Chinese Broccoli with Tofu Noodles

Chinese Broccoli with Tofu Noodles This was a great discovery and a huge success in my house. A friend told me about tofu noodles she bought at the Asian store. I found them in Whole Foods with the other tofu products. It is tofu shaped as noodles in a liquid- similar to the liquid in a tofu package.

I brought them home; drained them; rinsed and cooked them in the microwave for a minute. They were then ready to be used  like regular cooked noodles. I also had a big bunch of Chinese broccoli- one of our favorite vegetables to eat. It reminds me of broccoli raab- which is my favorite thing to eat.

I simply sauteed the Chinese broccoli with garlic and oyster sauce. I then added the noodles and some salt- and that was it. It was the quickest dish- almost comparable to the fish I made with it. Both the dishes were super easy and quick to make.

My daughter devoured the noodles and wanted more.  I wish I had made two packages instead of one… she would have eaten the whole package if I had let her. It is definitely going to be a staple in my house…

Try these noodles- they are healthy and delicious….

  • 1 bunch Chinese broccoli, ends trimmed and cut into 2 inch pieces
  • 2 to 3 tablespoons oyster sauce
  • 2 garlic cloves, minced
  • 2 tablespoons extra light olive oil
  • 1 to 2 cups fresh noodles (I used tofu noodles from the Asian store)
  • Salt

Heat a large wok-like pan with the olive oil. Add the broccoli and sauté on high heat. Add the garlic and oyster sauce. Mix well and cook on medium heat for 2 to 3 minutes. Add the noodles and mix well. Bring to a boil and check for seasonings. Add salt if needed and serve.

Perfect, and just in time for meatless Friday! Thank you. I’ve often wondered about how to prepare these low-carb noodles. This looks delicious.

I try to minimize pasta and was curious about a recent episode of Top Chef where Richard (contestant) made “linguine” out of sweet potato. I searched for the equipment that could do this. Some are quite pricey. Wonder if you’ve tried (and have had success) with these gadgets. Again, thanks!

Thanks for your comments. I have never tried sweet potato pasta- I keep thinking of buying a pasta attachment to my kitchenaid but am not sure how often I will use it. I end up going to WF to get fresh pasta. Did the contestant make the pasta just with sweet potatoes?

Yes, he used something like a spiralizer. Tom Collichio (top judge) actually thought it WAS pasta. But it was thin ribbons of sweet potato.

There’s at least one photo of the dish on the Internet, if you search “Richard Blais sweet potato linguine.” He served it with conch and spiny lobster (they were on an island and had to catch the conch themselves).

I love sweet potatoes and thought it would be fun to make. There are spiralizers on Amazon for under $50, but the one Richard used on the show looked like one of the $400-500 models I’ve seen elsewhere online. Out of MY budget!
