Besan Ki Roti- Homemade Spiced Gramflour Bread

Besan Ki Roti 1 This roti is ideal for breakfast or brunch. I grew up eating it for brunch on the weekends.

The bread is made with whole wheat flour and chickpea flour. The chickpea flour gives the bread a delicious nutty flavor and has protein as well.

The two flours can be paired with onion, ginger, green onions, cilantro and a bunch of spices- sky is the limit. You can make it as spicy as you want with a lot of chilies and cayenne pepper or keep it mild.

In this case, I added coriander powder, garam masala and salt. Once the dough is made, it is important for it to rest for a bit before the bread is ready to be rolled.

Rolling the bread can be difficult so don’t worry about the shape. Roll it out into whatever shape is the easiest. Once it is rolled out, cook it on a non-stick pan (it is the easiest to handle). Cook on both sides until golden brown. You can cook longer to make the exterior crusty. Either way, the bread is delicious.

Traditionally it is served with pickles and yogurt (to alleviate the heat from the bread). It can also be served with a fried egg on top- my favorite.

Scrambled Eggs with Potatoes and Tomatoes

Scrambled Eggs with Potatoes I love making eggs for breakfast on the weekend. I usually do scrambled- either plain or with some cheese. Some crunchy toast and a steaming cup of coffee- what else do you need?? Well, in my case, nothing else- okay some fruit as well.

My husband was watching food television- yes, most of us watch that channel at our house- and some food contest was going on where they made a huge amount of scrambled eggs with potatoes and peppers. When I asked him what he wanted for breakfast, he of course wanted scrambled eggs with potatoes.

I had purchased potatoes and garlic from the farmer’s market the day before and was excited to use the super fresh vegetables. I also had a big bowl full of cherry tomatoes from my backyard.

The dish was simple to make. I shredded a potato and cooked it on a non-stick frying pan with some oil. Once it started to develop a golden brown color, I added garlic and tomatoes with the green onions. A Serrano chili was added as well- it was super hot but so worth the flavor. Eggs with cilantro and cheese were added to the vegetable mix and stirred on a low heat until the eggs are the right consistency.

I served them with some toasted whole-wheat bread and coffee… a perfect breakfast…

Blueberry and Orange Duffins

Wild Blueberry and Orange Duffins Here is my latest version of our favorite sweet snack. My daughter loves duffins and can’t get enough of them. She is always reminding me to make more.

Honestly- I keep forgetting or get too busy- and then remind myself how quick they are to make. I am usually done mixing them before my oven gets to the right temperature.

So, I finally decided to make them as I got back from Trader Joes. I bought dried wild blueberries and planned on adding them to the duffins. I paired the blueberries with some orange zest. I added half the amount of the milk in the original and substituted orange juice for the other half. The combination of the zest and the juice imparted wonderful flavor to the duffins.

I tasted one as they came out of the oven and really liked it but was a bit afraid my daughter may not enjoy the flavor. I gave one to her later in the afternoon and she claimed they were the best duffins I have ever made.

So, there you go- try the blueberry and orange ones- they are really good.

Feta Omelet with Mixed Greens

Feta Omelet with Greens1 I am always looking to eat something yummy with the gg crackers I eat everyday. Since they are not the yummiest things to eat, I like to pair them up with a healthy and delicious protein. I usually eat a couple for breakfast with some low fat cheese and hummus. I try to have few for lunch as well and sometime run out of ideas.

I usually eat them with cheese and salmon or whatever protein I have in the fridge.

For this meal I decided to make an omelet for myself. I love eggs for the protein and taste. They fill me up, especially with the gg crackers. I took two eggs beaten with a splash of milk. I also added feta cheese – just a bit. Feta is lower in fat than the other cheeses so it is a good choice. I then added a cup or more of mixed greens right into the omelet. It is like having a salad with my eggs. I folded the omelet and served it with the crackers.

The omelet is simple and super healthy with just a bit of oil. Try this meal next time you run out of ideas for lunch or breakfast especially if you are eating the gg crackers.

Nectarine Duffins

Nectarine Almond Duffins As I sit here and write about this favorite snack in our house- I am hiding my laptop from my daughter who is sitting right next to me reading her book. You wonder why? Well, she has been asking me to bake some duffins for her for a while now and I just haven’t done it. If she notices the huge picture- I will be in big trouble…

She asked for them again yesterday and I told her we can make them today. So, once I am done with my writing for the day and after I finish cooking dinner- we will be baking some duffins- at least that is what I plan.

These ones are a bit different- I took advantage of all the delicious fruit in the farmers market and stuffed the duffins with chopped nectarines. I placed the delicious fruit in a small bowl and topped it with some vanilla sugar. I let it sit for a while and get juicy.

I then proceeded to use the same recipe for duffins and added the delicious nectarines in the middle. I was a bit hesitant to serve them to my daughter and her friends. Well, actually, my daughter is used to having all kinds of fruit. A lot of her friends are not so keen. To my surprise, everyone loved them…

So, here is another version of duffins- try the nectarine ones- they are delicious…

Jelly Filled Duffins

Jelly Filled Duffins If I could, I would make sure I have these on hand all the time. These treats are always so delicious and the fact that they are healthy, makes me love them even more.

Most of all, my daughter thinks these are the best things she has ever eaten. I do love making them as well, especially because they are so easy to make.

My daughter has been reminding me everyday to make these jelly filled duffins- and finally I did. I made them while she was skiing with her Daddy and was gone all day. When she came back, she sniffed her way into the kitchen and discovered these on the counter. Although she was extremely tired, she still found the energy to eat her dinner and devour a duffin.

I used raspberry jam but of course any flavor will be fabulous as a filling. The key is to make sure the filling is added in the middle of the duffin mixture. I added about two tablespoons of the mixture and then added a teaspoon of filling before covering the filling with the rest of the mixture.

A duffin is perfect snack to give your kids, especially with a tall, cold glass of milk. My daughter has it as a snack after school with some fruit on the side. It is keeps her going until dinner and I feel good about giving her something homemade and not processed.

Indian Style Spiced Omelet

Indian Style Omelet3 I make this for dinner, lunch or brunch whenever I run out of ideas. Most of the times I forget about this easy to make, spicy omelet. I grew up eating this at home for breakfast. It is flavorful and gorgeous to look at. Indian omelets unlike the french ones are cooked thoroughly and are cooked with all the flavorings and herbs instead of being stuffed with them.

It is also easy to make since most of the ingredients are always available. I have green chilies, green onions, tomatoes and of course cheese at home. I feel lost if there is no cilantro in the house. It is a pantry meal- pair it with a delicious green salad and it is a healthy, balanced meal.

You can make this omelet with almost anything in the fridge. My daughter was eating some leftovers and my husband was going out after work and so I was the only one without dinner plans. I made this delicious meal for myself and enjoyed it with a glass of white wine.
