Thai Fried Rice with Red Curry Chicken

This is a delicious meal to make either through the week or on the weekend- maybe this would be a great Sunday meal as it is a bit involved with quite a few ingredients.. but it is worth it!

  • 1 pound chicken thighs, skinless and boneless, cut in 2 inch pieces
  • 2 tablespoons red curry paste
  • Juice of a lime
  • 1 tablespoon tamari
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 tablespoons peanut oil

Marinate the chicken pieces in the red curry paste, lime juice, tamari, honey and salt for at least 2 hours, ideally 6 to 8 hours. Keep aside.

Transfer to a lined cookie sheet, drizzle with peanut oil and broil till both sides are brown. Change the oven to bake and finish baking the chicken till cooked through.

Rice

  • 1 tablespoon butter
  • 1 tablespoon peanut oil
  • 11/2 cups brown rice, rinsed
  • Juice of half a lime
  • 4 cups water or broth
  • 2 teaspoons salt

Heat a pan with the butter and oil. Add the rice and sauté on medium heat for 2 to 3 minutes. Add the lime juice, water and salt. Bring to a boil and simmer partially covered with a lid until the moisture is cooked off on the surface, about 5 to 10 minutes. Lower the heat and cover and cook for another 30 minutes or till the rice is cooked through. Transfer to a platter to cool.

Sauce

  • 1 tablespoon creamy peanut butter, softened
  • Juice of a lime
  • 3 tablespoons sweet garlic chili sauce
  • 3 tablespoons coconut milk
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

Mix all the ingredients in a small bowl and keep aside.

  • 2 tablespoons peanut oil
  • 3 garlic cloves, grated
  • 2 inch ginger, grated
  • 1 cup shredded carrots
  • 1 cup shelled and cooked edamame
  • 1 orange pepper, chopped
  • 2 eggs, beaten
  • ½ cup cilantro, chopped
  • 3 green onions, chopped
  • 2 teaspoons salt
  • ½ cup roasted peanuts, chopped

Add the cilantro, green onions and salt to the beaten eggs and keep aside. Heat a wok like pan with the oil. Add the garlic and ginger and sauté on medium heat for a minute. Add the carrots, edamame and the orange pepper. Saute on medium high heat for 2 to 3 minutes. Create a round space in the middle of the pan by moving the veggies aside and pour the egg mixture in the middle of the pan and stir on medium heat and slowly incorporate all the vegetables.  Mix well and add the cooled brown rice. Mix well. Add the peanut sauce and check for seasonings. Mix well and serve with the chicken and chopped peanuts on top.

Buttered Brown Rice

I served brown rice with the fish and bok choy. Most people shy away from brown rice as they think it tastes like cardboard.. well, I think it is the most delicious thing ever- it is nutty and delicious. Especially the way I make it with some butter and broth. I used chicken broth but one can substitute vegetable or mushroom broth to keep it vegetarian. Either way, the result is yum!

  • 2 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • 1 cup brown rice
  • 2 teaspoons salt
  • 3 cups chicken or vegetable broth

Heat a saucepan with butter and olive oil. Add the rice and sauté on medium heat for 2 to 3 minutes. Add the salt and broth. Bring to a boil. Lower heat to a simmer, half covered for 20 minutes. Cover with lid and continue cooking on low for another 15 minutes till the rice is cooked.

Rice and Beans with Chorizo

This is a fabulous one pot meal just on its own. I made it with the fish. I made it with brown rice and you couldn’t tell the difference!!!

  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 1 can kidney beans, washed and drained
  • 1 cup brown rice
  • 4 cups chicken broth
  • ½ cup parsley, chopped

Heat a medium saucepan with the olive oil. Add the chorizo and sauté on medium heat for 3 to 4 minutes. Add the onion, celery, carrot, garlic, cubanelle pepper and thyme to the pan. Add the salt and smoked paprika. Saute on medium heat for 4 to 5 minutes. Add the tomato paste and sauté for a minute. Add the beans and rice and sauce for another minute. Add the chicken broth and bring to a boil. Lower to simmer and cook for 40 minutes or till the brown rice is cooked through. Garnish with parsley and serve.

Broccolini Rice

Wild Cod with Smoked Paprika I made this side dish with the fish I posted yesterday. I usually make brown rice for my family to keep things healthy. I have tried to make the rice as delicious as possible. I cook it with chicken broth and a tad bit of butter- it makes a big difference.

In this case, I didn’t have a lot of time of cook dinner- a problem most people have. So, I checked my freezer where I always keep packs of frozen brown rice from Trader Joes. It is great to have and use in a pinch. I decided to mimic the same flavors I used in the fish. I started with a shallot and some garlic. I added roasted cumin seeds and smoked paprika. I then added the broccolini and the rice and checked for seasonings. Lemon juice finished off the dish really well. It is great side dish to make with fish or any other meat..

Kale Fried Rice

Kale Fried Rice This simple dish can be served with the Asian stew I made yesterday. I love making fried rice- like quesadillas, you can add anything to the mix and it comes out delicious. I love emptying out my fridge and coming up with a delicious fried rice. Sometimes when I am really lazy, I take out a box of frozen brown rice which I always have on hand, and use it for the fried rice.

I had kale in my fridge which needed to be cooked. I had eggs in the fridge and of course the brown rice. I find the brown variety an ideal choice for fried rice. My daughter doesn’t seem to be able to tell the difference especially since fried rice has a honey color from the soy sauce- so using brown rice is ideal. I kept it very simple- garlic, ginger, shallots, tamari and some oyster sauce.

It was done before I knew it.. It can also be served as a meal since it has a vegetable and protein from the egg and whole grain from the brown rice. It is a well balanced meal and a great thing to pack for a school lunch the next day!

Brown Rice with Minted Green Peas

Brown Rice with Minted Peas I served this super healthy rice dish with the lentils I made yesterday. I love when I am able to make very flavorful dishes that are good for you. Especially when I am feeding my daughter and husband. As the cook in the family, I feel responsible for feeding them delicious and healthy food. I want to make sure my daughter grows up learning healthy eating habits.

This takes absolutely no time at all. I had cooked brown rice in the fridge so it didn’t take me long at all. You can also use the frozen brown rice available at Trader Joes. I always have some on hand. It is great for a quick meal.

For this dish, all I did was saute a shallot in some olive oil. I then added some sweet, frozen peas and chopped mint. The rice came next with a bit of salt. That it- all done. It was delicious with the brown lentils. It was a healthy meal we all enjoyed…
