Pasta with Roasted Vegetables

Roaste Pasta PrimaveraThis is a really delicious one…. it is hard to remember it is made without any meat. One of my husband’s favorite pasta dishes is pasta primavera. It is typically made with seasonal vegetables, a delicious marinara sauce and pasta of choice. I have made many different versions of it over the years but I have to say, this one is my favorite.

I roasted some red pepper, squash and zucchini with olive oil, salt and pepper. Roasting vegetables brings out the nutty, sweetness which is delicious in this dish. I mixed the veggies in a mixture of pesto and homemade marinara sauce. To make even more different, I tossed the pasta with some chopped fresh mozzarella.

I then roasted the dish in the oven till the cheese became soft and oozy. I served it with some delicious garlic bread and a yummy red wine… and we did not miss the meat…

A lot of people are intimidated and purchase them already roasted from the stores.. while that is okay in a pinch- it is really easy and satisfying to make your own… and once one tastes the difference, one can never go back.. Asparagus Pesto

Asparagus Pesto I love anything with pesto- pasta, bread, rice, as a dip, on chicken or fish.. and the list goes on. Pesto can be made with a variety of different ingredients including different vegetables. I have made pestos in the past with zucchini, broccoli rabe, etc.. this one is made with asparagus. I wanted to do a vegetarian meal and had asparagus in the fridge. Instead of making a boring pasta with asparagus, I decided to make a pesto instead.

I blanched the vegetable and then made the pesto just like I would with basil or any other ingredient. Speaking of basil, I did use it as well. I also used pistachios instead of pine nuts- no good reason really except that I love the color pistachios bring and as well as the flavor. I served the pesto with whole wheat past and some homemade focaccia. I bought some pizza dough from our local pizzeria. I rolled out the dough and topped it rosemary, salt, olive oil and cherry tomatoes.

The meal was delicious and simple- the glass of wine was yummy with the asparagus pesto…

Arugula Pesto with Pine Nuts

Arugula Pesto with Pinenuts1 I love making pestos. I don’t find myself making a whole lot of different kinds of basil pesto for some reason. I do love it but I always find myself making a sauce with another herb or vegetable.

This on is an arugula pesto. Arugula is one of my favorite greens. I love its versatility.. I can use it in a salad, cook with it and now make a pesto with it.

I simply paired it with garlic and pine nuts. I don’t like to use too much olive oil but it is important to use a really good quality one- so a little goes a long way. I used Pecorino instead of Parmesan as Pecorino has a stronger taste which is great for the bitter greens.

That is all I needed to make a delicious sauce. I used it for pasta and in this case- for pizza. Even my daughter ate it- she doesn’t usually like arugula but she really enjoyed the pesto on the pizza.

Zucchini Pesto with Thyme

Zucchini Pesto with Thyme This is a great sauce to make in the spring/summer. I love making different kinds of pestos to use with pastas, on top of fish or any meat, or even as a sauce for pizza. In fact I have made one in the past which I used in numerous dishes.

This one has fresh thyme paired with pistachios. It is a delicious sauce to simply mix with pasta. I served it with brown rice pasta with some simple chicken on the side. The great thing about this pesto is that kids will eat it.. they have no idea what is in there..

As my daughter was finishing her last bite, I asked her to guess the main ingredient in the pesto.. she had no idea and she was very surprised when I revealed it was zucchini…

Smoked Salmon and Pesto Scrambled Eggs

Smoked Salmon and Pesto Scrambled Eggs Since the beginning of the New Year, I have been very good about eating healthy and incorporating the right things during the day. I started a month long cleanse which will be coming to an end soon- I am glad I did it- I feel good and it motivates me to eat properly and exercise.

One of the things I am trying to eat more of is protein- especially the good kind. Salmon is the best way to get your protein- but the problem is that my husband and my daughter don’t enjoy eating the fish at all. I mostly end up eating it for lunch since neither of them are home.

I have been buying wild smoked salmon from Trader Joes. I usually make a sandwich or recently have started adding it to scrambled eggs. I beat two eggs and add sliced salmon and cook up the whole thing. I find the combination very satisfying, especially if I top it with some hot sauce- yum!

The other day, I bought some fresh, local pesto. I brought it home and started thinking about some yummy pasta dish I would use it in- but then I remembered I am trying to eat less pasta. So, instead I used it in the salmon and egg concoction. I just added a tablespoon to the beaten eggs and salmon. I then cooked it the same way I did before.

It was absolutely delicious. It brought the simple dish to a whole new level. I loved the sweet basil taste with the salty parmesan kick with the nutty pine nuts.

It is now a staple lunch for me – at least 2 to 3 times a week. It is very filling and satisfying. Try some pesto scrambled eggs with smoked salmon next time you are looking for a healthy lunch.

  • 2 eggs, beaten with 1 teaspoon water and ½ teaspoon salt
  • 1 teaspoon extra light olive oil
  • 1 tablespoon basil pesto
  • 2 to 3 ounces smoked salmon, sliced thin

Beat the eggs and add the pesto and salmon. Mix well. Heat a non-stick pan with the olive oil on medium high heat. Add the eggs and lower the heat to medium. Stir continuously with a wooden spoon till the eggs begin to set. Turn the heat off and the eggs will continue to cook. Serve with a salad or wheat toast.

Zucchini Pesto Pizzas with Fresh Mozzarella Cheese

Zucchini Pesto Pizza Okay, so this is a delicious concoction. While we were in Umbria at a very small yet great restaurant- we were served a variety bruschetta. One of them was green and tasted like heaven. We asked about it and found out it was made out of freshly picked zucchini. It was processed simply with extra virgin olive oil and salt. 

So, that is what I did. I bought some lovely looking zucchini from the farmer’s market. This pesto is so simple yet delicious. I made it and wasn’t sure what to do with it. My daughter had been complaining about me not making pizza at home. That is what gave me the idea to use the pesto for the pizza.

As usual I bought pizza dough from our local pizzeria and decided to make individual ones. I had leftover chicken which I decided to use for the topping. I spread the pesto on the rolled out dough and topped it with fresh mozzarella cheese and chicken pieces.

The pizzas were delicious! My neighbors were outside and I decided to give them a taste. Even the kids loved it! I told the parents that the pesto was made out of zucchini and that they should keep the main ingredient to themselves! All in all it was a great experiment. Try it, I bet your kids will love it too…
