Bacon Cheeseburger Macaroni

   

Bacon Cheeseburger Macaroni This is a great dish that incorporates macaroni and cheese with tiny little burgers. I came up with this dish when I trying to cook delicious food for my nephew who was recuperating from a surgery. He loves macaroni can cheese and really loves cheese burgers.. so I decided to incorporate all of those ingredients into this dish.

I had to add some veggies- so decided to add some chopped carrots and peas. I flavored the ground beef with garlic and parsley and made tiny little burgers. I used pancetta and shallots to give yummy flavor to the béchamel sauce. All in all it was a delicious concoction. It was a special treat for him and I was glad I could come up with something he would enjoy….

Pork Stew with Orange Jerk Sauce

   

Orange Jerk Pork Stew This stew is absolutely delicious. I made my own Jerk sauce and decided to do a stew instead of the normal grilled Jerk chicken. I bought some lovely pork shoulder and got to work. I met a lovely Jamaican family last month and I asked them how what all they add to their Jerk sauce. They gave me the ingredients and I decided to give it a try. I didn’t make it super spicy as I am the only one who enjoys that.

I used orange juice and chicken broth for the liquid – which gave the stew amazing flavor. I decided to serve it with creamy polenta and a huge green salad… yum!

Turkey and Cremini Mushroom Cheeseburgers

   

Cremini and Turkey BurgersThis by far is the best turkey burger I have made and if I do say so- eaten as well. The patties were tender, juicy and delicious. The secret ingredient- are the cremini mushrooms. I processed them and added them to the ground turkey.  I also added basil and garlic- thats it. It is very simple, yet it is amazingly scrumptious.

Try these burgers and give them to your kids- they won’t know you have mushrooms in them…

Shrimp Cauliflower and Mushroom Stir Fry

   

Shrimp Mushroom Carrot Stir Fry I had lunch with a friend and we shared a stir fry which included small shrimps, broccoli, mushrooms and carrots. It was delicious and I thought a great combination.. so I replicated it at home a few days. I used cauliflower instead of broccoli. I used shrimp, mushrooms and carrots. I made a simple sauce to complement the veggies. I served the delicious stir fry with brown rice but I had it on its own- which was great.. I didn’t feel I was missing any rice. Try this one- it is delicious!!

Coconut Chicken Curry

   

Coconut Chicken Curry I have been holding cooking classes in my house for high school teenagers. I recently had a second one where I had three classes back to back and had a total of about 20 students. It was a lot of fun interacting with the kids and teaching them some delicious dishes. One of the dishes we made was this coconut chicken curry. Usually a chicken curry takes a while to make. My cooking classes last for about an hour and a half .. and so I wanted to make sure we have plenty of time to cook this dish as well as a rice pilaf. In order to make it quick, I used several tricks. One was to marinate the chicken over night with garlic, ginger, cilantro and lemon juice. The other thing I did was to roast a whole onion in the oven till it was soft and gooey.

When all the ingredients came together, it took no time at cook it up. The curry was delicious with the addition of coconut milk.

The kids really enjoyed the food and thought it was quite easy to replicate…

Leftover Meatball Lasagna

   

Leftover Meatball Lasagna Why not finish off the week with another pasta dish? Like yesterdays post, this one made with leftovers as well- I love making a completely different dish the next day. This one is quite simple as well since most of the work was already done. All I made was the béchamel sauce and layered the lasagna noodles with crumbled meatballs. It took almost no time and I had a delicious dish.

Meat Sauce Lasagna

I thought I would continue the pasta theme and post one of my favorite recipes. We all love lasagna in our family. I used the meat sauce from yesterdays post. The dish was even quicker to make than usual since most of the work was done.  I usually eliminate the ricotta but I decided to add it to this dish. I added tons of flavor including parsley, cheese and garlic.

All in all, it was a delicious lasagna…
