Hyderabadi Style Chicken

We are all guilty of being stuck in a rut- especially when it comes to cooking. I realized, I had not cooked Indian food in a while- not sure what my rut was but it certainly wasn’t Indian food. I decided to change that and come up with a delicious chicken curry!

  • 2 pounds chicken thighs, bone-in or out, without skin
  • ½ cup Greek yogurt
  • 3 garlic cloves, grated
  • 1 inch ginger, grated
  • ½ cup cilantro, chopped fine
  • Juice of one lemon
  • 2 teaspoons salt

Mix the yogurt, garlic, ginger, cilantro, lemon juice and salt. Transfer to a medium bowl with the chicken. Marinate over night or at least 2 to 3 hours.

Spice Mix

  • ½ cup grated coconut (I use frozen)
  • 2 green cardamoms
  • 4 cloves
  • 2 dried red chilies
  • 1 teaspoon cumin seeds
  • 2 teaspoons coriander seeds
  • ½ teaspoon fenugreek seeds
  • ½ inch cinnamon stick
  • ¼ cup chopped almonds

Process all the ingredients in a spice grinder (coffee grinder) and keep aside.

  • 3 tablespoons extra light olive oil
  • 1 medium onion, chopped
  • 1 cup tomato puree
  • ½ cup water
  • Salt

Heat a heavy saucepan with the oil. Add the onion and sauté on medium high heat, stirring constantly for 5 minutes. Add the spice mix and sauté for 3 to 4 minutes, stirring constantly. Add the tomato puree and sauté for another 3 to 4 minutes. Add the chicken and water. Bring to a boil and simmer with lid for 35 to 40 minutes or till the chicken is cooked through. Take lid off and cook on high heat to cook off the excess liquid. Add salt if necessary. Serve warm with rice or quinoa.

 

 

Tuscan Style Cannellini Beans and Tomato Ragu

Cannelini Ragu This ragu is delicious and very easy to make. I decided to make it dried beans and soaked them overnight, but you can definitely make them with the canned variety. The dried beans give the dish a bit more depth of flavor but the canned ones are very comparable.

I started with pancetta, onion, celery, carrots and garlic. I got fresh herbs from my backyard including rosemary, thyme and sage. I always buy San Marzano tomatoes which are special ones grown in Italy and have an amazing flavor. Some white wine and chicken broth later, I had a start to a very delicious stew. I let it cook for a couple of hours. The good thing about this dish is you can make it in advance. In fact it will taste better the next day as all the flavors will have a chance to marry.

Make this ragu with the lamb roast and have a wonderful holiday.

Indian Sweet Rice with Brown Sugar

Sweet RiceDiwali– Indian New Year is on Tuesday this week. For those who are not familiar with the holiday- there is just one thing you need to know- it a fabulous time to eat good food including something sweet.

Regardless of  where you live in India or what tradition you follow, it is a day to eat sweets and spend time with your family and friends.

We usually get together with family and eat lots of delicious food. As I just mentioned, one of the traditions is to eat something sweet.

I had this sweet rice recipe which I thought would be perfect to eat on such an occasion. Actually it is ideal for breakfast with a steaming cup of coffee.

I grew up eating this delicious rice flavored with jaggery, cinnamon, cloves, cardamon and cumin seeds. It has an amazing nutty flavor. In this recipe I have used brown sugar instead- just to make it more accessible. I love eating this rice hot with a dollop of low fat tangy yogurt- it is delicious.

Cardamom Seekh Kebab

Seekh Kebab with Cardamom I love making seekh kebabs- like hamburgers, sky is the limit as far as flavors are concerned. They are great as an appetizer, a meal or a side dish. Serve them with a crunchy baguette and a big salad and you have a delicious meal- of course, a glass of wine helps and maybe some olives on the side…

For this recipes I used my usual turkey meat which is inexpensive and a lot healthier than other options. I wanted to use cardamom and planned on it being the star of the dish. You can use cardamom powder in this recipe but you won’t get the same flavor. When buying cardamom- make sure the pods are bright green. It is an expensive spice and you want to make sure it is super fresh. The mixture was delicious all cooked up on skewers. I broiled them under the broiler..

It is nice to have this mixture in the fridge or even in the freezer- especially in the summer when you don’t feel like doing much cooking. It is great to serve the kebabs with some grilled vegetables and a cold glass of rose…

Dhaniya Meat (Goat Meat Cooked in a Cilantro Sauce)

Dhaniya Meat This is one of my all time favorite dishes-ever. I grew up eating this and learnt later my maternal grandfather used to enjoy it immensely as well. I love it for its simplicity and amazing flavor.

This is my first time making this delicious dish and realized how simple it is to make.

The dish is made with one of my favorite combinations- cilantro, onion, garlic and green onions. The mixture imparts amazing flavors and color. It is as simple as that.

If you are not able to find goat meat, use lamb, beef or chicken- the basic flavor will be the same. I introduced the dish to my daughter who love it. The taste brought me back to my childhood. I love how food invokes delicious memories…

Meat Koftas- Meatballs in an Onion Gravy

Koftas This is a delicious meat ball dish. In India we meatballs are called koftas. They can be made with a variety of meats. My favorite is goat meat- but pork is delicious as well.. and so is beef.

The key to make this dish successful is to season every component of this dish. I started off with the minced meat which I seasoned with salt, garam masala and a small shallot. I let that mixture sit for a few hours (over night would be great). I then prepared a spice mixture consisting of coriander and cumin seeds. It is important to use whole spices as the grounds ones don’t give as much flavor- although, in a pinch one can use the ground variety. The next step was to blend an onion with ginger and garlic- that is the base of the gravy. If the steps are followed- the dish is a sure hit.

It is not the fastest dish to make- so I would leave this for the weekend.. but it is definitely worth the extra time….

Pomegranate and Walnut Chicken

Pomegranate and Walnut Chicken This was a delicious dish. My husband and I used to order a chicken dish made with pomegranates at an Afghani restaurant years ago. The placed closed down a while ago and I have not eaten that delicious dish for a long time.

I have had pomegranate glaze in my pantry for a long time. I had bought it a couple of years ago from Trader Joes (they had it briefly and don’t anymore). I did some extensive research on the internet and came up with my own version. The two main flavors are the walnuts and the pomegranate glaze. I marinated the chicken in ginger and garlic. In the meantime I made a gravy with onion, and lots of aromatic spices including cinnamon.

The dish has a very distinct taste- really delicious. Serve the chicken with some aromatic basmati rice or freshly made rotis.
