Meatballs with Prosciutto and Basil

Meatballs with Prosciutto with Basil1 Who doesn’t love meatballs? I really enjoy them on a cold, rainy day with a nice glass of a bold red wine. I have made quite a few versions over the years- especially for kids. I love incorporating some kind of vegetables in the meat and cook them in a delicious homemade tomato sauce.

These came about as I watched Live with Regis and Kelly- Regis was talking about some meatballs he had with prosciutto in them, “what a great idea”, I thought.

I bought turkey meat, prosciutto and basil from the store and started making the meatballs. I also made fresh tomato sauce with lots of cherry tomatoes. I added the usual ingredients in the meatballs including a mixture of cooked onions, garlic and prosciutto. I also added breadcrumbs and freshly grated pecorino- which I prefer a tad more than parmesan cheese since it has a lot more flavor.

The meatballs were cooked in the delicious tomato sauce. I realized I had run out of spaghetti so I served them on top of penne. In order to serve a balanced meal, I sauteed baby spinach on the side with some garlic and a splash of half and half. The kids had a glass of milk and the adults had a delicious cabernet.

Jelly Filled Duffins

Jelly Filled Duffins If I could, I would make sure I have these on hand all the time. These treats are always so delicious and the fact that they are healthy, makes me love them even more.

Most of all, my daughter thinks these are the best things she has ever eaten. I do love making them as well, especially because they are so easy to make.

My daughter has been reminding me everyday to make these jelly filled duffins- and finally I did. I made them while she was skiing with her Daddy and was gone all day. When she came back, she sniffed her way into the kitchen and discovered these on the counter. Although she was extremely tired, she still found the energy to eat her dinner and devour a duffin.

I used raspberry jam but of course any flavor will be fabulous as a filling. The key is to make sure the filling is added in the middle of the duffin mixture. I added about two tablespoons of the mixture and then added a teaspoon of filling before covering the filling with the rest of the mixture.

A duffin is perfect snack to give your kids, especially with a tall, cold glass of milk. My daughter has it as a snack after school with some fruit on the side. It is keeps her going until dinner and I feel good about giving her something homemade and not processed.

Duffins- Healthy Donuts

Duffins2 I wrote about these healthy donuts on the New York Times, The Local blog. This is the new favorite in our house. I have made many batches of these muffins/donuts.

I first had them at a bakery, Brownie Points at the Mall at Short hills. They were oblong shaped muffins, covered with sugar. When we tasted them, we were hooked immediately. They tasted fresh and light and not too sweet.

After finding out the bakery was not there anymore I got obsessed with making them at home. It was quite difficult to find the recipe on the Internet but I was able to get something and tweaked it to my taste.

The great thing about this treat is that it is healthy. I have used white whole wheat flour, extra light olive oil and turbinado sugar.

My daughter loves it and has one everyday for a snack after school. She washed it down with a glass of milk and then has some fruit. I have already made duffins with apples as well as jelly filled ones. My husband has one in the morning as well.

Shrimp and Broccoli Brown Fried Rice

Fried Brown Rice with Shrimp and Broccoli I find fried rice and quesadillas a great way to use up left overs. The quesadillas can be stuffed with virtually anything as long as shredded cheese in involved. As far as fried rice is concerned- same rules apply- anything and everything can be added to it. I think the key is to have a well stocked pantry- it always comes back to that, doesn’t it? In this case I had eggs in the fridge, broccoli and shrimp in the freezer, tamari in the cabinet, garlic and onion in the basket.

I had a cup of cooked brown rice in the fridge and didn’t have any plans for dinner- what was I going to feed my always hungry daughter?? I have never made fried rice out of brown rice but why not?? In fact, I thought with all the loud flavors going on in fried rice, I could totally get away with using brown rice instead of white. so, that is what I did- I chopped some onion and garlic, took out some frozen broccoli florets and 3 frozen raw jumbo shrimps. It was the quickest meal I have ever made. I minced everything and sauteed it with lots of tamari. That is all it took and it was delicious!

My daughter couldn’t stop eating it- and when she told my husband on the phone what she ate- he got very excited as well. I had to disappoint him by telling him I had just enough for her. Don’t worry I didn’t leave him hungry- we ate leftovers from the day before- which were delicious as well.

Everyone was happy..

  • 1 cup cooked brown rice
  • 3 raw jumbo shrimp, cleaned and deveined and chopped
  • ½ cup frozen or fresh broccoli, chopped
  • 1 tablespoon olive oil
  • ¼ white onion, minced
  • 1 garlic clove, minced
  • 1 egg, beaten with a pinch of salt
  • 1 to 2 tablespoons tamari (depending on how seasoned you like the rice)

Heat a wok like saucepan and add the oil. Add the onion and garlic and sauté on high heat for two minutes. Add the broccoli and sauté for a minute. Add the egg and stir until the egg is cooked. Add the raw shrimp and sauté for another minute. Add the rice and tamari. Stir well until heated through.
