Roasted Cauliflower and Sausage Pasta with Pecorino & Thyme Breadcrumbs

Roasted Cauliflower and Sausage I decided to go with the pasta theme from yesterday and post this delicious dish. As a lot of you know, I work with cauliflower a lot- mostly in Indian dishes. I decided to make a change and use the veggie in another cuisine.. how about pasta, I thought??? Well, why not?

I decided to roast cauliflower florets in a hot oven to bring out the nutty, sweetness. I then took off the casings off some delicious chicken sausages and sautéed them with garlic, shallots, white wine and diced tomatoes. The mixture made a delicious sauce- especially after I added some leftover pasta water to it… it thickens the sauce and makes it yummier.

If that was not enough- I decided to add a topping.  I slow cooked a delicious combination of garlic, breadcrumbs, thyme and Romano cheese. The topping gives a delicious crunch and flavor to the pasta dish.

This is a great option for a quick, healthy weeknight meal.. try this with a delicious salad and a glass of wine.

Sausage with Zucchini

Sausage and Zucchini I would save this recipe for when one has had a crazy busy day but one still wants to serve a healthy, home cooked meal to ones family. This hardly takes any time- of course the key is to have the ingredients in the fridge and the pantry- that being said- any kind of vegetable or meat can be substituted for the zucchini and the sausage.

I like combining the two especially because of the way they look cut into perfect rounds. I sauteed up the sausage and added the onion and garlic. Some tomatoes, thyme and chicken broth later, I had a delicious dish. I simply served it with whole wheat couscous- which take all of five minutes and voila- I had a delicious meal…

Sausage and Mushroom Ragu

Sausage and Mushroom Ragu This an easy recipe that is a crowd pleaser. Now that school has started again- it is time to get organized and get back to the same old routine. I kind of like getting back to my old routine- I like the familiar. Anyway, my point was to have your pantry and fridge filled with things that will help you through the week to make quick and easy meals.

One of those things is fresh tomato sauce. It doesn’t take very long to cook but it makes a huge difference in the recipe.

This particular dish was easy to make as I had the sauce ready. All I did was saute the sausage (which I had in the fridge as well), onion and garlic. It was simple and best of all- everyone loved it! This is a great week day meal and also yummy as a school lunch…

Roasted Broccoli Rabe and Sausage Pasta

Roast Broccoli Rabe and Sausage If I had to describe this dish in one word- yum comes to mind. I have mentioned before how I love this combination of flavors- especially in a pasta. I love, love broccoli rabe- it is one of my favorite vegetables.

The problem is my daughter and husband don’t care for it as much- the pasta dish I mean. They like pasta with red sauce and the one I normally make has no sauce. They don’t like it- but I love it.

This is a compromise since it has a fresh ricotta sauce. I was watching Rachel Ray and she made something similar- where she roasted the broccoli rabe and the garlic and mixed everything with ricotta. I thought it was a fantastic idea and decided to add sausage in there as well and make it a one pot meal. I made a special trip to Whole Foods and bought fresh ricotta- if you can do purchase it for this recipe. It makes a big difference in taste- a lot creamier and fresher.

The dish is super simple and quick to make- ideal for a weekday plus I got a thumbs up from the rest of the family!

Orcchiette Pasta with Cauliflower and Sausage

Pasta with Cauliflower and Sausage This is a different kind of dish I tried the other day. I don’t end up making pasta as often in the summer months. Most meals are grilled and quick to make. As I have mentioned many times before, my husband loves cauliflower in any form and cuisine. I usually end up making it with Indian flavors- but for this meal I decided to pair it with pasta and sausage. I read a recipe in a magazine where the cauliflower was served in an anchovy sauce- I love anchovies and use them anywhere I can.

So, for this dish, I cooked the sausages with the anchovies, garlic and thyme. Somehow I always think of thyme when I cook with cauliflower- the two work really well together. I roasted the cauliflower in the oven and added the florets to the sausage mixture once they were golden brown. I paired it all with some orcchiette pasta (they look like tiny little ears). I love buying different shaped pasta- it makes for an interesting meal.

To add great texture to the dish, I roasted some leftover bread cut into small pieces with a drizzle of olive oil. Once the croutons were golden brown and crispy, I added them on top.

The pasta was delicious- essentially a one pot meal since it had everything in there.

  • 1 head cauliflower, cut into small florets
  • 1 tablespoon extra virgin olive oil
  • Salt

Preheat oven to 400 degrees F.

Place the florets on to a lined cookie sheet and drizzle the olive oil and sprinkle the salt. Mix well and bake for 45 minutes or till the florets are golden brown and soft. Keep aside.

  • 3 to 4 slices of sour dough bread cut into ¼ inch pieces
  • 1 tablespoon extra virgin olive oil

Place the bread pieces on a small lined cookie sheet and drizzle the olive oil. Bake in the same oven for 10 to 15 minutes, or till the bread pieces are golden brown and crunchy. Keep aside.

  • 1 four pack chicken sausage, taken out of the casings and crumbled
  • 3 to 4 anchovy fillets
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh thyme
  • ½ pound orcchiette pasta, cooked al dente
  • ½ cup spare pasta water
  • ½ cup fresh ricotta cheese
  • Salt

In a large frying pan, add the olive oil and anchovy fillets. Cook on medium heat for a minute or two. Add the crumbled sausage and cook on high heat for 4 to 5 minutes. Add the garlic cloves and fresh thyme. Saute for a minute and add the cooked pasta and pasta water. Add the cauliflower and mix well. Next, add the ricotta cheese and mix well. Cook for another minute or two till the cheese is heated through. Add the salt and taste for seasonings. Serve each plate with a sprinkle of crispy croutons on top.

Chicken Sausage Ragu with Red Pepper Gnocchi

Chicken Sausage Ragu I hardly ever make gnocchi. I do always notice it in Whole Foods- in there fresh pasta section. I have had it a few times before in restaurants and also during our trip to Italy last summer. It obviously depends on how well the gnocchi is made- if it is well made, it can be fluffy and light. If it is not made properly, it tends to be tough and heavy.

A friend had tried the gnocchi at Whole Foods and told me it was really good. I was browsing, and the red pepper gnocchi caught my eye. I bought it not knowing what to do with the pasta- but I was sure I could come up with something delicious.

The day after turned out to be a cold and rainy day- perfect for a sausage ragu, I thought- hmm, with lots of red wine- yum! I also decided to utilize the red pepper gnocchi. So, that is where this recipe came from. I took the sausages out of their casings and cooked them with onion, garlic, rosemary and wine, of course…

It was so nice to smell the lovely aromas in the house while sipping some wine and enjoying the evening. My daughter was at a play date and my husband wasn’t home from work yet. It is my favorite thing to do- being in the kitchen, cooking while enjoying a glass of wine.

Anyway, the meal turned out delicious. The gnocchi was excellent- although- my daughter didn’t care for it much. She liked the ragu part but didn’t like the smoky red pepper flavor as well as the gnocchi texture. The adults thought the gnocchi and the ragu complemented each other really well- especially with a glass of wine.

Try this dish- it is perfect for a weekday since it doesn’t take very long. Serve it with a salad and some delicious wine, of course.

Chicken Sausage and Cannellini Bean Stew served with Parmesan Garlic Bread

Chicken Sausage and Cannellini Bean Stew2 It was one of those rainy evenings we have had so many of and my initial plan was to go out for dinner but then as the day progressed and the rain lingered, I got more and more lazy. I changed into my pajamas and decided to open a bottle of wine and cook.

I had a chicken sausages in my fridge and I decided to pair them with cannellini beans to make a delicious stew. I used the usual suspects including shallots, garlic and of course some red wine. I also had rosemary in the fridge and as far as I am concerned, the white beans are made for rosemary.

To create a balanced meal, I added baby spinach at the very end and served the one pot meal with a parmesan garlic bread. I of course sprinkled some extra cheese on top of the stew.

The evening was relaxing and filled with good food and great wine. My daughter loved the stew but thought there was too much garlic on the garlic bread. She was right- I love garlic so much that I usually tend to go very heavy it. I loved it but both my husband and daughter thought it was too much- oh well, you can’t please everyone all the time.
