Apple Crisp- Easy Fall Dessert

I am in the holiday/fall mood and all I want to do is cook with all the ingredients that remind me of cold weather. Apples is one of those ingredients that makes me think of  cosy evenings in my house with a cup of hot apple cider or eating a delicious hot apple crisp with some ice cream.

I made this last weekend for a dinner at a friend’s house. I used my favorite apples- honey crisp but any kind of apples can be used-whatever you like.

I used a very typical crisp topping including flour- I used my usual white whole wheat flour and oats. I paired it with walnuts and cinnamon- and butter, of course. You can’t really go wrong with any of these ingredients.

The apples are mixed with orange and lemon zests giving the filling a wonderful citrusy, fresh taste. Everyone enjoyed the dessert. I served it with pumpkin gelato- which I made a few days ago. It came out really well- if I do say so myself.

The whole combination was a very successful one. This is another great idea for Thanksgiving. I will post the gelato recipe soon.

  • 2 pounds variety of apples (about 4 – 5 medium), cut into 2 inch pieces
  • Zest and juice of one lemon
  • Zest and juice of one orange
  • 1/3 cup turbinado sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves

Mix all the ingredients in a medium sized baking dish. An 8 X 8 square or an oval shaped will be fine.

Topping

  • 1 cup white whole wheat flour
  • 1/3 cup turbinado sugar
  • 1/3 cup brown sugar
  • 6 tablespoons unsalted butter
  • 1 teaspoon cinnamon
  • 1 cup toasted and chopped walnuts
  • ½ cup toasted oats

Preheat oven to 350 degrees.

In the bowl of a mixer, add the flour, sugars, and butter. Using the paddle attachment, incorporate the butter into the dry ingredients until the mixture looks mealy or crumbly. Stir in the oats and nuts.
Distribute the topping over the apples. Bake for an hour, or until the topping is golden brown and fruit is bubbling. Cool slightly and serve warm.

Quick Broccoli with Orange Zest

Broccoli with Orange Zest and Garlic I made this dish with the citrus chicken. I love making broccoli and sometimes run out of ways of reinventing the vegetable. I sautéed up some sliced garlic to start with. I then added the broccoli. I added some delicious white wine, orange juice and zest.

This dish has incredible flavor thanks to the garlic, wine and orange zest. It is simple to make and it complements the citrus chicken beautifully.

Make this side dish next time you are confused about how to make your broccoli!

  • 2 tablespoons extra virgin olive oil
  • 4 cups broccoli florets
  • 3 garlic cloves, sliced thin
  • ¼ cup white wine
  • Zest and juice of one navel orange
  • Salt

Heat a large frying pan with the olive oil. Add the garlic and orange zest and sauté for 30 seconds on medium heat. Add the broccoli florets and sauté on high heat for 2 to 3 minutes. Add the white wine, orange juice and salt. Mix well and cover with lid on a low heat for 5 minutes or till the florets are slightly tender but not over done. Serve with any protein.

Beef Stew with Orange Delicious, delicious- one of my favorite stew recipes. Orange and cinnamon are synonymous with cold weather. I had some stew meat in the freezer. I took it out the night before and made the stew in no time. All you need is some chicken broth and red wine. I always have mushrooms in the fridge- my daughter loves them and they are super versatile. I decided to add them to the mix. I zested and juiced an orange and added a cinnamon stick. It is amazing what those flavors put together do to any dish- whether it is a sweet or savory dish.

The stew took no time to put together. It cooked on the stove for a good half an hour, forty minutes. You can cook it even longer, depending on the meat.

Everyone loved it- the only problem was that it finished in one sitting. Everyone wanted it the next day.

Orange Chipotle Turkey with Make Ahead Gravy

It is that time of the year again- my favorite. Since last year, we have been spending Thanksgiving in Mexico. I really didn’t want to do it – not wanting to miss my all time favorite holiday. I love it so much because it is all about food- thats it… nothing else. I agreed to the vacation since everyone else wanted to go at that time of year. I decided to cook and celebrate Thanksgiving the following weekend- and it was great! I didn’t find the crowds in the food stores and everything was cheaper- including the turkey.

I make turkey breast, as everyone in my family prefers white meat. It works well for us- plus not a lot of leftovers. I know most people like a lot of leftovers- but I don’t. I like to be done with the meal and not worry about consuming any food later in the week.

Anyway, I digress from discussing this delicious turkey. I am still the the Latin cuisine mode- so guess what? This years Thanksgiving meal is made with lots of Latin flavors. Enjoy!!
Compound Butter

  • 3 tablespoons butter, melted
  • Zest of one orange
  • Zest of one lemon
  • 2 garlic cloves, grated
  • 2 teaspoons salt
  • 1 teaspoon smoked paprika

Mix the butter with orange and lemon zest, garlic, salt and paprika

  • 1 7 to 10 pound turkey breast
  • Salt
  • Pepper
  • 1 orange, cut into eight pieces
  • 1 lemon, cut into eight pieces
  • 2 cups turkey or chicken broth
  • Salt
  • Pepper

Orange Chipotle Turkey

Preheat convection oven to 325 degreed F.

Place the turkey onto a rack in a roasting pan. Turn the turkey over and place the cut up orange and lemon inside the cavity. Sprinkle salt and pepper liberally and turn it breast side facing up. Loosen the skin and carefully spread half the compound butter. Spread the rest all over the skin. Sprinkle the top with salt and pepper. Pour the broth to the bottom of the roasting pan. Keep aside.

Glaze

  • 2 cups fresh orange juice
  • ½ cup honey
  • 1 tablespoon orange marmalade
  • 1 tablespoon chipotle in adobo (just the sauce)
  • Salt

Add the orange juice into a small saucepan. Bring to a boil and simmer for ten to fifteen minutes or till it reduces by half. Add the honey, marmalade and chipotle sauce. Cook for another 2 minutes and add salt. Let cook and keep aside. This can be prepared 2 days in advance.

With a brush add the glaze all over the turkey. Roast the turkey glazing every 15 minutes. Roast till internal temperature reaches 158 to 160 degrees F. Take out of the oven and place onto a platter and cover with foil to rest for at least 20 minutes.
In the meant time, the gravy should be heating on the stove. Reduce the juices at the bottom of the roasting pan by half and add to the gravy. Slice the turkey as needed and serve with gravy.

Make Ahead Gravy

  • 4 cups homemade or store bought turkey stock
  • 1 large shallot, chopped
  • 2 garlic cloves, chopped
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • Salt
  • Pepper

In a large frying pan, heat the butter and add the shallot and garlic. Saute for a minute over medium heat. Add the flour and turn the heat to medium high heat, stirring constantly. Cook the flour for at least 10 minutes or till it turns chocolate brown. Slowly add the stock, whisking vigorously at the same time. Bring to a boil and check for seasonings. Add salt and pepper accordingly. Once the turkey is done, add the drippings to the gravy and reheat.

Blueberry and Orange Duffins

Wild Blueberry and Orange Duffins Here is my latest version of our favorite sweet snack. My daughter loves duffins and can’t get enough of them. She is always reminding me to make more.

Honestly- I keep forgetting or get too busy- and then remind myself how quick they are to make. I am usually done mixing them before my oven gets to the right temperature.

So, I finally decided to make them as I got back from Trader Joes. I bought dried wild blueberries and planned on adding them to the duffins. I paired the blueberries with some orange zest. I added half the amount of the milk in the original and substituted orange juice for the other half. The combination of the zest and the juice imparted wonderful flavor to the duffins.

I tasted one as they came out of the oven and really liked it but was a bit afraid my daughter may not enjoy the flavor. I gave one to her later in the afternoon and she claimed they were the best duffins I have ever made.

So, there you go- try the blueberry and orange ones- they are really good.

Apple Orange Duffins

Apple Orange Duffins Here is another version of one of our favorite treats in our house. My daughter can’t get enough of these and asks me to make them all the time. Her favorite are the jelly filled ones but she will eat any kind I make.

For these particular ones, I decided to do a yummy filling in the middle with apples and oranges. It is amazing how well the two flavors complement each other. I zested and juiced a navel orange and used the zest for the actual batter and the juice for the filling. I cut up my favorite apples- pink lady into chunks and added some sugar, cinnamon and lemon zest. I let the mixture sit for a while for the flavors to marinate.

I then made the usual batter and added just a bit of the filling in the middle of each duffin. Of course I coated them with the yummy sugar mixture and they were a hit. My daughter loved them.

Israeli Couscous with Cranberries and Pecans

Couscous with Cranberries and Pecans This is yet another great side dish to serve with any kind of protein. It will go really well with burgers, hot dogs, steaks and fish.

I made it with some grilled chicken. I used the harvest grain blend from Trader Joes which includes a few different grains including Israeli couscous.

I kept it simple with dried cranberries and pecans.

I made a quick orange dressing with fresh orange juice, orange zest, white wine vinegar and extra virgin olive oil. I mixed the yummy dressing into the cooked couscous blend and I had a delicious and healthy side dish.

My daughter didn’t care for the cranberries and nuts- so I took them out for her and she ate the grains. I made a simple green salad on the side and we had a light and delicious meal.
