Spicy Watermelon and Pineapple Salad

I got this recipe from NYTimes, one of my favorite sources for new ideas. I changed up the ingredients a bit and came up with this delicious summer salad- make it before all the yummy watermelon goes away!!


2 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
Juice and zest of one lime
1 tablespoons honey
1 serrano, sliced
½ teaspoon salt
1 teaspoon Trader Joes chili lime seasoning
2 green onions, chopped
1 cup fresh watermelon, chopped
1 cup fresh pineapple, chopped
½ cup crumbled feta
2 cups arugula
¼ cup cilantro sprigs
¼ cup mint

Make the dressing with the oil, vinegar, lime zest, juice, honey, Serrano, salt and the chili lime seasoning. Mix well and keep aside.
Transfer the watermelon and pineapple in a medium bowl and pour the dressing over the fruit, mix well and let marinate in fridge for at least an hour.
Right before serving, add the arugula, cilantro, mint and feta to a large bowl, add the marinated fruit, toss, check for seasoning and serve.

Watermelon Tomato Salsa

How can I forget watermelon when I am posting summer sides!!! This salsa is great with any grilled meat or seafood… or just plain with tortilla chips!

  • 2 cups watermelon, chopped
  • 2 yellow plum tomatoes, seeds taken out and chopped
  • 4 green onions, chopped
  • ½ cup cilantro, chopped
  • Juice of one lime
  • 1 teaspoon ancho chili powder
  • 2 teaspoons salt
  • 1 teaspoon honey

Mix all the ingredients together in a medium bowl. Let the salsa sit for at least an hour before serving with either tortilla chips or on top of any grilled meat or fish.

Watermelon Sorbet with Yogurt

This is perfect for a hot day and very easy to whip up in your blender… make it before the watermelons go away… I served the sorbet with some macerated blueberries… yum! Healthy and delicious… and simple!

  • 4 cups watermelon, cut up and frozen overnight
  • ½ cup full fat yogurt
  • 2 to 3 tablespoons honey
  • 2 to 3 tablespoon lemon juice

Transfer the watermelon, yogurt, honey and lemon juice to a Vitamix. Blend till a sorbet consistency is formed. Transfer to a air tight container and freeze.

  • 1 cup blueberries
  • 1 tablespoon sugar
  • ½ vanilla pod, sliced in half or ½ teaspoon vanilla extract
  • 2 tablespoons fresh mint, chopped

Transfer the blueberries, sugar, vanilla and mint to a bowl. Mix well and let sit at room temperature for 2 to 3 hours.

Serve with the sorbet.

Watermelon Tomato and Basil Salad

There are still tomatoes and watermelon left- hurry, get them and make this delicious salad….

  • 2 cups watermelon, chopped
  • 3 to 4 heirloom tomatoes, chopped
  • ½ cup basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 to 2 teaspoons salt

Mix all the ingredients in a serving bowl, let the salad sit for about an hour before serving.

OMG, you have to make this now- before all the tomatoes go away. It’s very simple as the ingredients speak for themselves… yum!!!

  • ½ cup basil, chopped

  • 1 to 2 teaspoons salt

Watermelon and Tomato Salad

Watermelon and Tomato Salad I made this salad last year- and really enjoyed it. When I first heard of it, I thought, “what a strange combination”- but when I tasted it, I thought it was fabulous. 

Last month, a friend was hosting a good bye party for a mutual friend and she had the meal catered from a local place in Maplewood. The meal consisted of a variety of tapas style dishes including a watermelon salad. It was good but I thought the one I had made last year was better- yes I am very modest… A friend who was there as well commented on the watermelon salad and wanted to make it and asked me to post a recipe- well, here it is Nancy!

I have seen plenty of recipes for this kind of salad. They all start with the watermelon and tomatoes, there is some kind of a vinaigrette, fresh herbs and some cheese. I went with the vinegar and cheese of my choice. I made an easy and delicious vinaigrette with balsamic vinegar- I think the rest of the vinegars in my pantry feel quite ignored- I end up using balsamic for mostly everything. I had feta cheese in the fridge- it is one of my favorites. I thought the saltiness would go really well with the sweet and cold watermelon. My favorite kind of tomatoes are grape- I use them for everything including pasta sauces- so that is what went in this salad. In terms of the fresh herbs, somehow oregano kept coming to mind.. I love feta and oregano together but it can be a very strong combination (both the ingredients are quite loud)- so I decide to tone everything down with mint. Mint brought a great freshness and balance to the salad. 

Overall- a big success. I grilled chicken sausages as the main course and cooked up peppers and onions to go along. Will post the recipe on Monday. We ate the soft yummy peppers and onions with the delicious sausages. It was an easy and fast meal to make – best of all, it was delicious…
