Lemon and Dill Risotto

   

Lemon and Dill Risotto There is nothing better than a bowl of creamy, cheesy risotto.. well, maybe a bowl of creamy, cheesy risotto topped with dill shrimp scampi. It was a delicious combination of flavors. The shrimp had garlic, dill and lemon juice… so, I decided to mimic the flavors in the risotto as well. I love making risotto.. it is like having a blank canvas.. I can do whatever I want with it.

I started with garlic and shallots. I added the rice, some white wine and broth. Once the rice was almost cooked, I added half and half, cheese, lemon zest and of course the main ingredient of the evening- dill. The green specks looked amazing against the snowy white rice. It tasted even better, especially with a huge helping of the shrimp scampi…

Shrimp Scampi with Dill

   

Shrimp Scampi with Dill I think of shrimp when the weather gets warm. Actually I make shrimp all year round- everyone loves it.. in any form. I love using them in Indian, Italian, Asian and Latin dishes… I guess what I am saying is that sky is the limit.

A friend gave me a bag full of dill since she had too much and she didn’t know what to do with it. I love dill, especially in the summer. As I brought the huge quantity home, I started thinking about what to make. I had a bag of shrimp in the fridge and had been thinking of making some scampi… both my daughter and husband love it… actually I do too- with lots of garlic and white wine and a huge baguette to soak up all the olive oil goodness. Speaking of olive oil, I don’t use butter for my scampi.. I prefer all olive oil. For this dish, I just added a small bunch of fresh, chopped dill. When it comes to dill, a little goes a long way. It provides delicious, earthy flavor to any protein, sauce or starch. Instead of pasta or bread, I decided to serve the shrimp with risotto… recipe to follow…

Zucchini Pesto with Thyme

   

Zucchini Pesto with Thyme This is a great sauce to make in the spring/summer. I love making different kinds of pestos to use with pastas, on top of fish or any meat, or even as a sauce for pizza. In fact I have made one in the past which I used in numerous dishes.

This one has fresh thyme paired with pistachios. It is a delicious sauce to simply mix with pasta. I served it with brown rice pasta with some simple chicken on the side. The great thing about this pesto is that kids will eat it.. they have no idea what is in there..

As my daughter was finishing her last bite, I asked her to guess the main ingredient in the pesto.. she had no idea and she was very surprised when I revealed it was zucchini…
