Leftover Shrimp and Sausage Paella

Leftover Paella This is what I came up with the leftovers from last night’s dinner. I had some shrimp- not too many, so I chopped them up into small pieces so a little goes a long way.

My husband loves paella, especially the kind with lots of red sauce- he is crazy about anything with red sauce.

I made this paella with arborio rice since it is creamier than the regular one. I cooked it like a risotto but didn’t stand in front of the stove, stirring constantly. Instead I added most of the broth at once and let it cook. It resulted in a very delicious and perfectly cooked paella.

To start the process, I crumbled up the leftover chorizo and cooked it with the onions and garlic. I added rose wine because that is what I was drinking. Tomato sauce and chicken broth later, I had a yummy dish. By adding the frozen peas, I had a one pot meal.

A neighbor and my daughter’s friend stopped by and joined up for dinner. They both ate up the paella and complemented on the taste.

Next time you have leftovers- make a paella!

Off To Umbria Next Week

I have been planning our trip to Umbria for 6 months now- it’s coming up- we leave on Friday, August 28th. It took me a while to convince my husband to go back to Italy. He wanted to go somewhere new- but I feel a special connection to Italy. Not sure if it’s the food, wine or the good looking, well dressed people. Oh- yes the gelato helps as well- and the cappuccino- the best I have ever had! We were there almost ten years ago- and I have been wanting to go back for ever. Now that it is almost here, I am excited and sad at the same time. I love booking a vacation months in advance so I can think and anticipate the trip-that is my favorite part. The trip itself goes so fast and the anticipation is much sweeter. 

I am very excited about learning how to cook a few local umbrian dishes from an Italian woman who does not speak any English- and I don’t speak any Italian- this should be very interesting. We will go to the market to buy the ingredients and then come back to the apartment and cook a complete dinner. Did I mention we will be staying in an apartment in a small medieval town, Spello. Spello has tiny cobblestone streets and is known for it’s olive oil, truffles and pottery- I am in heaven!

My plan is to blog from Spello documenting my eating and drinking adventures- I will not be emailing my usual recipes next week. I am looking forward to learning lots of new techniques and recipes to share with all of you while I am there and once I get back.

Perfect Summer Drink Recipe: Red Sangria

When I think of summer,  Sangria comes to mind- so when Memorial Day quickly came our way, it was time to make some! I have been thinking/talking about Sangria for a few weeks now. During a street fair in our town, a local wine store was having a Sangria tasting. A new product was being launched- I was quite skeptical about what was about to come out of the red wine like bottle. I tasted it and was pleasantly surprised! It was very good- the nice man told me about the mixed drink and how it only had red wine and fruit puree. I wanted to buy it thinking how easy it would be to open a bottle of sangria in a moments notice but of course the mixologist in our family- my husband wouldn’t hear of it! He wanted to make his own, even though he admitted the bottled one was pretty good. I had looked up several recipes including one with passion fruit puree- which jumped out at me immediately since passion fruit is my all time favorite fruit. I don’t get to eat it too often around here and when I do, it’s very expensive but it is SO worth every penny- if you have never tasted a real passion fruit you have to try it- it is kind of a mix between a mango, guava and a peach but a lot better and intense! Anyway, I suggested the recipes to my husband but he refused and wanted to do research himself and come up with his own concoction. We went out to the ironbound section of Newark for a fabulous Portuguese/Spanish meal on Saturday and had a great tasting sangria there- it was not very intense in alcohol but was delicious. It reminded me of the sangria we had in Barcelona- it was our first day there and we had just unpacked and settled into our apartment. To keep awake we decided to walk to the popular area of Las Rambla. After a while we sat down in the median at a cafe and indulged in the biggest glasses of sangria I had ever seen! It was the most delicious sangria I have ever had. While in the Newark restaurant, I asked the waiter for the ingredients and they were quite standard- wine, simple syrup and fruit- quite easy to replicate at home.

My husband’s concoction was extremely delicious- it was tangy and sweet and the alcohol was apparent as well. A very well balanced drink that went really well with salsa and guacamole and chorizo burgers- recipes to come in the next week or so. I predict a lot of sangria in our future this summer!
