Baked Chicken Sausage and Spinach Pasta

Sausage and Spinach Pasta I love one pot meals. They are so simple and quick to make- I try to come up with them as much as possible. What is better than a one pot meal, you ask? Well, it would be the one for which I have all the ingredients at home- no need to go to the grocery store. I realize most people hate going to the market- I am not sure why.. I love going to the grocery store. I am at a food store, literally everyday. I love coming up with what to make in the morning and then I go shopping for all the ingredients. I sometimes get embarrassed about being seen at the store by the employees. They all recognize me and sometimes ask me (in a very nice way) why I am here every day??

Anyway, as I was saying, this dish was very easy to make. I always have chicken sausage and chopped spinach in the freezer. I also make a batch of tomato sauce every week or so- it is great to have around, especially when packing lunch for my daughter. I put all the ingredients together and baked it in the oven. Bacon Cheeseburger Macaroni

Bacon Cheeseburger Macaroni This is a great dish that incorporates macaroni and cheese with tiny little burgers. I came up with this dish when I trying to cook delicious food for my nephew who was recuperating from a surgery. He loves macaroni can cheese and really loves cheese burgers.. so I decided to incorporate all of those ingredients into this dish.

I had to add some veggies- so decided to add some chopped carrots and peas. I flavored the ground beef with garlic and parsley and made tiny little burgers. I used pancetta and shallots to give yummy flavor to the béchamel sauce. All in all it was a delicious concoction. It was a special treat for him and I was glad I could come up with something he would enjoy….

Beef Stew with Orange and Cinnamon

Beef Stew with Orange Delicious, delicious- one of my favorite stew recipes. Orange and cinnamon are synonymous with cold weather. I had some stew meat in the freezer. I took it out the night before and made the stew in no time. All you need is some chicken broth and red wine. I always have mushrooms in the fridge- my daughter loves them and they are super versatile. I decided to add them to the mix. I zested and juiced an orange and added a cinnamon stick. It is amazing what those flavors put together do to any dish- whether it is a sweet or savory dish.

The stew took no time to put together. It cooked on the stove for a good half an hour, forty minutes. You can cook it even longer, depending on the meat.

Everyone loved it- the only problem was that it finished in one sitting. Everyone wanted it the next day.

Chorizo Lasagna with Poblano Bechamel Sauce

This lasagna is a bit involved and may take a bit longer than your regular, run of the mill lasagna- but it is so worth it! The flavor is unbelievable. I decided to give the lasagna a huge punch of flavor by using, my favorite, Latin flavors!

I first roasted a medley of veggies including poblano pepper, onion, garlic and combined them all with fresh cilantro in a blender. I had a thick paste which I added to a white sauce also known as a béchamel sauce. The sauce had an amazing, smoky flavor.

I then made the meat mixture with turkey meat, onion, garlic and fresh chorizo. I also added chipotle pepper to the mix to mimic the smokey flavor of the green sauce. I always have fresh tomato sauce which I used in conjunction with the green béchamel sauce to make the dish.

I layered the lasagna with a mixture of shredded Mexican cheese- it brought the flavor profile to another level. This is one of my favorite lasagnas.. so please try it…

Pasta with Swiss Chard, Corn and Pancetta

Swiss Chard Pasta This pasta came about after my daughter brought a bunch of vegetables home from the farmer’s market at their school. It is a great program to introduce kids to different fruits and vegetables. Kids are more likely to eat the vegetables when they make the choice themselves.

They will also be more interested in maybe helping at home to cook the veggies for dinner.

In my case I had a bunch of lovely swiss chard and some corn. I decided to make a pasta dish. I had a stuffed pasta in the freezer I purchased at Eataly in NYC.

I sauteed some pancetta and added shallots and garlic. I then added the fresh corn, some fresh tomato sauce and the swiss chard. It was super simple and very delicious. I cooked the tiny pasta and added some pasta water into the sauce. A few minutes later I had a delicious, healthy- farm to table food.

Tofu Noodles with Peanut Sauce

I have been buying a lot of tofu noodles from the Asian store. I love the idea of having noodles that have no carbs and are full of protein. The great thing is that my daughter loves them as well.. so I try to make them as often as I can.

This particular dish is a one pot meal- which is my favorite to make! I decided to add all sorts of veggies including mushrooms and bok choy. For protein I used chicken- but any meat or fish can be used. One can keep it vegetarian and eliminate the meat altogether.

I made a delicious sauce with peanut butter, tamari, lime juice, palm sugar, fish sauce.. etc. I basically took out what I had in my pantry and added it to the sauce.. it was delicious. My daughter who is not a peanut butter fan loved the noodles… somehow she didn’t notice the peanut flavor…

This is a great noodle dish to make through the week…

Keema Mattar (Ground Turkey with Peas)

Keema Mattar This is a very simple, weeknight meal one can whip up in no time. Keema is one of my favorite things to eat and make. Keema is essentially ground meat cooked in spices, onion, ginger and garlic- the rest is up to you. I love pairing the meat with different vegetables to make a great one pot meal. Brown rice or fresh make whole wheat rotis can be served to create and delicious and wholesome meal.

I made this one with peas but I also added a variety of different spices- which are not my usual. I used curry leaves and mustard seeds. The mix of spices gave this dish a fabulous flavor. My daughter loves keema- her favorite is the one I make with cauliflower. She devoured it with two big rotis and a glass of milk….
