4th Of July Dessert: Vanilla Coconut Panna Cotta with Mango Lime Sauce

Vanilla Coconut Panna Cotta

  • 3 tablespoons cold water
  • 1 packet unflavored gelatin powder
  • 1 cup heavy cream
  • 2 cups plain yogurt
  • 2 cups coconut milk
  • 1 cup evaporated cane sugar
  • 1 vanilla bean, sliced length-wise and seeds taken out
  • 1 teaspoon vanilla extract
  • 8 (8 oz) ramekins

In a small bowl dissolve the gelatin in the cold water. Keep aside. In a medium bowl, whisk the yogurt, coconut milk, vanilla extract and seeds from vanilla bean.
In a heavy saucepan, heat the cream and sugar on medium heat until just simmering. Remove from heat and add the gelatin mixture. Add the cream mixture into the cold yogurt mixture.
Pour into the ramekins and chill thoroughly- at least 6 hours if not over night. Dip bottoms of cups into hot water and invert into a serving plate. Serve with mango lime sauce.

Mango Lime Sauce

  • ½ cup mango pulp
  • 2 tablespoons evaporated cane juice
  • Juice of ½ lime (1 tablespoon)
  • 1 teaspoon vanilla extract
  • 2-3 mint leaves

Combine mango pulp and sugar in a small saucepan. Add the mint leaves and heat over medium heat. Cook for 5 minutes and turn the heat off. Add the vanilla extract and lime juice. Take the mint leaves once the sauce is cool. Serve with the panna cotta.

Greek Style Lamb Burgers with Olive Mayonnaise

This is a great recipe to make for the long weekend. It is not your typical burger. It is made with lamb and super flavorful. You can substitute beef or turkey if lamb is not preferred… and don’t forget to make those yummy fries from yesterday…

  • 2 pounds ground lamb
  • 1 tablespoon fresh oregano
  • ½ cup fresh parsley
  • 1 large shallot
  • 2 garlic cloves
  • ½ cup feta crumbles
  • 2 teaspoons salt

Process the oregano, parsley, shallot and garlic in a food processor. Add the mixture to a bowl with the ground lamb. Add the salt and feta and mix and keep for an hour (it can be marinated the night before as well).

Form into 6 patties and keep aside.

Olive Mayonnaise

  • ¼ cup mayonnaise
  • ½ cup Greek yogurt
  • ¼ cup olives, chopped fine
  • 1 garlic cloves, minced
  • 1 teaspoon salt
  • Juice of half a lemon

Mix all the ingredients in a small bowl. Keep aside.

  • 6 focaccia rolls

Grill the burgers and place them on toasted focaccia rolls. Add the olive mayo and serve with potatoes and a salad.

 

 

Greek Style Oven Fries with Oregano and Lemon Zest

  • 6 to 8 medium yellow skinned potatoes, cut into wedges
  • 1 large foil lined cookie sheet
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons salt

Preheat oven to 375 degrees F convection for 400 degree F regular.

Add the potatoes to a large saucepan filled with water. Bring to a boil. Turn heat off, drain the water and return to the pan and let the potatoes dry.

Transfer to the lined cookie sheet. Add the olive oil and salt. Mix well and roast in oven for 45 minutes to an hour till the wedges are golden brown and crispy.

Topping

  • Zest of one lemon
  • 1 tablespoons fresh oregano, minced
  • 2 garlic cloves, minced
  • Salt

Transfer the hot potatoes into a large bowl. Add the lemon zest, oregano and garlic and toss well. Add more salt if needed. Serve immediately!

 

Mango Raspberry Pavlova

This is an amazing dessert to enjoy in the summer. It looks a bit hard but it really isn’t.. just a few steps including making the meringue.. Definitely worth a try!!

  • 6 egg whites
  • 1¼ cups fine sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons cornstarch

Preheat oven to 250 degrees F.

Trace an 8 to 9 inch circle onto parchment paper. Place the parchment paper on a cookie sheet. Transfer the egg whites to an electric mixer and beat the eggs till soft peaks form. Gradually add the sugar, vanilla extract and cornstarch and beat till firm peaks form. Transfer the beaten egg whites onto the traced circle, carefully spreading the mixture inside the circle. Create a slight depression in the center for the filling. Bake in the oven for an hour, or till the meringue feels firm to the touch. Leave the oven door open and cool the meringue in the oven.

  • 1 cup whipping cream
  • 1 cup fresh mango
  • 2 tablespoons raspberry liquor
  • Juice of half a lemon

Whip the cream till stiff peaks are formed. Blend fresh mango, raspberry liquor and lemon juice till smooth. Fold the mango mixture into the whipped cream. Refrigerate.

  • 1 cup fresh mango, chopped
  • 1 cup fresh raspberries
  • 1 teaspoon sugar
  • Juice of half a lemon

Transfer the mango and raspberry to a small bowl. Add the sugar and lemon juice. Mix and let sit for an hour. Right before serving, place the meringue onto a serving platter. Add the mango whipped cream and then place the fruit on top. Serve immediately!

4th Of July Recipes- Cole Slaw with Yogurt and Tamarind Vinaigrette

Cole Slaw with Yogurt and Tamarind2 I am all for making things from scratch but I do like to use all the conveniences I can find at the store. For this recipe I bought packaged, shredded cabbage, carrots and broccoli slaw. It saved me a ton of time and made everything a lot easier.

To complete a well-balanced menu, I was going to make a coleslaw dish with the Thai style burgers and potato salad. The recent Bon Appetit issue had a whole article on tamarind and it’s virtues. I am quite familiar with tamarind as I use it for all different things including using it in drinks, dressings and as a condiment.

They talked about pairing yogurt with tamarind concentrate to make a delicious, tangy dressing. I added my own twist by adding roasted cumin to the creamy dressing which gave the dish a nice nutty flavor. Overall, the dish went well with the burger and the potato salad.

4th Of July Recipes: Thai Style Mango Salsa

Thai Style Mango Salsa1 It is time to talk about fourth of July recipes. I can’t believe it is that time already. It feels like yesterday when we were complaining about the cold and wet weather and couldn’t wait for summer to begin. Well here it is and it is time to plan a delicious yet easy meal for your family and loved ones.

I came upon a Thai theme for this holiday. I find it a lot easier  to come up with recipes if I have a central theme established. For this theme, mangoes came to mind. Usually for an appetizer, I like to do a salsa and chips. It is easy and delicious and not too filling. It also goes well with beer, wine and any other mixed drinks you may be serving.

I decided to make a Thai style salsa- what does that mean? Well,  you essentially add Thai ingredients including fish sauce, sweet chili sauce, cilantro, lemon juice and you have a Thai style mango salsa! I served it with rice chips I purchased from Trader Joes.

Try it for the upcoming fourth of July holiday….
