Brown Rice Vegetable Pulao

  • 1 tablespoon butter
  • 1 tablespoon extra light olive oil
  • 1 cup brown rice, rinsed
  • 2 ½ cups vegetable broth
  • 2 teaspoons salt

Heat a saucepan with the butter and oil. Add the rinsed brown rice and sauté on medium heat for 2 minutes. Add the broth and salt. Bring to a boil and simmer, covered with lid for 30 minutes or till rice is done. Let cool and keep aside.

  • 2 tablespoons extra light olive oil
  • 1 teaspoon ground cumin
  • 1 yellow pepper, chopped
  • 1 cup green beans, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon salt
  • ½ cup cilantro, chopped
  • ¼ cup dill, chopped

Heat a wide frying pan with the oil and add the cumin and sauté for 10 seconds. Add the pepper, beans, onion, garlic and salt. Saute on medium heat for 4 to 5 minutes. Add the cilantro and dill as well as the cooked and cooled rice. Saute on medium heat for 3 to 4 minutes or till the rice is heated through. Check for seasonings and serve.

 

Cilantro and Dill Rice with Green Peas

Cilantro and Dill Rice with Green Peas This green rice has amazing flavor with cilantro and dill. The great thing is that the rice is cooked in the green sauce.

I blended a mixture of cilantro, dill, green onions and garlic. I then sauteed the sauce in oil and cumin seeds. This mixture smells amazing and can be used as a basic sauce for cooking all sorts of things- including shrimp, chicken or any kind of vegetables.

I then added some basmati rice, water or chicken broth and cooked the rice as I normally would. Right before the rice is done, I add a cup of frozen peas. I let the rice sit with the lid on and the peas cook in the steam.

This rice is delicious as a side dish with anything or even as light meal.

I love making it with some lentils on the side and I have a perfectly balanced dinner.

Vegetable Pulao with Paneer

Vegetable Pulao with Paneer This is a one-pot meal. I love when I am able to come up with something that has everything. This rice dish can be served as an entree as well as a side dish. Ideally it should be served with a delicious bowl of lentils and some raita– perfect!

It also can be served with a  roast chicken or fish – really anything. It is extremely versatile.

Preparing it is a cinch. The mixed vegetables can be fresh, if you have time to chop and prep, or they can be frozen. I always have packaged paneer in my freezer and am able to thaw and cook with it in no time. If you don’t have access to paneer (it is available in the refrigerated section at Whole Foods), shredded chicken or any other meat can be substituted.

We had it for lunch on Sunday with a big bowl of yogurt. It was delicious and very satisfying. The spice level can be adjusted according to taste. We tend to keep things mild so Sia can eat as well. I like things spicy and end up pairing a green chili pickle with the rice dish- yum!

A Pantry Recipe: Vegetable Pulao

vegetable-pulao This is a great side dish that goes really well with a variety of different entrees. The rice dish already has a bunch of vegetables, so all you need to do is grill or roast some meat and you are good to go! You don’t even need a salad in case you are too lazy to make one!- which I admit- I am most of the time. I think that is why I am always looking to come up with dishes that have all the food groups in one! It is hard to come up with different rice dishes with new and delicious flavors all the time- this one is a winner!

This particular one came about with whatever I had in the fridge. I had bought some vidalia spring onions from the farmers market. Carrots, dill and cilantro are always in my fridge. I also decided to add my other staple ingredient- frozen spinach. I love adding spinach to all sorts of dishes- I love the flavor and my daughter loves it in anything. I make all my rice and couscous dishes with chicken broth- I always have lots of boxes sitting in my basement. So making this dish was a cinch- I just had to come up with the recipe in my head- which didn’t take very long either. 
It is nice to have some dishes in your repertoire that can be made easily with the ingredients you have on hand all the time. Especially if you have a busy, crazy day and do not have time to think about dinner let alone go to the grocery store. Most people I know don’t like going to grocery stores or don’t have time. Me, on the other hand, love-love going food shopping- especially the day I am going to cook something- but it is not possible all the time and so I love being able to come up with something without leaving the house.
This was a big success- my daughter loved it. I served the vegetable rice dish with pink lentils and it was a complete meal! Simple, easy and very tasty.
