Orange Chipotle Turkey with Make Ahead Gravy

It is that time of the year again- my favorite. Since last year, we have been spending Thanksgiving in Mexico. I really didn’t want to do it – not wanting to miss my all time favorite holiday. I love it so much because it is all about food- thats it… nothing else. I agreed to the vacation since everyone else wanted to go at that time of year. I decided to cook and celebrate Thanksgiving the following weekend- and it was great! I didn’t find the crowds in the food stores and everything was cheaper- including the turkey.

I make turkey breast, as everyone in my family prefers white meat. It works well for us- plus not a lot of leftovers. I know most people like a lot of leftovers- but I don’t. I like to be done with the meal and not worry about consuming any food later in the week.

Anyway, I digress from discussing this delicious turkey. I am still the the Latin cuisine mode- so guess what? This years Thanksgiving meal is made with lots of Latin flavors. Enjoy!!
Compound Butter

  • 3 tablespoons butter, melted
  • Zest of one orange
  • Zest of one lemon
  • 2 garlic cloves, grated
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika

Mix the butter with orange and lemon zest, garlic, salt and paprika

  • 1 7 to 10 pound turkey breast
  • Salt
  • Pepper
  • 1 orange, cut into eight pieces
  • 1 lemon, cut into eight pieces
  • 2 cups turkey or chicken broth
  • Salt
  • Pepper

Orange Chipotle Turkey

Preheat convection oven to 325 degreed F.

Place the turkey onto a rack in a roasting pan. Turn the turkey over and place the cut up orange and lemon inside the cavity. Sprinkle salt and pepper liberally and turn it breast side facing up. Loosen the skin and carefully spread half the compound butter. Spread the rest all over the skin. Sprinkle the top with salt and pepper. Pour the broth to the bottom of the roasting pan. Keep aside.

Glaze

  • 2 cups fresh orange juice
  • ½ cup honey
  • 1 tablespoon orange marmalade
  • 1 tablespoon chipotle in adobo (just the sauce)
  • Salt

Add the orange juice into a small saucepan. Bring to a boil and simmer for ten to fifteen minutes or till it reduces by half. Add the honey, marmalade and chipotle sauce. Cook for another 2 minutes and add salt. Let cook and keep aside. This can be prepared 2 days in advance.

With a brush add the glaze all over the turkey. Roast the turkey glazing every 15 minutes. Roast till internal temperature reaches 158 to 160 degrees F. Take out of the oven and place onto a platter and cover with foil to rest for at least 20 minutes.
In the meant time, the gravy should be heating on the stove. Reduce the juices at the bottom of the roasting pan by half and add to the gravy. Slice the turkey as needed and serve with gravy.

Make Ahead Gravy

  • 4 cups homemade or store bought turkey stock
  • 1 large shallot, chopped
  • 2 garlic cloves, chopped
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • Salt
  • Pepper

In a large frying pan, heat the butter and add the shallot and garlic. Saute for a minute over medium heat. Add the flour and turn the heat to medium high heat, stirring constantly. Cook the flour for at least 10 minutes or till it turns chocolate brown. Slowly add the stock, whisking vigorously at the same time. Bring to a boil and check for seasonings. Add salt and pepper accordingly. Once the turkey is done, add the drippings to the gravy and reheat.

Pomegranate and Feta Salad

Pomegranate and Feta Salad Pomegranates are festive. They are my favorite fruit- a bit labor intensive to take the seeds out but so worth all the work. For some reason, I can’ get myself to buy the shelled ones in the stores- so I choose to put in the work.

I love the tangy taste but most of all I love the way the seeds look- like tiny jewels.

I decided to incorporate a salad made with pomegranate seeds dressed with a pomegranate vinaigrette. I had a huge bowl filled with pomegranate seeds and a chunk of feta in my fridge. I thought of feta cheese to cut the tang of the pomegranate seeds. For the vinaigrette, I took out my bottle of pomegranate glaze. I mixed in some white wine vinegar a bit of honey and of course some extra virgin olive oil. The flavors were incredible- tangy, sweet and savory.

Definitely a great salad for the big feast..

Brownie Bites with Peppermint Bark Icing

Brownie Bites with Peppermint Bark Icing I have used the same recipe for the brownie bites as before. The difference is that I used extra light olive oil instead of butter (I wanted to make it healthier), and I have used a small cupcake container to make these delicious tiny bites for the holiday season.

Peppermint definitely comes to mind when I think of this time of year. One of the things I like to do when I am at the mall is to visit Williams Sonoma. They always have some kind of sample- especially this time of year. I love eating their peppermint bark- it is simply delicious. I have never bought it since it is quite expensive but I do eat lots of samples while I am at the store.

When Trader Joes opened up in Millburn, I was of course ecstatic. During the holiday season they have a variety of treats and chocolates.

While I was thinking about making these treats, I was envisioning icing with crushed peppermint sticks. So, when I went shopping at Trader Joes for my ingredients, and I didn’t find the sticks, I decided to buy the peppermint bark instead. It was much cheaper than the one I sample in Williams Sonoma.

I brought it home and tried it- well, it was delicious as well! I crushed it in a food processor and added it to the icing. These bite sized brownies are delicious and ideal to make for the holidays- enjoy!

  • 2 cups evaporated cane juice
  • 1 cup extra light olive oil
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1½ cups white whole-wheat flour
  • ½ teaspoon baking powder
  • ½ cup cocoa powder
  • ½ teaspoon salt

Preheat oven at 350 degrees.
Line a small 24 cupcake pan with cupcake liners.

In a large bowl, blend the sugar, oil, eggs and vanilla extract well. Sift the flour, baking powder, salt and cocoa powder. Slowly add the dry ingredients mixing well in between. Pour the batter evenly into each small cupcake liner. Bake for 12 minutes if you like gooey brownies- a few minutes more if you like them more cake-like.

Peppermint Bark Icing

  • ½ cup (4 oz) low fat cream cheese
  • 1/8 teaspoon peppermint extract
  • 1 cup sifted powdered sugar
  • ½ cup crushed peppermint bark

In a mixer, add the cream cheese and begin beating until smooth. Sprinkle the powdered sugar and add the peppermint extract. Beat till the icing is smooth. Take out and add the peppermint bark. With a knife cover the top of each brownie bite.

Chocolate Raspberry Brownie Swirl

Chocolate and Raspberry Swirl Brownie I can use just one word to describe this dessert- delicious!

My daughter and  were going to a friend’s house for dinner. I was quite tired from a hectic week but wanted to take a dessert with us. I wasn’t in the mood to buy anything from a store- I wanted something homemade. I started to think of something that will be quick and easy yet perfectly suitable for an after dinner treat.

Brownies came to mind. I don’t make them that often- I am not a big chocolate person. I usually look for desserts with fruit or caramel. Flan, according to me is the be all end all dessert… I love it.

Anyway, so while I was trying to come up with a dessert, I thought of making brownies- but a bit differently. I looked in my fridge and found raspberry jam- perfect! I made the brownies like I normally do, but this time I used extra light olive oil instead of butter- so they are even healthier. I poured the batter into the prepared pan and then swirled some melted raspberry jam.

I also drizzled some white chocolate ganache on top once the brownies cooled down a bit- it’s completely optional since I didn’t notice a big difference with the ganache on top. I did notice the raspberry swirl inside the treat though. It was absolutely delicious. The brownies were light yet had a dense chocolate taste. The raspberry flavor goes so well with chocolate- a match made in heaven.

My daughter thought they were the best brownies she had ever had. I toasted some for my husband topped with some french vanilla ice cream.

I have to say- this one was a big success. Perfect to make for the busy holiday season!

  • ¼ cup seedless raspberry jam, melted

Preheat oven at 350 degrees.
Butter an 8X8-baking pan.

In a large bowl, blend the sugar, oil, eggs and vanilla extract well. Sift the flour, baking powder, salt and cocoa powder. Slowly add the dry ingredients mixing well in between. Pour the batter into the pan. Pour the raspberry jam all over the top and spread it through the cake with a butter knife. Bake for 35 to 40 minutes if you like gooey brownies- a few minutes more if you like them more cake-like.

Garlicky Broccolini

Garlicky Broccolini I really like this vegetable. This is the first time I cooked with it and I have to say the results were wonderful. I used to think it is young broccoli but it more of a cross between chinese broccoli and mustard greens- that is how it tastes. There are some notes of asparagus as well.

I saw broccolini at Trader Joes and picked it up- not knowing what I will do with it.

The stalks reminded me of asparagus, so I peeled the outer skin. I then made a paste out of garlic, salt, olive oil and pepper- really simple. I slathered it all over the broccolini and roasted it on a lined cookie sheet- till golden brown and soft. 

My daughter was quite skeptical when I served it to her. I asked her to try a little bit- she did and thought it was not bad. I thought it was delicious. I think this will be wonderful in a stir fry but I also think this would be perfect for a holiday dinner. It is easy to make and will complement any menu. Definitely give this one a try…

  • 1 pound broccolini, ends trimmed
  • 2 garlic cloves
  • 1 teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • Pepper

Preheat the oven to 350 degrees.

Pound the garlic, salt, olive oil and pepper in a mortar and pestle till smooth. Place the broccollini on a lined cookie sheet. Slather the garlic mixture all over the vegetable and roast till golden brown and tender, about 15-20 minutes.
