Mexican Style Shrimp Stew

Mexican Style Shrimp Stew Yum, yum. I know stew sounds weird in the summer but this one takes almost no time to make.. especially since it is make with shrimp. I crave spicy foods in the summer- with super loud flavors.. this definitely fits the bill….

  • 1 pound medium shrimp, cleaned and deveined
  • 1 dry ancho chili, seeds taken out
  • 2 chipotle chilies, seeds taken out
  • 1 New Mexico chili, seeds taken out
  • Juice of one orange
  • 2 cups chicken broth
  • 3 green onions
  • 4 garlic cloves, peeled
  • 1 cup cilantro, chopped
  • 2 tablespoons extra light olive oil
  • 1 cup crushed tomatoes
  • Salt
  • 1/3 cup half and half
  • 1 cup roasted corn

Add the chilies, orange juice, chicken broth, green onions and garlic into a medium saucepan. Bring to a boil and simmer for 15 to 20 minutes or till the chilies are soft. Add to the blender with the cilantro and blend till smooth.
Heat the same saucepan with the olive oil on medium heat. Add the blended sauce and bring to a boil. Add the crushed tomatoes and bring to a boil and cook for another 20 to 25 minutes on medium heat. Add salt and half and half. Check for seasonings and cook on a simmer. Add the corn and cook for 5 minutes. Add the shrimp and gently cook till the shrimp is done but not over cooked. Check for seasonings and serve with Spanish rice.

Pulled Chicken Chili with Pinto Bean and Apple Relish

Pulled Chicken Chili If you are cooking for the big game, I humbly suggest this fabulous recipe. This week has been very hard for me to come up with recipes- so the night before, I have been asking my husband and daughter for ideas. They have come up with some great ones. The night before last my husband suggested a dish with polenta. It got me thinking of the big game and maybe I should post another chili recipe for this weekend.

I went to the market and bought some fresh chicken thighs and drumsticks. I also bought a can of beans because that is what one adds to chili- right? I love beans in chili but it kind of bothers me that both the meat and the beans have the same mushy texture. So, I decided to keep them separate. That is how I came up with this very delicious dish.

I made a sauce with three different dried chillies and cooked the chicken till the meat was falling off the bones. In the meantime, I put the relish together. I am not sure how I came up with the apple idea. I was looking for the crunch factor and since apples are in season- it was an easy choice. I also made some yummy guacamole which I served on top.

Did I mention I served the chili on polenta? Yup, and it was delicious. For the big game, I would suggest corn bread or tortilla chips. Lots of garnishes including shredded cheese, chopped onions and of course the fabulous relish and guacamole. Have fun eating, drinking and watching this Sunday!

  • 1 large yellow onion, quartered
  • 1 head of garlic, drizzles with olive oil and wrapped in aluminum foil
  • Salt

Preheat oven to 350 degrees F.

Place the onion and wrapped garlic on a small cookie sheet. Drizzle the onion with some olive oil and salt. Bake for about 30 minutes or till the onion is tender. Squeeze the garlic out and keep aside with onion.

  • 1 large dried New Mexico Chili, deseeded
  • 1 dried Ancho Chili, deseeded
  • 1 dried Chipotle Chili, deseeded
  • 2 cups chicken broth

Add the chilies and the broth in a saucepan. Bring to a boil and simmer, covered for 30 minutes.
Add the chilies and liquid into a blender. Add the roasted onion and garlic. Blend till smooth.

  • 4 chicken thighs on the bone
  • 4 chicken drumsticks
  • ½ cup all-purpose flour
  • Salt
  • 2 tablespoons extra light olive oil
  • ½ cup tomato sauce
  • Salt

Dredge the chicken pieces in the flour and sprinkle with salt. Heat a saucepan with olive oil. Brown the pieces on both sides on high heat. Keep aside and add the tomato sauce and blended sauce. Bring to a boil and add the chicken pieces back into the pan. Bring to a boil. Lower to simmer and cover with lid. Cook for 45 minutes or till the chicken is falls off the bone. Take the chicken out and take the meat off with a fork, shredding it at the same time. Discard the bones and add the meat to the sauce. Bring the sauce to a boil and test for seasonings. Add salt. Cook till the chili reaches desired consistency. Serve with Spanish rice or some creamy polenta.

Pinto Bean and Apple Relish

  • One can pinto beans, rinsed and drained
  • 2 small Pink Lady apples, chopped
  • Juice of one lemon
  • 2 teaspoons agave
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon roasted cumin seeds, crushed
  • 1 teaspoon salt
  • ½ cup cilantro, chopped

Add the pinto beans and apples into a small serving bowl. Add the lemon juice, agave, olive oil, cumin seeds, salt and cilantro. Mix well and taste for seasonings. Let sit for at least an hour before serving. Serve a few tablespoons on top of the chicken chili and maybe a ladle of guacamole.

Pulled Chicken Mexican Soup

Pulled Chicken Mexican Soup So, what do you do with leftover pulled chicken?? Well, you make pulled chicken Mexican soup, of course! I admit this idea did not come to me right away. All I wanted was to come up with a completely new dish to make with my leftover chicken. I thought about it quite a bit and finally decided on a soup. I am not a big soup person- not sure why. It is an ideal one pot meal that can be very healthy and easy to make.

This one in particular was extremely good- I think because I had a great starting point- the pulled chicken. If you want to make this recipe and don’t want to go through the hassle of making the chicken- I have a suggestion for you. I would buy a rotisserie chicken, pull the meat off the legs and the thighs and sprinkle with smoked paprika and some lemon juice. Let the chicken marinate for an hour and then follow the recipe. The result won’t be the same as what I made but it will be very close and definitely very tasty.

It was very quick, I started with some olive oil and added some corn flour (maize flour)- to thicken the soup. I was going to use regular flour but then I though corn flour will give the soup a more authentic taste. I added a can of pinto beans, salsa and some roasted corn. The soup came out delicious. All the ingredients complemented each other really well. I made a little more guacamole and served a big dollop right on top. Everyone was very happy and satisfied…

  • 1 to 2 cups leftover pulled chicken
  • 1 can pinto beans, drained, rinsed and mashed
  • 2 tablespoons corn flour (corn meal)
  • 2 tablespoons extra virgin olive oil
  • ½ cup leftover or bottled salsa
  • 2 cups frozen, roasted corn
  • 3 cups chicken broth
  • Salt

Heat a heavy saucepan and add the olive oil. Add the mashed beans and corn flour. Saute on medium heat for 2 to 3 minutes. Add the salsa and sauté for 2 to 3 minutes. Add the chicken, roasted corn and chicken broth. Bring to a boil and simmer half covered for at least an hour. Check for seasonings and serve with cheese quesadillas.

Pulled Chicken Tacos

Pulled Chicken Tacos I am really proud of this recipe. We all love tacos in my house- all sorts of tacos. Eating and cooking tacos remind of our trip to Mexico last Thanksgiving- yes, I did the unmentionable and went away for Thanksgiving- my favorite holiday, ever! I was overruled by majority of my family as it is a great time for everyone to take some time off to go away. Anyway, I digress- while in beautiful Mexico, we ventured out to dinner one day and ended up at a very down to earth, a real Mexican cantina. We had the most delicious tacos, guacamole and quesadillas. Everything there was amazing- I still think about the food.

These tacos are very different from what we ate there but they have a lot of the similar flavors going on as in the Mexican ones. I wanted to eat pulled pork but thought using chicken would be healthier. So, I went to work. I seasoned and browned the chicken thighs- which are a key in this recipe. I wouldn’t use chicken breast as it will turn to rubber in a stew type of recipe. I used a variety of spices including ancho chili powder, New Mexico dried peppers and roasted cumin. They all provided an amazing mixture of flavors. I took the meat off the bone and shredded it to get it ready for the corn tortillas. I made fresh salsa and guacamole…

Mushroom Enchiladas with New Mexico Red Chile

Mushroom and Red Chile Enchilada

This is a fabulous meal to make for company or if you just want to impress your family. It is a vegetarian meal but you can substitute any kind of meat in here including chicken, pork, shrimp or even fish.

I made this fabulous meal for a friend who was coming over with her family. They are vegetarian so I had to be careful and use vegetable broth where ever I normally use chicken broth, etc.

I made a delicious stuffing for the enchiladas with cremini mushrooms, onions and garlic. I added paprika and unsweetened cocoa. I wanted to emulate the mole sauce flavor which is a very labor intensive dish to make requiring lots of ingredients. I decided to introduce just the cocoa part to the stuffing to bring out the earthiness in the mushrooms.

I used whole-wheat tortillas- and guess what- no one noticed. Once the tortillas are doused with the super flavorful sauce, you can’t tell the difference. A perfect, sneaky way to make the dish healthy without anyone knowing.

I also cooked up some green rice and some quick vegetarian refried beans- recipes to follow tomorrow and the day after.

Definitely try making the mushroom enchiladas with new mexico red chilies- you will be impressed with yourself.

Chili For The Big Game-What Are You Cooking For The Super Bowl?

I am not sure if some of you recognize this particular chili. I made it last year for the big game and this year I will make another kind but thought I should give a recipe in advance if you are planning ahead.
It is a very busy week for me- my darling daughter turns seven on Thursday and initially I was planning to bake cupcakes for her class as well as her party on Saturday. As the week came upon me, I realized I will be baking 4 dozen cupcakes- somehow that didn’t sound very pleasant to me. I was initially very excited about baking all the cupcakes but the thought of 20 kids in her class eating just a bit of a cupcake and throwing the rest away was not a pleasant one. All that work and effort will go right in the garbage- so I decided to buy the cupcakes for the class instead- of course I talked to my daughter first and she was okay with it. A little less work for me this week- so it opens up some time for me to plan a meal for the Super Bowl.
I think if I had a bit more time I would come up with something very different. For now the plan is to make a chili verde- which is a Mexican stew made with pork shoulder in a tomatillo sauce. Doesn’t that sound wonderful? I can’t wait to make it and taste it- I think I will make it on Saturday because soups, stews taste better the next day. I will be using this recipe as an inspiration- so if you are so inclined- you can do the same.

I will also make some guacamole and corn bread. Although beer is the beverage of choice for the big day- I will stick to wine, thank you very much.

If I can get my act together- I will post the chili recipe at the end of the week. Now that I have shared what I will be making, I want to know what you will be making for the big game?? Please share and give everyone more ideas…. No matter what you do or eat- remember to enjoy the Super Bowl but do try to eat healthy.

A Father’s Day Gift: Chorizo and Ground Beef Burger with Guacamole and Oven Fries

This recipe is a keeper. The burger is extremely flavorful- I mixed some fresh chorizo to it. Chorizo is one of my all time favorite ingredients to use- it is pork sausage mixed with garlic, paprika and lots of other yummy things- depending on where you buy it.  Adding chorizo is a great way to make a ordinary burger extremely special- you don’t have to do anything else except shape them up and throw them on the grill. My husband loves southwestern flavors- we had people coming over for a barbeque and he requested the meal to echo those flavors.. I immediately thought of guacamole and monterey jack cheese. I thought both things will be great as toppings for the burgers. I bought pepper jack cheese for the adults and the regular one for the kids. My daughter, of course, being the odd one out- doesn’t eat sandwiches- so she ate the burger on it’s own. I cooked corn on the cob for the kids since the corn salad had a bite to it. I had to make my favorite and staple, oven fries- they are always a hit. I love potatoes and love to cook them in a healthy way so I can eat lots of them! All the kids loved them- guess who doesn’t eat potatoes- yup, you guessed it- Sia!

I think this would be a great menu for fathers day. I will be posting a corn salad recipe tomorrow to round off the menu. I served a trifle for dessert and my husband made a sangria to go with the food. My husband loved it and I am thinking of making the meal again for him this coming Sunday- although knowing myself, I will tweak the recipes somehow so I can blog about them in the future. You can’t give a loved one a better gift than cooking them a delicious meal- I don’t like going out for such occasions- the restaurants are a zoo and serve subpar food. So, stay home, save money and cook a fabulous meal for your loved one.
