Keema Mattar (Ground Turkey with Peas)

Keema Mattar This is a very simple, weeknight meal one can whip up in no time. Keema is one of my favorite things to eat and make. Keema is essentially ground meat cooked in spices, onion, ginger and garlic- the rest is up to you. I love pairing the meat with different vegetables to make a great one pot meal. Brown rice or fresh make whole wheat rotis can be served to create and delicious and wholesome meal.

I made this one with peas but I also added a variety of different spices- which are not my usual. I used curry leaves and mustard seeds. The mix of spices gave this dish a fabulous flavor. My daughter loves keema- her favorite is the one I make with cauliflower. She devoured it with two big rotis and a glass of milk….

Brown Rice with Minted Green Peas

Brown Rice with Minted Peas I served this super healthy rice dish with the lentils I made yesterday. I love when I am able to make very flavorful dishes that are good for you. Especially when I am feeding my daughter and husband. As the cook in the family, I feel responsible for feeding them delicious and healthy food. I want to make sure my daughter grows up learning healthy eating habits.

This takes absolutely no time at all. I had cooked brown rice in the fridge so it didn’t take me long at all. You can also use the frozen brown rice available at Trader Joes. I always have some on hand. It is great for a quick meal.

For this dish, all I did was saute a shallot in some olive oil. I then added some sweet, frozen peas and chopped mint. The rice came next with a bit of salt. That it- all done. It was delicious with the brown lentils. It was a healthy meal we all enjoyed…

Tomato Rice with Peas

Tomato RiceThis is my version of a South Indian rice dish my husband has all the time at restaurants. I have never made it before and thought it would be nice to try it at home. It is essentially cooked rice sauteed with a lot of spices, lentils and curry leaves. I decided to take it to another level and make a one pot meal out of it. How much do we love one pot meals?

In order to make this dish balanced I added frozen peas and shredded paneer which is an Indian style cheese. So now I had vegetables and protein in the rice dish. I guess if you wanted to be even more healthy, you can use brown rice instead of the white.

The rice dish was super flavorful with the mustard seeds, curry leaves, and a blend of spices. The crushed tomatoes and peanuts made this dish fabulous. Leftover Shrimp and Sausage Paella

Leftover Paella This is what I came up with the leftovers from last night’s dinner. I had some shrimp- not too many, so I chopped them up into small pieces so a little goes a long way.

My husband loves paella, especially the kind with lots of red sauce- he is crazy about anything with red sauce.

I made this paella with arborio rice since it is creamier than the regular one. I cooked it like a risotto but didn’t stand in front of the stove, stirring constantly. Instead I added most of the broth at once and let it cook. It resulted in a very delicious and perfectly cooked paella.

To start the process, I crumbled up the leftover chorizo and cooked it with the onions and garlic. I added rose wine because that is what I was drinking. Tomato sauce and chicken broth later, I had a yummy dish. By adding the frozen peas, I had a one pot meal.

A neighbor and my daughter’s friend stopped by and joined up for dinner. They both ate up the paella and complemented on the taste.

Next time you have leftovers- make a paella!
