustard greens are blended to a smooth cream spinach like consistency. Sarson ka saag is eaten with roti made out of corn meal – it’s delicious! It’s mainly eaten in North India, in Punjab- that is where my parents come from and so my Mom makes the tastiest version of this dish- hands down! I digress- I decided to use broccoli rabe in my lentils instead of spinach since broccoli rabe is one of my favorite greens. Well, the dal (lentils) was delicious- my daughter ate it up not even realizing what was in it.

Another way to dress up ‘dal and chawal’ is by making the rice in different ways. I remember eating dal (lentils) with plain white rice- it does taste really good with just plain rice- but of course I had to do something different! I decided to cook the rice with mustard seeds and curry leaves- two of my favorite spices used in South Indian cooking.

Yogurt is usually served with all Indian meals- and this one was no different. Again, the yogurt can be dressed up in a variety of ways. I decided to chop some cucumbers and tomatoes and add it to the yogurt with some salt, cumin powder and dried mint. It makes a delicious raita.

Overall, the meal took me back years when I was a little girl and would eat ‘dal chawal’- but would not really enjoy it too much- thinking to myself- this is all I got?? Now, I crave it! It’s funny how things change as you get older and old flavors and memories hold a very special place in your heart. My daughter liked my dressed up ‘dal chawal’! My husband ate it like he hadn’t eaten the dish in years!
