Grilled Shrimp with Cherry Salsa

I love this recipe- very simple and very much in season. Grab those cherries while they are still around and make a delicious salsa!!

  • 1 pound medium shrimp, cleaned and deveined
  • Salt
  • 1 teaspoon smoked paprika

Place the shrimp in skewers and sprinkle with salt and smoked paprika. Marinate for two hours in the fridge.

Cherry Salsa

  •  1 cup red or white cherries, pitted and chopped
  • 1 medium shallot, chopped
  • Juice of a medium lemon
  • 1 serrano chili, chopped
  • Salt

Transfer all the ingredients to a bowl. Mix well and let marinate for an hour or two.

Grill the shrimp till done and serve with salsa on top.

Tomatillo Sauce with Avocado

Tomatillo and Avocado Sauce1 I have trying to get reservations at a place called La Esquina in New York. The restaurant is divided into a taqueria, a cafe and a brasserie. It is the brasserie that takes reservation and it is very hard to make them! A few weeks ago I got an email featuring the chef and his signature sauces. One of them was the salsa verde.. it was like a typical green Mexican style sauce but it also included avocado.

I immediately wanted to make the sauce and I decided to serve it on top of grilled shrimp. The recipe was quite easy to follow but tried to tweak it a bit to my taste. I added all the ingredients into a blender including tomatillos, jalapeno, an avocado, lime juice, onion, cilantro and a tad bit of olive oil. This sauce goes amazing with seafood. I grilled some shrimp and we enjoyed it with a salad. It can also be served with tortilla chips and it can be used as a taco topping.

I used the leftover sauce to make a delicious one pot rice dish… recipe to come tomorrow…

Grilled Shrimp and Chorizo with Garlic Cilantro Sauce

Grilled Garlic Cilantro Shrimp This meal is kind of like a surf and turf- well, I guess not really since there is no steak… but there is delicious sausage! This dinner/lunch is an ideal summer meal since it does not require too much prepping or cooking time. Everything cooks on the grill while I sit on my deck enjoying a glass of wine.

My favorite kind of sausage is the chorizo which has tons of flavor and a bit of a kick. It is a pork sausage with paprika and garlic and it is absolutely delicious. If health was not a consideration, I would eat chorizo everyday!

I bought some fresh chorizo and a pound of shrimp. I decided to make a simple cilantro garlic sauce to marinate and baste the shrimp and the chorizo with. That is all there is to this meal.

I made some garlic bread and a salad and I was done! We enjoyed everything on the deck and were not able to finish everything- perfect leftovers for another meal tomorrow!!!
