Day Four- Lugano to Zurich

Day four was time to say goodbye to Lugano. I was a bit sad to leave the Italian part of Switzerland- there was really no difference between Como and Lugano- it seemed like we were staying in Italy. We took a a scenic train- Wilhelm Tell Express to Lucerne on our way to Zurich. The most beautiful scenery was to be devoured on the one and a half train ride. About an hour into the ride, we saw a distinct difference in the town names and language- it was all German… we had left the Italian region of Switzerland. We got off and took a two and a half hour long steam boat. We sat down in the dining area and ordered some delicious local Swiss white wine and lunch. It was a limited menu- we ordered a delicious mixed salad, lasagna, ravioli and a fillet of Perch. The fish was clearly the highlight of the meal.. although the Kirsch fruit cake was quite delicious as well.

The boat ride was absolutely magical- Lake Lucerne was a turquoise green. The little villages off the water were breathtaking. After an amazing experience, we arrived in Lucerne. A 40 minute train ride later, we arrived in Zurich. A short walk and we were in our hotel! We quickly unpacked and went downstairs for a welcome drink. We enjoyed a glass of Rose and beer and ventured out into the main area of Zurich. We walked by the river and found a German style sausage place. They had several different kinds of sausages, including grilled chicken legs- which were delicious. We also ordered a curry sausage which was served sliced with a curry sauce on top. We also ordered fresh fries, white wine and beer. We stood at the counter and ate the delicious street food. We then walked around a bit more and admired the beautiful city.

I can’t wait to explore more of Zurich and Lucerne in the next few days. So far the visit has been lovely. The people are very friendly, the vistas are gorgeous, the wine is delicious and food is quite good- what more could a girl ask for???

Baked Chicken & Sausage

Baked Chicken and Sausage

This is a delicious, easy winter dish to make on a weekday or a weekend. All one needs is some delicious aromatics like cilantro and garlic and of course my all time favorite spice- smoked paprika!

  • 2 pounds chicken leg pieces, skin on
  • 4 to 5 pork sausages, cut in half
  • 2 tablespoons extra virgin olive oil

Marinade

  • 4 garlic cloves, peeled
  • 1 cup cilantro, chopped
  • 2 teaspoons smoked paprika
  • 2 teaspoons salt
  • 4 tablespoons extra virgin olive oil

Sauce

  • ½ cup orange juice
  • ½ cup chicken broth

Preheat oven to 400 degrees F.

Add the garlic and salt into a mortar and pestle. Smash down till a thick paste is formed. Add the paprika and cilantro and mash again. Add the olive oil and form into a paste. Marinate the chicken and sausage with the garlic mixture for at least 2 to 3 hours. Transfer chicken and sausage to a lined baking pan.
Reheat the frying pan and add the orange juice and chicken broth. Scrape the bits off the bottom of the pan and bring to a boil. Reduce by half and keep aside.

Heat a frying pan with the olive oil and brown the chicken pieces, both sides for 3 to 4 minutes. Transfer back to the baking pan. Roast in oven for 40 to 45 minutes while basting with the pan sauce periodically. Take out and serve warm.

Sausage and Eggs Cooked in Marinara Sauce

Sausage and Eggs in Marinara Sauce I made this on a busy Sunday late morning/early afternoon. I picture this being made the day after a big holiday dinner- especially if you have a big crowd.

I cooked it for the three of us but it can be made for a big crowd.

I had leftover homemade tomato sauce. I have to say, after returning from Italy- I am incapable of opening a can of San Marzano tomatoes to make marinara sauce, instead I have to buy fresh tomatoes and go through the lengthy process of making it at home. The taste difference is unbelievable- anyway, so that is what I had in the fridge. I also had a pack of chicken sausages in the freezer. I thawed them, took the casing out and chopped them up.

I sauteed them and added the tomato sauce. I cracked a few eggs and covered the pan and in a few minutes, brunch was done. I had some bake your own baguettes from Trader Joes. I baked one of them and made a big green salad.

The brunch was delicious! So easy- and the possibilities are endless… You can add all sorts of meats, or shrimp to this- or make it Mexican and serve it with guacamole, etc.

Definitely make this – it’s great!

  • 4 chicken sausage links, take the casing out and chop into small pieces
  • 1 tablespoons olive oil
  • 1 cup homemade tomato sauce
  • 3 or 4 eggs
  • Salt
  • Pepper

In a wide frying pan, heat the olive oil. Add the sausage pieces and sauté on medium heat for 5-6 minutes or till golden brown. Add the tomato sauce and heat for a minute or two. Crack each egg distributing them evenly in the pan. Cook covered for 3-4 minutes depending on how cooked you want the eggs. Sprinkle the eggs with salt and pepper.
Serve with a hot baguette and green salad.
